- 3 tablespoons granulated sugar
- 4½ teaspoons instant yeast (two ¼oz. packets)
- 1 teaspoon salt
- 1 cup whole milk
- ½ cup water
- 4 tablespoons unsalted butter, cubed
Topping
- 8 tablespoons salted butter
- 1 cup light brown sugar, packed
- 1¼ cup chopped pecans
- ½ cup molasses
Filling
- 4 tablespoons unsalted butter, cubed and melted
- 2 teaspoons ground cinnamon
- ¼ teaspoon ground nutmeg
- ½ cup light brown sugar, packed
Instructions
Dough Preparation
- In the bowl of a stand mixer fitted with a dough hook, combine the flour, granulated sugar, instant yeast, and salt; mix briefly and set aside.
- In a small saucepan, add the milk, water, and 4 tablespoons of cubed unsalted butter. Cook over medium heat, stirring occasionally, until the butter has melted and the mixture reaches between 120°F and 130°F. If it’s too hot, allow it to cool to this temperature range.
- Slowly add the warm milk mixture to the flour mixture in the stand mixer while mixing on low speed until everything is fully combined. Increase the speed to medium-low and knead the dough for 5 minutes. The dough should become smooth and elastic, appearing somewhat sticky but easily pulling away from the sides with a rubber spatula.
- Transfer the kneaded dough to a large bowl greased with non-stick spray. Flip the dough once to ensure both sides are lightly coated. Cover the bowl with plastic wrap and allow it to proof in a warm place for 15 minutes. The dough should approximately double in size during this time.

Cook over medium heat, stirring frequently, until the butter has fully melted and the mixture forms a sticky sauce.
- Pour this topping mixture into a greased 9×13-inch baking pan, spreading it evenly across the bottom. Set the prepared pan aside.
Filling and Assembly
- Melt the 4 tablespoons of unsalted butter for the filling. Use a pastry brush to evenly brush the melted butter over the rolled-out dough, leaving a small border around the edges.
- Evenly sprinkle the buttered dough with the 2 teaspoons of ground cinnamon, ¼ teaspoon of ground nutmeg, and ½ cup of packed light brown sugar.
- Starting from one of the shorter ends, tightly roll the dough up to form a log.
