You put the lime in the coconut and shake it all up! It works because it tastes good, reminds you of a tropical beach, and is totally refreshing.

Anyone can make a coconut mojito. The key is coconut rum and coconut cream shaken together.

Ingredient Info and Substitute Suggestions

CREAM – Coconut cream has a thick consistency similar to cake frosting. You can swap out the coconut cream for coconut milk or coconut water as desired (for slightly different tastes and textures).

SIMPLE SYRUP – If you like, you can make your own lime flavored simple syrup. To make enough simple syrup for this recipe, you will need 1/4 cup water, 1/4 cup sugar and the zest of 1 lime. Boil the sugar and water together and let it cool completely. Stir in the lime zest. You can also purchase simple syrup from the store and stir in lime zest, or just use plain simple syrup.

How to Make a Coconut Mojito

  1. Place mint and lime in a tall glass and carefully muddle together to release the mint oils and fresh juice.

  1. Fill tall glass 1/2 full with ice over the muddled ingredients.

  1. Fill cocktail shaker with ice. Use a jigger to pour in simple syrup, rum, and cream of coconut. Shake for 20 seconds then strain into glass.

  1. Top off drink with club soda and stir carefully.

  1. Adjust to taste with a squeeze of fresh lime juice if you like.
  2. Garnish with a lime wheel and a sprig of mint. You can also add a dollop of coconut flakes on top! Serve with colorful paper straws or these cool reusable metal straws!

What other kind of rum can I use?

If you can’t find or would prefer not to use coconut rum (Malibu, Bacardi Coconut, Blue Chair) simply sub it out with white rum.
