  • 2 cloves garlic, minced (or 1 tablespoon garlic paste)
  • 15 ounces canned tomato sauce (plain, not marinara)
  • 1 cup heavy cream
  • 2 large boneless, skinless chicken breasts (about 1 – 1¼ pound)
  • Salt, to taste
  • Pepper, to taste
  • 1 tablespoon avocado oil (or olive oil, vegetable oil)

Instructions

  1. Combine Spices: In a small bowl, combine ground coriander, garam masala, cumin, smoked paprika, turmeric, cardamom, cayenne pepper, and cinnamon. Stir until thoroughly mixed. Set aside.
  2. Sauté Onions: In a large pot or Dutch oven, melt 2 tablespoons of salted butter over medium heat. Add the diced white onion and cook, stirring frequently, until the onions are soft, tender, and translucent (approximately 5-7 minutes).
  3. Add Garlic: Stir in the minced garlic (or garlic paste) and sauté for 1 minute, stirring constantly to prevent burning.
  4. Bloom Spices: Add half of the prepared spice mixture to the pot with the onions and garlic. Stir well and cook for 30-60 seconds to gently toast the spices and release their aromatic oils.
  5. Simmer Sauce: Pour in the 15 ounces of canned tomato sauce, along with the 1 cup of heavy cream and the remaining half of the spice mixture. Stir everything together until well combined. Bring the sauce to a gentle simmer over medium-low heat and let it cook, stirring occasionally, for 10-15 minutes, or until it visibly thickens to your desired consistency.
  6. Prepare Chicken: While the sauce is simmering, slice each chicken breast horizontally into two thinner cutlets, creating four evenly sized pieces. Season both sides of the chicken generously with salt and black pepper.
  7. Cook Chicken: Heat 1 tablespoon of avocado oil (or other cooking oil) in a separate large skillet over medium-high heat. Add the seasoned chicken cutlets and cook for 4-6 minutes per side, or until they are golden brown and fully cooked through (internal temperature reaches 165°F / 74°C).
  8. Combine and Finish: Once cooked, remove the chicken from the skillet and cut it into bite-sized chunks. Transfer these chicken chunks directly into the simmering masala sauce. Stir gently to coat the chicken thoroughly and allow it to simmer for an additional 2-3 minutes, letting the flavors meld harmoniously.
  9. Serve: Your delicious Chicken Tikka Masala is now ready! Serve immediately over fluffy basmati rice with a side of warm naan bread.

Notes

  • Adjusting Spice Level: Chicken Tikka Masala is traditionally spicy, but you can easily control the heat by adjusting the amount of cayenne pepper. We recommend starting with ½ teaspoon for a milder curry, and adding more in ½ teaspoon increments if you prefer a spicier dish. Be aware that the heat can intensify slightly in leftovers.
  • Chicken Prep Shortcut: For added convenience, you can choose to cut the chicken breasts into bite-sized chunks before cooking them in the skillet, rather than cooking them as cutlets and then chopping them afterwards.
  • Traditional Touch Tip: If you desire a more authentic chicken tikka flavor and have extra time, you can marinate the chicken overnight. Combine ½ cup of plain Greek yogurt, 2 tablespoons of lemon juice, and half of the spice mixture (the portion you would typically add with the tomato sauce in step 5) with the chicken chunks. Then, thread the marinated chicken onto skewers and bake them at 500°F (260°C) for 15 minutes before adding them to the prepared sauce.
