Why This Apple And Blueberry Crisp is a Must-Try!
Just as we embrace transitional fashion as summer gives way to fall, why not indulge our palates with a dessert that gracefully bridges the gap between seasons? Our Blueberry Apple Crisp does precisely that, weaving together the vibrant sweetness of blueberries with the familiar, comforting notes of spiced apples. This recipe is more than just a dessert; it’s a culinary journey, offering a harmonious blend of flavors that will delight your taste buds and earn a permanent spot in your recipe collection.
For those who might initially question the combination of blueberries in an apple crisp, we urge you to reconsider. The addition of juicy blueberries introduces a wonderful layer of sweet-tart complexity that perfectly complements the classic fall spices like cinnamon, nutmeg, and a hint of cardamom. This unique pairing elevates the traditional apple crisp, giving it a vibrant freshness that is utterly irresistible. The blueberries burst with flavor, creating a delightful counterpoint to the tender, buttery apples and the richly spiced oat topping.
And let’s be clear: this fruity crisp is practically begging to be topped with a generous scoop of creamy vanilla ice cream or a luscious dollop of homemade whipped cream. In fact, we wholeheartedly encourage you to do so! The cool, creamy texture against the warm, bubbling fruit and crunchy topping creates an unforgettable dessert experience that defines comfort food.
A Closer Look: Rebecca’s Recipe Review
As the creator of this recipe, I’ve poured my heart into perfecting this unique crisp, and the results have been overwhelmingly positive. Here’s a breakdown of what makes this Blueberry Apple Crisp truly special:
Taste: The flavor profile is an exquisite dance between summer and fall. You’ll first notice the sweet, comforting spice of the apples, which are cooked to tender perfection. Then, the blueberries burst onto the scene with their distinctive sweet-tart juiciness, adding a vibrant freshness that prevents the dessert from being overly heavy. The rich, buttery sauce that cradles the fruit is deeply satisfying, making every mouthful incredibly delicious and truly mouthwatering.
Texture: This crisp delivers on every textural promise. The topping is robustly crunchy, featuring golden, toasted oats that provide a delightful contrast to the soft, saucy fruit filling beneath. Each spoonful offers a harmonious blend of crisp exterior and tender, juicy interior, ensuring a truly dynamic eating experience.
Ease of Preparation: On a scale of 1 to 10, with 10 being most difficult, I’d rate this recipe a 3. It’s wonderfully straightforward and accessible for home bakers of all skill levels. While there’s a bit of peeling and chopping involved, the steps are simple, and the process is quite forgiving.
Pros: The exceptional flavor is, without a doubt, the standout feature. This crisp is never runny; the juices thicken beautifully as it bakes and rests, creating a luscious sauce. It’s an incredibly easy recipe to follow, making it perfect for a weeknight treat or an impressive weekend dessert. The blend of fruits and spices is truly unique and consistently praised.
Cons: The main time commitment comes from the initial prep work — peeling, coring, and chopping the apples, along with rinsing and drying the blueberries. While these steps are essential for the best texture and flavor, they do require a bit of patience. However, the effort is undeniably rewarded with a spectacular dessert.
Would I Make This Again? Absolutely, and I already do! In the past month alone, this recipe has been made four times in my home. I honestly find myself preferring it over a classic, plain apple crisp due to the added depth and brightness the blueberries bring. It’s a true family favorite!

Essential Ingredients for Your Blueberry Apple Crisp
Crafting this easy apple blueberry crisp recipe relies on a thoughtful selection of ingredients that infuse it with rich, cozy flavors and delightful textures. For the aromatic foundation of the fruit filling, you’ll need comforting spices such as ground cinnamon, warm ground nutmeg, and a touch of aromatic cardamom, balanced with bright vanilla extract. The stars of the show are, of course, the fruits: crisp Honeycrisp apples (known for holding their shape and flavor beautifully during baking) and vibrant blueberries. All-purpose flour is crucial for thickening the juices, while a pinch of salt enhances all the flavors, and a splash of lemon juice adds a refreshing zest and prevents the apples from browning.
Once this perfectly spiced apple and blueberry mixture is nestled into your baking dish, it gets crowned with a scattering of cold butter pieces. This butter melts down, creating pockets of rich, luscious flavor and helping the fruit cook evenly. The grand finale is a truly delicious oatmeal crumb topping, which is prepared by combining hearty rolled oats, sweet light brown sugar, more all-purpose flour for structure, powdered milk for a touch of creaminess, another hint of ground cinnamon, a pinch of salt, and more cold butter. This combination ensures a topping that is both crunchy and deeply flavorful, the perfect contrast to the soft fruit below.
Fresh vs. Frozen Blueberries: The Secret to Success
Through extensive testing, we’ve discovered a critical secret to achieving the perfect Blueberry Apple Crisp: frozen blueberries. We rigorously tested this recipe four times, experimenting with both fresh and frozen berries, and the results were consistently clear. The best outcome, both in terms of flavor and texture, was achieved using frozen blueberries, particularly Wyman’s Wild Blueberries.
There’s a good reason for this. Frozen blueberries are typically harvested and flash-frozen at their peak ripeness. This process locks in their intense, consistently delicious flavor, which translates directly into a more robust and satisfying crisp. Furthermore, wild blueberries often possess a naturally deeper, more gorgeous juice color, which creates an incredibly appealing visual in the final dish.
In contrast, when we used fresh blueberries, even those locally picked at the height of their season, they didn’t impart the same depth of flavor. More significantly, they tended to release too much water during baking, resulting in a crisp that was noticeably more watery and less cohesive. The beauty of using frozen blueberries is that they hold their structure better and release their juices more gradually, contributing to a perfectly thickened, flavorful filling. Remember, there’s no need to thaw them; simply rinse and pat dry before adding to the mixture.

Crafting Your Own Blueberry Apple Crisp: A Step-by-Step Guide
Making this delightful Blueberry Apple Crisp is a straightforward process, promising incredible rewards for minimal effort. Follow these simple steps for a perfect dessert every time:
- Preheat and Prepare: Begin by preheating your oven to 350 degrees F (175 degrees C). Have your 9×9-inch baking dish ready.
- Craft the Topping: In a medium mixing bowl, combine the cold butter (cut into small cubes), rolled oats, light brown sugar, all-purpose flour, powdered milk, ground cinnamon, and salt. Use a pastry cutter or, preferably, your hands to pinch and work the butter into the dry ingredients until a crumbly mixture forms. Be careful not to overmix; you want distinct crumbles, not a dough. Avoid using an electric mixer for this step, as it can overwork the butter.
- Prepare the Apples: Peel, core, and chop your Honeycrisp apples into ¾-inch cubes. Consistency in size is key for even cooking. Aim for approximately 700 to 800 grams of chopped apples.
- Combine Apple Mixture: In a large bowl, combine the chopped apples with light brown sugar, all-purpose flour, fresh lemon juice, vanilla extract, ground cinnamon, ground nutmeg, and salt. Stir gently but thoroughly until all the apple pieces are evenly coated with the spice mixture.
- Rinse Blueberries: Once the apple mixture is ready, rinse the frozen blueberries under cold water until the water runs mostly clear. This helps remove any ice crystals and prevents excess moisture in the crisp. Pat them thoroughly dry with paper towels.
- Assemble the Fruit Base: Gently fold the rinsed and dried blueberries into the apple mixture. Transfer this vibrant fruit mixture evenly into your prepared 9×9-inch baking dish.
- Add the Topping: Generously spread the prepared oat crumble topping over the fruit mixture in the pan. Ensure an even layer for a consistent crisp texture.
- Initial Bake: Bake in the preheated oven for 30 minutes, or until the crumble topping turns a beautiful golden brown and the fruit mixture around the edges begins to bubble enticingly.
- Finish Baking: Loosely tent the baking dish with aluminum foil. This prevents the topping from over-browning while allowing the apples to become perfectly tender. Bake for an additional 10 minutes.
- Rest and Serve: Remove the crisp from the oven. For optimal texture and for the juices to thicken to their ideal consistency, allow the crisp to rest for at least an hour, or even two, before serving. Enjoy it warm or at room temperature.
Customizing Your Crumble Topping Texture
The beauty of this crisp recipe lies in its versatility, especially when it comes to the topping. You have the power to control its texture to match your family’s preference. For a more traditional, finer crumb, mix the ingredients just enough until they form small, uniform crumbles. If, like my family, you prefer a more substantial crunch, you can continue to work and press the crisp ingredients together a bit longer. This encourages them to form larger, more satisfying clumps, resulting in bigger, harder bites of crisp topping that offer a delightful chew and added texture.

- Apple Preparation: While I typically prefer chopped apples for a heartier texture, feel free to slice your apples as thick or as thin as you desire. Thinner slices will cook down more quickly and yield a softer filling, while thicker chunks maintain more bite. Adjust baking time accordingly if you opt for very thin slices.
- Best Apple Varieties: For optimal baking results in crisps and crumbles, select apples that hold their shape and offer a good balance of sweetness and tartness. Excellent choices include Honeycrisp (my top recommendation), Cosmic Crisp, or the classic Granny Smith. Each brings a unique flavor profile to the crisp, so choose your favorite!
- The Role of Flour: It is absolutely crucial not to omit the all-purpose flour from this recipe, particularly in the fruit mixture. The flour acts as a thickener, absorbing the juices released by the apples and blueberries as they bake. Skipping this vital ingredient will result in a Blueberry Apple Crisp that is disappointingly watery and runny. If you require a gluten-free option, a high-quality 1-to-1 gluten-free baking flour blend should work effectively without compromising the texture.
- Make-Ahead Perfection: This crisp is an ideal candidate for advance preparation, allowing you to enjoy a fresh, warm dessert directly from the oven even when guests arrive unexpectedly. To prep ahead, simply mix the apple mixture (hold off on adding the frozen blueberries at this stage) in one bowl and prepare the crisp topping in another. Cover both bowls tightly and store them in the refrigerator. When you’re ready to bake, add the frozen blueberries to the apple mixture, assemble, and don’t forget to arrange slices of cold butter between the fruit and topping layers for ultimate richness before baking.
- Pan Choice: We’ve experimented with both ceramic and metal baking pans, and while both work well, a metal pan often provides a slightly superior bake, particularly in achieving a more caramelized bottom crust and evenly cooked apples.
- Blueberry Temperature: For the best results, use frozen blueberries directly from the freezer; do not thaw them before rinsing and adding them to the apple mixture. Thawing can lead to excessive moisture and a less flavorful outcome.

Serving Your Irresistible Apple Blueberry Crisp
There’s truly nothing quite like a warm Apple Blueberry Crisp, fresh from the oven, filling your kitchen with its sweet, spiced aroma. We adore serving this crisp while it’s still warm, allowing the rich, bubbling fruit filling and crisp topping to shine. If you have leftovers, a quick pop in the microwave brings it back to life, restoring that comforting warmth and deliciousness.
To elevate the experience, we highly recommend topping each serving with a generous scoop (or even two!) of premium vanilla ice cream. The cold, melting ice cream provides a heavenly contrast to the warm fruit. Alternatively, a heaping portion of homemade whipped cream adds a lighter, airy sweetness. For those who truly want to indulge, why not opt for both?
For an elegant touch, feel free to garnish individual bowls of crisp with a few fresh blueberries and thinly sliced apple pieces just before serving. This not only adds visual appeal but also introduces another layer of fresh fruit flavor and texture.
Storing Your Delicious Blueberry Apple Crisp
Proper storage ensures you can enjoy the delightful flavors of this crisp for days to come. After baking, once the Blueberry Apple Crisp has cooled completely to room temperature, it can be covered loosely and left out at room temperature for the remainder of the day. This is perfect if you plan to serve it again later that evening.
For longer storage, it is essential to transfer the crisp to an airtight container or cover the baking dish tightly with plastic wrap or aluminum foil. Once covered, store it in the refrigerator. When refrigerated, the crisp will remain fresh and delicious for up to 3 days. To reheat, you can warm individual servings in the microwave or place the entire dish (covered with foil) in a moderate oven until heated through.

Apple and Blueberry Crisp Recipe
Ingredients
Oat Topping
- 1 cup rolled oats 104g
- 1 cup light brown sugar 215g, packed
- 1 cup all-purpose flour 130g
- 1 tablespoon powdered milk 5g
- ½ teaspoon ground cinnamon
- ¼ teaspoon salt
- 1 cup cold butter 227g
Apple Mixture
- 5 Honeycrisp apples 700 – 800g, peeled, cored, and chopped
- 1 pint frozen blueberries 285g, preferably Wyman’s brand
- ½ cup light brown sugar 110g, packed
- ¼ cup all-purpose flour 32g
- 1 tablespoon lemon juice half a small lemon
- 1 teaspoon vanilla extract
- 1 teaspoon ground cinnamon
- ¼ teaspoon ground nutmeg
- ¼ teaspoon cardamom
- ½ teaspoon salt
Instructions
-
Preheat oven to 350°F (175°C) and set aside a 9×9-inch baking pan.
-
Cut the 1 cup cold butter into small cubes and add to a medium mixing bowl for the topping.
-
Add the 1 cup rolled oats, 1 cup light brown sugar, 1 cup all-purpose flour, 1 tablespoon powdered milk, ½ teaspoon ground cinnamon, and ¼ teaspoon salt to the bowl with the butter and mix until a crumble forms. You can use a pastry cutter, but I prefer to work with my hands, pinching the butter cubes and working them into the ingredients until they all clump together.

-
Peel and chop the apples into ¾-inch cubes. Aim for about 700 to 800 grams of chopped apples for this recipe.

-
Add the chopped 5 Honeycrisp apples, ½ cup light brown sugar, ¼ cup all-purpose flour, 1 tablespoon lemon juice, 1 teaspoon vanilla extract, 1 teaspoon ground cinnamon, ¼ teaspoon ground nutmeg, ¼ teaspoon cardamom, and ½ teaspoon salt to a large bowl and stir until evenly coated.

-
Once the rest of the ingredients have been prepared, rinse 1 pint frozen blueberries under cold water until it runs mostly clear, then pat them dry between paper towels.

-
Gently stir the blueberries into the apple mixture and transfer to the 9×9-inch baking dish.

-
Evenly spread the crumble topping over the apple-blueberry mixture.

-
Bake for 30 minutes until the crisp topping is beautifully browned and the fruit mixture is bubbling around the edges.
-
Loosely cover the dish with aluminum foil and bake for an additional 10 minutes to ensure the apples are perfectly tender.
-
Remove from oven and let the crisp set. For the best consistency, allow it to rest for at least an hour or two before serving, as the juices will thicken further as it cools.

Notes
- I prefer chopping my apples for a heartier texture. If you prefer a softer apple, you can extend the covered baking time by an additional 5 to 10 minutes.
- For consistent results and great flavor, I highly recommend using Honeycrisp or Cosmic Crisp apples in this recipe due to their firm texture and balanced sweetness.
- To prepare this crisp ahead of time, mix the apple mixture (excluding the frozen blueberries) in one bowl and the crisp topping in another. Cover both bowls and store them in the fridge. Add the frozen blueberries just before assembling and baking the crisp.
- Both ceramic and metal baking pans work well, but I’ve found that a metal pan tends to provide a slightly better bake, often resulting in a more evenly cooked fruit base.
- Our testing revealed that fresh blueberries resulted in a less flavorful and more watery crisp compared to frozen blueberries, which also contributed a beautiful, vibrant color to the dish.
- It’s crucial not to thaw the frozen blueberries before using them; add them directly to the apple mixture after rinsing and patting dry.
- When forming the crisp topping, aim for small to medium-sized clumps. Avoid making them excessively large, as this can affect even baking and overall texture.
