  • 16 Oreos divided
  • cups unsalted butter softened
  • 1 cup granulated sugar
  • cups light brown sugar packed
  • ¾ cup 100% pumpkin
  • 2 large eggs room temperature
  • 1 teaspoon vanilla extract
  • 4 cups all-purpose flour spooned and leveled
  • 1 (3.4oz.) box Pumpkin Spice Instant Pudding Mix unprepared
  • 1 tablespoon powdered milk
  • 1 tablespoon cornstarch
  • teaspoons salt
  • 1 teaspoon pumpkin pie spice
  • 1 teaspoon ground cinnamon
  • 1 teaspoon baking soda
  • 1 cup chocolate chips plus extra for topping before baking

Instructions

  1. Preheat oven to 375°F (190°C) and line 2 large baking sheets with parchment paper. Set aside.
  2. Chop 12 of the Oreos into medium-sized pieces and set them aside in a bowl. Chop the remaining 4 Oreos into finer crumbs and set them aside in a separate bowl. These will be for topping.
  3. In a large bowl or a stand mixer (highly recommended for this recipe) fitted with a paddle attachment, cream together the softened unsalted butter, granulated sugar, and light brown sugar on medium speed for 2 minutes. Stop halfway through to scrape down the sides of the bowl to ensure even mixing.
  4. Add the large eggs one at a time, mixing briefly after each addition until the yolk is just streaky throughout the dough. Next, incorporate the pumpkin puree and vanilla extract, mixing until just combined. Be careful not to overmix at this stage.
