Discover the Charm of Mini Apple Pies
As the crisp autumn air sweeps in and leaves begin their vibrant transformation, there’s an undeniable yearning for comforting, seasonal treats. And what could be more emblematic of cozy indulgence than apple pie? This year, we’re putting a delightful twist on a timeless classic with these irresistibly charming mini apple pies. They’re not just a dessert; they’re an experience, perfectly portioned and packed with all the beloved flavors you crave.
While I might not be one to simply bite into a raw apple with great enthusiasm, my affection for apples transforms completely when they’re baked to perfection. Enveloped in a rich, buttery crust and infused with the sweet warmth of cinnamon and brown sugar, apples become a culinary masterpiece. This recipe celebrates that transformation, making even a non-apple enthusiast fall deeply in love with every bite.

The harmonious pairing of cinnamon and apples is truly something special, don’t you agree? It transcends being merely a fall phenomenon; it’s a quintessential American tradition, gracing tables not just during autumn festivities but also as a staple of summer celebrations and holiday gatherings. Regardless of the season, a freshly baked apple pie holds a unique place in our hearts and palates. It’s a dessert that evokes feelings of home, comfort, and joy. And when that pie comes in a cute, individual serving, it’s all the more appealing.
There’s simply no occasion where I would decline a slice of apple pie, especially when it’s served à la mode. But when we’re talking about these adorable mini apple pies, my resistance completely melts away!

Imagine this: a warm, flaky, golden-brown crust, giving way to a luscious, tender apple filling, perfectly spiced with cinnamon. Then, a scoop of velvety vanilla ice cream begins to slowly melt, creating a creamy cascade over the warm pie. The contrast of temperatures and textures—the hot pie, the cold ice cream, the tender apples, the crisp crust—is pure culinary bliss. And let’s be honest, a generous dollop of homemade whipped cream on top? Absolutely essential!
If you’re currently wiping a bit of drool from your keyboard, rest assured, you’re not alone. This is the kind of dessert that stirs the soul and awakens the senses, promising a truly unforgettable taste experience.

The Beauty of Batch Baking: Small-Scale Delights
What I find most appealing about this particular recipe is its manageability. Unlike many desserts that yield an overwhelming quantity—who really needs two dozen cupcakes for a small gathering?—these mini pies can be made in batches of just five. This perfectly combats the common problem of having too many leftovers, making it ideal for smaller families, intimate dinners, or when you simply want to satisfy a sweet craving without committing to a full-sized pie. It’s a game-changer for mindful indulgence and portion control, ensuring that every bite feels like a special treat.
The filling for these delightful mini pies is adapted from my popular Caramel Apple Pie Dip recipe, simply omitting the caramel for a classic apple pie flavor. However, if you’re a fan of that rich caramel note, feel free to incorporate it for an extra layer of decadence. Paired with readily available premade pie dough, this dessert truly lives up to the adage: “as easy as pie.” See what I did there?

Expert Tips for Crafting Perfect Mini Apple Pies:
Creating these charming mini apple pies is straightforward, especially with a few handy tips to guide you:
- Choose the Right Pan: For best results, use a standard regular muffin or cupcake pan, not a mini cupcake pan. The larger cavities are essential for forming the perfect mini pie shape and ensuring even baking.
- Working with Premade Pie Crust: While homemade crust offers a unique touch, premade dough makes this recipe incredibly convenient. To prevent cracking and make it more pliable, always take your pie crust out of the refrigerator and let it rest on the counter for at least 15-20 minutes before rolling or cutting. This allows it to soften sufficiently, making it much easier to work with.
- Creative Topping Ideas: For classic lattice strips, a pastry wheel or pizza cutter works wonders for neat, even cuts. But don’t limit yourself! Unleash your creativity by using small cookie cutters to create delightful shapes like hearts, stars, or autumn leaves for your pie tops. You can even simply cut out smaller circles to cap the pies, or leave them open-faced for a rustic look. This is where you can truly personalize your mini pies!
Selecting the Best Apples for Baking Excellence
The choice of apples can significantly impact the texture and flavor of your mini apple pies. While personal preference plays a huge role, here are my top recommendations for achieving the ideal balance of sweetness, tartness, and structural integrity in your baked goods:
- Honeycrisp: This is often my first choice for any baked apple dish. Honeycrisp apples bake up beautifully, retaining a pleasant texture without becoming mushy. Their naturally sweet flavor, with a subtle hint of honey, adds a lovely depth to the pie filling. They are also widely available, making them a convenient option for many bakers.
- Granny Smith: A steadfast favorite among bakers, Granny Smith apples are renowned for their crisp texture and vibrant tartness. This tartness provides a crucial counterpoint to the sweetness of the other ingredients, preventing the pie from being overly sugary. Furthermore, Granny Smiths hold their shape exceptionally well during baking, ensuring your filling isn’t a watery mess.
- Cortland: Cortland apples offer a delightful balance of sweet and tart flavors. They tend to bake up a bit softer than Granny Smiths but manage to maintain their form without turning into complete mush. This makes them a great choice for a smoother, yet still appealing, filling texture.
- Braeburn: Another excellent apple that strikes a perfect balance between sweet and tart. Braeburns have a firm texture and are less juicy than some other varieties, which can result in a slightly drier filling. This characteristic makes them fantastic for blending with juicier apples to achieve a multi-textured and flavorful pie. Consider pairing them with Granny Smiths for a dynamic flavor contrast.
- Empire: A hybrid of McIntosh and Red Delicious, Empire apples are known for their firm texture, which they largely retain even after baking. Their sweet flavor profile makes them a crowd-pleaser and a reliable choice for pies where you want a consistently firm apple bite.
- Jonathan: While not as common in all regions, if you can find Jonathan apples, they are a superb option for baking. They boast a distinctly tart and subtly spicy flavor profile that complements the traditional apple pie spices wonderfully, adding a unique zest to your filling.
- McIntosh: Often found abundantly and affordably, particularly in certain regions like Maine during the fall, McIntosh apples can certainly be used for baking. However, they are quite soft and juicy and tend to break down considerably when cooked. To ensure a desirable texture in your pie, it’s best to combine McIntosh apples with a sturdier variety, such as Granny Smith or Golden Delicious, which will help them hold their structure better.
For the most complex and appealing apple pie flavor and texture, many experienced bakers opt for a blend of two or three different apple varieties. Combining a tart apple (like Granny Smith) with a sweeter, firmer one (like Honeycrisp or Braeburn) often yields the best results, creating a harmonious symphony of flavors and textures in every bite.

Mini Apple Pies
Author: Rebecca Hubbell
Course: Dessert | Cuisine: American
Prep Time: 15 minutes | Cook Time: 25 minutes | Total Time: 40 minutes
Yields: 5 mini pies
These Mini Apple Pies à la Mode are made with a premade pie crust and a sweet seasonal blend of apples and cinnamon.
Ingredients
Filling
- 2 cups petite diced apples (about 3 medium apples)
- 2 tablespoon lemon juice (about half a lemon)
- 3 tablespoon light brown sugar
- ½ teaspoon apple pie spice
- 1 teaspoon corn starch
- 1 teaspoon water
Crust
- 1 sheet premade pie crust dough
Egg Wash
- 1 large egg
- 1 teaspoon water
- Granulated sugar for sprinkling
Instructions
- Combine chopped apples, lemon juice, light brown sugar, and apple pie spice in a medium pot.
- Cook over low-medium heat until the juice from the apples begins to boil.
- Dissolve corn starch in water in a separate bowl and stir into the apple mixture.
- Bring to a boil again and allow the mix to thicken. Remove from heat and set aside to cool slightly.
- Preheat your oven to 350 degrees F (175 degrees C).
- Roll one sheet of pie crust out on a lightly floured cutting board. Use a rolling pin to smooth out any creases.
- Using a 4-inch round cookie cutter (or a knife and template), cut out 5 circles. You may need to ball up and re-roll any scraps of dough to get all five circles.
- Gently place the pie crust circles into the cups of a regular muffin tin, pressing them down to line the bottom and sides.
- Evenly distribute the prepared apple filling among the 5 crusts.
- Ball up and re-roll the remaining pie dough. Use a pizza or pastry cutter to cut strips for a lattice top, or use small cookie cutters for decorative shapes. Gently pinch the ends of the strips (or shapes) into the side of the bottom crust. (This step is optional; you can also opt for a simpler top crust or no top crust at all.)
- If adding a top crust, whisk together the large egg and 1 teaspoon of water to create an egg wash. Use a basting brush to lightly brush the egg wash over the top crust.
- Sprinkle the top crust with granulated sugar for a beautiful sparkle and added crunch.
- Bake for 10-15 minutes, or until the crust is golden brown and the filling is bubbly.
- Allow the mini pies to cool in the pan for 5-10 minutes before gently removing them.
- Serve warm, ideally with a scoop of vanilla ice cream and a dollop of whipped cream for the ultimate à la mode experience.
Notes
- To make a larger batch, simply double all the ingredients for the filling and crust, but the egg wash recipe can remain the same.
