These Strawberries & Champagne Cake Balls are perfect for a New Year’s Eve party, Valentine’s Day, Bridal Showers and so much more! They make an easy dessert that tastes like fruity pebbles!
Ingredients
Cake:
- 1 box strawberry cake mix
- 1 ¼ cups champagne
- 1/3 cup vegetable oil
- 3 large eggs
- 16 ounces white cake frosting
Chocolate Shell:
- 24 ounces white chocolate melting wafers or chocolate chips
- 2 tablespoons vegetable oil
- 1/2 tsp Wilton gold pearl dust
- 1/2 tsp lemon extract
- You may also need a paint brush
Instructions
- Preheat oven to 350°F. Spray a 9×13-inch baking pan with nonstick cooking spray. Set aside.
- In a large bowl or stand mixer fitted with a whisk attachment, beat cake mix, champagne, oil, and eggs at medium speed until smooth. Pour batter into prepared pan.
- Bake according to package directions or about 30 to 35 minutes until a toothpick comes out clean. Remove from oven and allow the cake to cool completely, then slice into squares.
- Crumble the cooled cake squares into a large bowl or stand mixer bowl with your hands. Add the white cake frosting to the cake crumbles and mix with a whisk attachment on a stand mixer or a hand mixer until evenly combined and the mixture forms a cohesive dough.
- Cover the bowl and place the cake mixture in the refrigerator for at least 2 hours or preferably overnight. This chilling step is crucial for easy rolling.
- Line a baking tray with wax paper. Form small round balls by rolling a rounded tablespoon of the mixture between your palms. Place the finished balls on the prepared wax paper-lined baking sheet. Once all balls are formed, place the baking tray back in the refrigerator for 1 to 2 hours to firm up.
- Melt the white chocolate in a microwave-safe bowl in 30-second intervals, stirring thoroughly between each interval, until completely smooth. Stir in the 2 tablespoons of vegetable oil to thin the chocolate slightly for easier dipping.
- Remove the chilled cake balls from the fridge. Drop balls one at a time into the melted chocolate. Use a fork to carefully scoop them out, gently tapping off any excess chocolate on the rim of the bowl before transferring them back to the wax-lined baking sheet. Let them harden completely at room temperature or in the refrigerator.
- For the glamorous finish, mix the pearl dust and lemon extract in a tiny prep bowl to create an edible gold paint. Get creative and have fun painting the cake balls. Some can be fully painted, others with a simple brush stroke, or even just dusted with the pearl dust for a subtle shimmer. If adding sprinkles, do so immediately after dipping, before the chocolate coating hardens, to ensure they stick.
