Embracing the Joy of Coffee Cake: A Timeless Classic Reinvented
There’s something inherently comforting and celebratory about coffee cake. For many, it evokes cherished childhood memories, perhaps of family breakfasts or special treats. Today, as we celebrate this beloved classic, we’re giving it a magnificent seasonal makeover. While many coffee cakes rely on traditional spices, our version introduces the bright, refreshing essence of summer’s bounty. The combination of sweet strawberries and succulent peaches nestled within a tender cake batter, all beneath a delightful streusel, transforms a familiar favorite into an unforgettable experience. This recipe isn’t just about baking; it’s about creating moments, sharing joy, and savoring the simple pleasures life has to offer, much like those cherished packaged coffee cakes from my Nana and Pa’s house that sparked a lifelong affection for these delightful bakes.

Life’s Unexpected Delights and Adventures
Just as a good coffee cake offers unexpected layers of flavor, life often surprises us with its own twists and turns. Recently, my Nana, a woman I’ve always admired for her timeless wisdom, revealed she’s been actively using Snapchat. This came as quite a shock, especially since I, a supposed millennial, have resisted joining for years! It’s a humorous reminder that age truly is just a number when it comes to embracing new things, or perhaps, for some of us, holding onto the old ways. It’s a delightful contrast to my current contemplation of a “cell phone detox,” highlighting the varied approaches we take to technology and connection in our lives.

Family gatherings always bring their own brand of memorable moments. The night before Easter, after a couple of Maker’s Mark glasses, my husband, Matt—who famously dislikes horses (you can learn why in his author bio via this post)—casually suggested we go to the Kentucky Derby. His pronouncement was nothing short of astonishing! While my love for horses dates back to my childhood, the sheer logistics of fitting a trip to Kentucky between my already packed travel schedule (Maine to Boston, back to Maine, then Iceland!) seems a bit much for this year. But the idea has sparked a new dream, perhaps for next year.

The upcoming months are shaping up to be a whirlwind. After a brief hiatus from travel, I’m heading out again soon, with trips planned almost every few weeks until late fall. While juggling deadlines and battling a persistent cold, I wouldn’t trade this vibrant, often chaotic life for anything. The anticipation of a well-deserved vacation just days away keeps my spirits high. It’s in these busy, sometimes overwhelming periods that simple comforts, like a homemade coffee cake, become even more meaningful, providing a sweet pause in the rush of daily life.

The Perfect Harmony: Why Strawberries and Peaches Shine in Coffee Cake
Now, let’s turn our attention back to the star of the show: this incredible Strawberry & Peach Coffee Cake. What truly sets this recipe apart is the impeccable pairing of two of summer’s most beloved fruits. Ripe strawberries offer a burst of sweet-tart flavor and a vibrant hue, while tender, juicy peaches add a mellow sweetness and an intoxicating aroma. Together, they create a balanced fruit medley that infuses every bite of the cake with natural goodness. This combination prevents the cake from being overly sweet, allowing the inherent freshness of the fruit to take center stage. The slightly crisp streusel topping, a classic coffee cake element, provides a delightful textural contrast to the soft, fruit-laden crumb. It’s reminiscent of my popular Strawberry Coffee Cake Muffins, a recipe many of you adore, but in a grander, more shareable form.
Choosing the right fruit is crucial for this recipe. Opt for strawberries that are firm, bright red, and fragrant, and peaches that yield slightly to gentle pressure, indicating peak ripeness. Fresh fruit is always best for optimal flavor and texture, but if necessary, frozen peaches and strawberries can be used (though they might release more liquid, so ensure they are well-drained after thawing). The fruit not only provides flavor and moisture but also beautiful color, making this cake a feast for the eyes as well as the palate.

Crafting Your Own Culinary Masterpiece: Tips for Success
Achieving the perfect Strawberry & Peach Coffee Cake is simpler than you might think, especially with a few key tips. First, ensure your butter is properly softened for both the cake batter and the streusel topping; this allows for smooth, even mixing and a tender crumb. When incorporating the flour mixture into the wet ingredients, alternate with the milk, starting and ending with the flour. This technique ensures a well-mixed batter without overworking the gluten, which can lead to a tough cake.
A crucial step for fruit-filled cakes is preventing the fruit from sinking to the bottom during baking. Our recipe addresses this by tossing the chopped peaches and strawberries with a small amount of the remaining all-purpose flour. This light coating helps the fruit suspend evenly throughout the batter, ensuring every slice is dotted with delicious fruit. For the streusel, work the ingredients together with a fork until they form crumbly clumps; these will bake into that irresistible golden-brown topping. Pay close attention to the baking time. While the recipe suggests 1 hour 10 minutes to 1 hour 20 minutes, oven temperatures can vary. The cake is ready when a wooden skewer inserted into the center comes out clean or with moist crumbs, not wet batter. If you notice the top browning too quickly before the center is cooked, loosely tent the cake with aluminum foil.
Cooling is another vital step. Allow the coffee cake to cool completely on a wire rack for at least 1.5 hours. This allows the cake to set properly and prevents it from becoming dense or crumbling when sliced. Once cooled, a dusting of powdered sugar adds a delicate finish, and for an extra touch of elegance and flavor, garnish with fresh strawberry and peach slices and a dollop of whipped cream. This cake is best served fresh but can be stored at room temperature in an airtight container for up to 3 days, or refrigerated for longer freshness.

Strawberry & Peach Coffee Cake
Ingredients
Cake:
- 1/2 cup unsalted butter softened
- 1 cup granulated sugar
- 2 large eggs
- 2 cups plus 2 tbsp all-purpose flour
- 2 tsp baking powder
- 1/2 tsp salt
- 2/3 cup whole milk
- 2 tsp vanilla extract
- 2 large fresh peaches peeled and chopped
- 1 cup fresh strawberries chopped
- Powdered sugar
- Fresh strawberry and peach slices and whipped cream for garnish
Topping:
- 2 tbsp butter softened
- 2 tbsp granulated sugar
- 2 tbsp firmly packed light brown sugar
- 3 tbsp all-purpose flour
- 1/4 tsp ground cinnamon
- pinch of ground nutmeg
Instructions
-
Preheat oven to 350°F (175°C) and line a 9-inch springform pan with aluminum foil and coat with cooking spray.
-
In a large bowl or stand mixer fitted with a paddle attachment, beat the softened butter at medium speed until creamy; gradually add granulated sugar and continue beating until light and fluffy.
-
Add eggs, one at a time, beating well after each addition until fully incorporated. Scrape down the sides of the bowl as needed.
-
In a separate large bowl, combine 2 cups of the all-purpose flour, baking powder, and salt. Gradually add this dry flour mixture to the butter mixture alternately with the whole milk, beginning and ending with the flour mixture. Beat at low speed until just blended after each addition, being careful not to overmix. Stir in the vanilla extract. In a small bowl, toss the chopped peaches and strawberries with the remaining 2 tbsp of flour; this light coating helps prevent the fruit from sinking during baking. Gently fold half of the floured fruit into the cake batter. Pour the batter into the prepared springform pan, then evenly distribute the remaining floured fruit over the top of the batter.
-
For the topping, in a small bowl, combine the softened butter, granulated sugar, light brown sugar, all-purpose flour, ground cinnamon, and a pinch of ground nutmeg. Mix with a fork until the ingredients are well combined and form a crumbly mixture. Sprinkle this streusel topping evenly over the cake batter.
-
Bake for 1 hour and 10 minutes to 1 hour and 20 minutes, or until a wooden skewer inserted into the center of the cake comes out clean or with moist crumbs. Check the cake at the 1-hour mark, and if the topping appears to be browning too quickly, loosely cover the cake with aluminum foil to prevent over-browning.
-
Once baked, remove the cake from the oven and let it cool completely on a wire rack for about 1 1/2 hours. This crucial step allows the cake to set properly and retain its moist texture. Before serving, dust generously with powdered sugar. Garnish with additional fresh strawberry and peach slices and a dollop of whipped cream, if desired, for an extra touch of elegance and flavor.
