Discover the Magic: All About These Cherry Cordial Chocolate Cookies
What makes these Chocolate Cherry Cordial Cookies truly stand out? It’s the thoughtful balance of flavors and textures, meticulously designed to deliver an unforgettable dessert experience. Let’s delve into what makes these cookies so special.
Unforgettable Taste: A Symphony of Sweet and Rich Flavors
The flavor profile of these cookies is nothing short of amazing. The secret to their elevated chocolate taste lies in the subtle addition of espresso powder to the cookie dough. This isn’t to make the cookies taste like coffee, but rather to intensify and deepen the cocoa notes, bringing out a richer, more complex chocolate flavor that will impress even the most discerning chocolate connoisseur. This robust chocolate exterior perfectly embraces a sweet, slightly tart cordial cherry center. As you bite in, the distinct sweetness of the cherry cordial cuts through the deep chocolate, creating a harmonious and utterly addictive flavor combination that will thoroughly amaze your taste buds. It’s a classic pairing for a reason, and in these cookies, it truly shines.
Exquisite Texture: Moist, Tender, and Perfectly Gooey
Beyond the incredible taste, the texture of these Chocolate Cherry Cordial Cookies offers another layer of delight. You’ll find the cookies themselves to be wonderfully moist and tender, yielding effortlessly with each bite. This soft, yielding exterior beautifully contrasts with the delightful surprise awaiting inside: a gooey, liquid-filled cordial cherry. The combination creates a textural experience that is just as pleasing as the flavor. The softness of the cookie dough, followed by the satisfying burst of the cherry cordial, makes for an overall texture that is both comforting and exciting, elevating these treats far beyond your average cookie.

The Irresistible Heart: Cookies with a Yummy Cherry Center!
One of the most appealing aspects of these decadent cookies is their incredibly simple yet sophisticated cherry center. Forget about the fuss of preparing a homemade filling from scratch; the genius of this recipe lies in using readily available store-bought cordial cherries. This not only saves significant time but also guarantees that iconic, sweet, liquid-filled cherry experience that everyone loves.
For those unfamiliar, a cordial cherry is a confectionery marvel: a whole cherry, typically maraschino, nestled in a sweet, often syrupy liquid, all encased in a rich chocolate shell. When these delightful morsels are baked inside our homemade chocolate cookie dough, they transform into something truly magical. The heat of the oven subtly warms the cordial center, making it wonderfully gooey and slightly molten. Biting into one of these cookies feels like indulging in a specialty treat from your favorite artisan bakery, offering a complex interplay of textures and temperatures that’s utterly luxurious. The contrast between the soft, warm cookie and the cool, sweet burst of the cordial cherry is a sensory delight.
While the classic cherry cordial is a fantastic choice, these versatile chocolate cookies can be customized with various other fillings if you’re looking to experiment or if cherries aren’t your preference. Consider swapping the cordial cherries for seasonal Brailey’s truffles, which often come in unique and exciting flavors. Another excellent option is Lindt’s Raspberry Cheesecake Truffles – specifically the flat-bottomed kind purchased individually from a Lindt store, not the round bagged varieties, as their shape is more suitable for stuffing. These alternatives offer different flavor profiles and textures, allowing you to tailor these cookies to your exact liking and impress guests with a range of gourmet options.

Mastering the Art: Kitchen Tips & Tricks for the Best Chocolate Cherry Cordial Cookies
Achieving bakery-quality chocolate cherry cordial cookies at home is entirely possible with a few essential kitchen tips and tricks. These pointers will help ensure your cookies are perfectly moist, beautifully shaped, and bursting with flavor every time.
- Accurately Measure The Flour: The Foundation of Perfect Cookies – This cannot be stressed enough: an important factor in baking moist, delicious cookies is measuring the flour correctly! Too much flour is a common pitfall that leads to dry, dense, and crumbly cookies, a texture nobody desires. This is why the recipe card specifies flour in grams. While a kitchen scale provides the most accurate measurement, there are other methods to ensure a more precise flour measure if a scale isn’t available. Remember to spoon your flour into the measuring cup and then level it off with a straight edge, rather than scooping directly from the bag, which compacts the flour and results in too much.
- Portion Out The Dough Precisely: Consistency is Key – For the ideal cordial cherry-to-cookie ratio, consistency is crucial. I highly suggest portioning the cookie dough out into 10 equal amounts. This not only guarantees that each cookie receives a generous, perfectly sized cherry cordial but also ensures there’s enough dough to fully encase the filling without tearing. If you have a kitchen scale, aim for each ball of dough to be approximately 2.3 ounces (around 65 grams). This precision will result in uniformly sized cookies that bake evenly and look professional.
- Mastering the Art of Sealing: Preventing Leaks and Messes – Proper sealing is paramount to prevent the delicious cordial cherry filling from leaking out during baking. To do this effectively, after placing the cherry cordial into the center of a dough ball, gently work the dough up and around the filling using your fingertips. Ensure the dough completely covers the cherry from all angles. Then, pinch the edges of the dough together to create a secure seal. Afterward, lightly roll the dough ball in the palms of your hand to smooth out any seams and ensure the seal is robust. A well-sealed cookie will bake beautifully, keeping all that gooey goodness safely inside.
- Sweeten Them Up to Your Liking: Customizing for Your Palate – Given that these cookies inherently possess a deep, rich chocolate flavor, you might find yourself desiring an extra touch of sweetness. If a sweeter cookie is what you prefer, there’s a simple trick: roll each portioned cookie dough ball in granulated sugar just before placing it on the baking sheet. The sugar creates a delightful, subtly crisp crust and adds an extra layer of sweetness that perfectly complements the robust chocolate and tart cherry. This small step can significantly enhance the overall sweetness and appeal of the cookies.
- Room Temperature Ingredients: The Secret to Smooth Dough – Ensure your egg is at room temperature. This allows it to emulsify better with the fats and sugars, leading to a smoother, more uniform dough texture and a lighter, airier cookie.
- Avoid Overmixing the Dough: Maintain Tenderness – Once the wet and dry ingredients are combined, mix only until just incorporated. Overmixing can develop the gluten in the flour too much, resulting in tough, chewy cookies instead of the desired tender texture.
- Consider Chilling the Dough (Optional but Recommended): For Better Shape – While this recipe is designed for quick baking, if time allows, chilling the dough for 15-30 minutes can help prevent spreading and maintain a thicker, chewier cookie. This is especially helpful if your kitchen is warm.

Cherry recipes, like these delightful cookies, consistently deliver a wonderfully sweet and tart dessert experience that captures the essence of this beloved fruit. I also cherish the classic, comforting flavor of cherries in creamy dips, such as this Cherry Cheesecake Dip, which remarkably comes together with only five ingredients, and my perennial favorite, the Cherry Pie Dip! For dedicated cherry enthusiasts, my decadent Black Forest Cake and charming Black Forest Cupcakes are both guaranteed to please, offering layers of rich chocolate and juicy cherries.
Preserving Freshness: Storage Instructions for These Chocolate Cherry Cordial Cookies
To ensure your Chocolate Cherry Cordial Cookies remain as delicious as the day they were baked, proper storage is key. Store these delightful cookies in an airtight container at room temperature. When stored correctly, they will maintain their optimal freshness, moisture, and flavor for approximately 3 to 4 days. Beyond this timeframe, you might notice that the cookies, particularly the outer chocolate dough, begin to dry out a bit, diminishing their tender texture. For longer storage, consider freezing. Once completely cooled, place cookies in a single layer on a baking sheet to freeze, then transfer to a freezer-safe airtight container or bag for up to 2-3 months. Thaw at room temperature before serving.
Cherry Cordial Brands: Does Brach’s Still Make Chocolate-Covered Cherries?
Many classic candy brands have changed their offerings over the years. As far as I know, Brach’s does not currently produce chocolate-covered cordial cherries. However, there are excellent alternatives available to ensure you can still make these fantastic cookies! For this recipe, I highly recommend using Cella’s Chocolate Covered Cherries. They offer a consistent quality and that classic cordial experience. Another popular and reliable brand you could use is Queen Ann Cordial Cherries. Both Cella’s and Queen Ann cordial cherries are widely available and can typically be found in the candy or seasonal aisles of major retailers like Walmart or Target, making them convenient to pick up for your baking endeavors.

Baking Perfection: Why Do My Cookies Look Undercooked When They Come Out Of The Oven?
It’s a common and perfectly normal occurrence for these Chocolate Cherry Cordial Cookies to appear slightly underdone when you first remove them from the oven. This is by design and crucial for achieving their wonderfully tender and moist texture. These cookies are intentionally baked for a shorter duration, typically around 8 to 10 minutes, just until their edges are barely set. The centers will still look quite soft, perhaps even a bit gooey.
The magic happens during the cooling process. Once the cookies are out of the oven, it’s vital to allow them to set and continue cooking on the hot baking pan for an additional 15 minutes. During this crucial period, known as “carryover cooking,” the residual heat from the pan and the cookies themselves continues to firm up the centers without overbaking the edges. This technique ensures that your cookies achieve that perfect balance of a slightly crisp edge and a soft, chewy, and gooey interior that makes them so irresistible. Patience during this cooling phase will be rewarded with perfectly textured cookies.
Ingredient Substitutions: Can I Use Butter Instead Of Shortening In This Chocolate Cherry Cordial Cookie Recipe?
Absolutely, you can substitute butter for shortening in this Chocolate Cherry Cordial Cookie recipe. While shortening often contributes to a softer, more tender cookie with less spread, butter introduces a rich, incomparable flavor that many bakers prefer. If you opt for butter, be sure to follow the same measurement as the shortening specified in the recipe. The key to successful substitution lies in the butter’s consistency.
When softening butter, you’re aiming for a consistency that is pliable but still cool to the touch, not melted. A useful tip I often use is to take the butter straight from the fridge and microwave it for about 45 seconds on a low setting. This typically achieves the perfect partially softened state where it’s just starting to pool slightly but still retains a significant amount of its solid stick form. This partial melt ensures you get the benefits of both soft butter (for creaming with sugar) and the structure that solid fat provides. Remember that butter contains water, unlike 100% fat shortening, which might slightly alter the texture, but the flavor will be undeniably enhanced.
Flavor Enhancers: Do I Have To Make These Cookies With Espresso Powder?
The addition of espresso powder in these Chocolate Cherry Cordial Cookies is a culinary secret that elevates the flavor profile, but it is not strictly mandatory. While the espresso powder dramatically intensifies and deepens the chocolate flavor, making the cocoa taste richer and more robust, you won’t actually taste a coffee flavor in the finished cookies. Think of it as a background note that amplifies the primary chocolate essence.
If you prefer to omit it, perhaps due to dietary restrictions or simply not having it on hand, the cookies will still be delicious and enjoyable. However, for the most profound and luxurious chocolate experience, I highly recommend including it. It makes a significant difference in developing a complex and sophisticated chocolate profile that truly complements the sweet cherry cordial center. A little bit goes a long way, and it’s a simple ingredient that can transform a good chocolate cookie into an exceptional one.
Ingredient Spotlight: What Does The Powdered Milk Do In This Cookie Recipe?
The inclusion of powdered milk in this cookie recipe might seem unconventional, especially for such a small quantity (just 1 tablespoon), but its impact on the final product is surprisingly significant. Powdered milk contributes an added depth of flavor, enriching the overall taste profile of these chocolate cherry cordial cookies and making them absolutely delicious. It imparts a subtle, creamy, and slightly caramelized note that enhances the richness of the chocolate and provides a more complex backdrop for the sweet cherry center.
While not strictly necessary for the cookie’s structure, powdered milk is a flavor booster that takes these cookies from great to extraordinary. If you find yourself unable to locate powdered milk at your local grocery store, a resourceful substitute is powdered coffee creamer. This alternative will offer a similar creamy richness and depth, ensuring your cookies still achieve that desirable enhanced flavor profile. Don’t underestimate this small but mighty ingredient!

Chocolate Cherry Cordial Cookies
Ingredients
- 1½ cup all-purpose flour 197g
- ½ cup unsweetened cocoa powder 55g
- 1 tablespoon powdered milk see notes
- 1 teaspoon espresso powder see notes
- 2 teaspoons cornstarch
- ¾ teaspoon salt
- ¼ teaspoon baking soda
- ½ cup vegetable shortening 113g
- ½ cup light brown sugar 115g, packed
- ½ cup granulated sugar 110g
- 1 large egg room temperature
- 1 teaspoon pure vanilla extract
- 2 tablespoons whole milk
- 10 Cherry Cordials I use Cella’s brand
- ¼ cup chocolate melting wafers
- 1 tablespoon sprinkles
Instructions
Cookies
-
Preheat your oven to 350°F (175°C). Line a large baking sheet with parchment paper to prevent sticking and set it aside. If you only have a 9×13-inch baking sheet, you may need to use two baking sheets to accommodate all the cookies, baking in batches if necessary.
-
In a medium-sized mixing bowl, whisk together the dry ingredients: all-purpose flour, unsweetened cocoa powder, powdered milk, espresso powder, cornstarch, salt, and baking soda. Ensure they are well combined, then set this dry mixture aside.
-
Partially melt the vegetable shortening in a microwave-safe bowl. A good indication is to microwave it for about 45 seconds; you want it to be just starting to pool but still have a significant amount of solid, creamy texture remaining.
-
In a large bowl, or the bowl of a stand mixer fitted with a paddle attachment, add the partially melted shortening, light brown sugar, and granulated sugar. Cream them together on medium speed just until the mixture is smooth and light.
-
Crack in the large egg and add the pure vanilla extract. Beat the mixture until these wet ingredients are fully incorporated, scraping down the sides of the bowl as needed.
-
Gradually add the dry ingredients to the wet ingredients. First, add half of the dry mixture and beat just until it’s incorporated. Then, add the remaining dry ingredients along with the whole milk. Continue to mix until the dough is thoroughly combined and no streaks of flour remain, but be careful not to overmix.
-
Divide the cookie dough into 10 equal portions (each should weigh approximately 2.3 oz or 65g for consistency). Gently press your thumb into the center of each dough ball to create a small well. Place one cherry cordial into each well. Carefully use your hands to work the dough up and around the sides and top of the cordial, ensuring it is completely enclosed. Pinch the dough to seal it securely, then roll it gently in your palms to smooth out the surface and ensure a tight seal around the cordial.
-
Arrange the prepared cookies on your parchment-lined baking sheet, making sure to space them at least 2 inches apart. Try to keep the cordial upright within the dough. These cookies don’t spread a tremendous amount, but adequate spacing ensures even baking. Bake for 8 to 9 minutes, or until the edges are just set. It’s normal for the centers of the cookies to look slightly underdone and soft; they will continue to firm up as they cool.
-
Once out of the oven, allow the cookies to cool on the baking pan for 15 minutes. This step is crucial as they are very soft immediately after baking and need time to set and firm up. After 15 minutes, carefully transfer them with a spatula to a wire rack to cool completely.
-
Once the cookies have cooled completely, it’s time to decorate! Melt the chocolate melting wafers in the microwave in 30-second intervals, stirring thoroughly between each interval until the chocolate is smooth and fully melted. Transfer the melted chocolate to a piping bag or a ziploc bag with a tiny corner snipped off. Drizzle the chocolate artfully over the tops of the cooled cookies. If desired, immediately add sprinkles on top of the wet chocolate drizzle to ensure they stick well.
Notes
- Precision in Baking: For the most accurate and consistent results, especially with flour measurements, always use gram measurements and a kitchen scale.
- How To Store: These cookies are best enjoyed fresh. Store them in an airtight container at room temperature. They will retain their peak quality and moisture for up to 3 to 4 days. After this period, the cookie dough tends to dry out a bit. For longer storage, cooled cookies can be frozen in an airtight container for up to 2-3 months.
- Creative Variations: Don’t limit yourself to just cherry cordials! These cookies are incredibly versatile and can be made with various other candy fillings. We particularly love using seasonal Bailey’s truffles and Lindt’s Raspberry Cheesecake Truffles (note: use the flat-bottomed ones sold individually in stores, not the round ones found in bags, for easier stuffing).
- The Power of Espresso Powder: While optional, I highly recommend including the espresso powder. It’s a secret ingredient that intensely amplifies the chocolate flavor, making it richer and more profound, without imparting any noticeable coffee taste.
- The Role of Powdered Milk: Even a small amount of powdered milk (1 tablespoon) makes a big difference. It’s not essential for the cookie’s structure, but it significantly adds an unexpected depth of flavor and richness, making the cookies absolutely delicious.
- Butter as a Substitute: Yes, you can successfully use butter in place of shortening in this recipe. Ensure you use the same measurement. To get the perfect consistency for creaming, I soften my butter by microwaving it for about 45 seconds directly from the fridge. You want it to be partially softened and slightly pooling but still mostly solid.
- Assembling The Stuffed Cookies: For best results, portion the dough out into 10 equal amounts. Use your thumb to create a deep well in each ball. Place your chosen filling (like a cherry cordial, a peppermint patty, or a marshmallow on its side) into the well.
- Ensuring a Tight Seal: Gently work the cookie dough up and around the sides of the filling to completely cover it. Pinch the dough tightly to seal, then gently roll it between your palms to create a smooth, seamless ball. This prevents the filling from leaking during baking.
- Checking For Doneness: These cookies are designed to be soft. Bake them only until the edges are just set, which usually takes around 8 to 10 minutes. The centers will still appear slightly underdone – this is perfectly normal and desired, as they will continue to set as they cool on the baking sheet.
- Customizing Sweetness: These cookies inherently have a deep chocolate flavor. If you prefer a sweeter cookie, consider rolling each cookie dough ball in granulated sugar before baking. This adds a delightful sugary crust and an extra layer of sweetness.
- Dressing Up Your Cookies: After your cookies have completely cooled, it’s time for the final flourish! Drizzle melted chocolate over the tops. If you plan to add sprinkles, do so immediately after drizzling the chocolate, while it’s still wet, to ensure they adhere nicely to the cookies.
