With summer upon us, I eat all different types of salads. Besides this chicken salad, one of my favorite potluck take-along is my broccoli salad. Oh and of course, Nana’s Macaroni Salad!

Chicken Salad with Grapes Recipe
I remember the first time I tried a chicken salad recipe with red grapes in it. I had never heard of this combination.
I used to work in a large office, and whenever there was a birthday, everyone brought in food. My boss always brought her spinach dip and another coworker was known for bringing bagels and cream cheese. One day there was a large bowl of chicken salad with grapes. Everyone told me that it was great. Young and still in my twenties I hadn’t experienced too much yet, and definitely hadn’t tried this. After trying a small bowl I was an instant fan of these flavors.
This chicken salad is perfect for any kind of party. Birthday, retirement, Fourth of July, Memorial Day, family reunions, work parties, and the list goes on. It’s a fresh mix of cooked chicken, chopped pecans, halved grapes, mayo, celery and green onion.
Ingredients for Chicken Salad with Grapes
- 3 c. cooked chicken (or 3 cans)
- 1 1/2 cups red seedless grapes halved
- 1 cup sliced celery
- 1/3 cup sliced green onion
- 3/4 cup light mayonnaise (you could try substituting Greek yogurt if you prefer)
- pinch of dried ginger
- 1/2 tsp. salt (or salt and pepper to taste)
Note: Many recipes use pickle relish, but I prefer onion and celery. You could certainly use pickle relish if you prefer.
Kitchen Tip:
- For this recipe, you can use a store-bought rotisserie chicken, leftover shredded chicken or cooked chicken breasts. I prefer the ease and convenience of a rotisserie chicken. Simply cut the breast meat off the bird and cut it into cubes. I use the remainder of the chicken to make enchiladas.
- I enjoy eating this chicken salad right out of the bowl, but if you are serving it at a potluck or bridal shower, serve each serving on a bed lettuce.
