Indulge in the vibrant flavors of the Caribbean with this exquisite Coconut Rum Cake. This recipe elevates the classic rum cake to new heights, infusing it with the sweet, tropical essence of coconut and crowning it with a rich, buttery rum glaze. Prepare for a dessert that transports your taste buds straight to sun-drenched beaches and gentle ocean breezes.

There’s something undeniably magical about a classic rum cake, but this Coconut Rum Cake recipe introduces an irresistible tropical twist. It’s a dessert that perfectly captures the spirit of island life, making it an ideal treat for any occasion, especially when you’re craving a taste of the exotic.
For me, this cake is more than just a recipe; it’s a delicious journey back to cherished memories of a recent Princess Cruise trip through the Eastern Caribbean. The breathtaking turquoise waters, the soft white sands, and exhilarating excursions like snorkeling and swimming with stingrays were unforgettable. Yet, amidst all these incredible experiences, one element truly captivated my senses and lingered long after I returned home: the incredible food.

Beyond the impressive culinary offerings onboard the ship, I found immense joy in exploring the local flavors at each port of call. Every stop offered a unique gastronomic adventure, from fresh seafood to aromatic spices. But among all the delectable discoveries, one particular treat stood out as both surprisingly delicious and utterly memorable: the Coconut Rum Cake.
Often referred to as Caribbean Rum Cake, this decadent dessert is characterized by its dense, moist texture and an intoxicating blend of rum and coconut. What made it particularly surprising was finding such a gourmet-quality treat packaged in gift shops across the ports. These delightful cakes, notably the famous Tortuga Rum Cakes, were sold boxed and shrink-wrapped, making them the perfect edible souvenir. In fact, they are widely recognized as one of the most popular souvenirs throughout the Caribbean islands.
During our visit to Grand Turk, just before reboarding, I spotted these irresistible cakes. Despite a slight concern about cutting it close to departure, the efficiency of modern cruise reboarding procedures gave me the confidence to quickly stock up on these sweet treasures. It was a risk well worth taking, ensuring a piece of the Caribbean came home with us.

A Culinary Tradition Inspired by the Caribbean
We encountered Tortuga Cakes in nearly every port, and each time, I couldn’t resist picking up a few. However, once back home, their irresistible charm meant they vanished far too quickly. This delightful dilemma sparked an inspiration: to create my own homemade version, capturing the authentic flavors I had come to love.
Rum cake has always held a special place in my family’s traditions, particularly as a cherished Christmas dessert. Our classic recipe typically features spiced rum and walnuts, a comforting taste of holiday nostalgia. But this homemade Coconut Rum Cake introduces a refreshing, summery twist, making it versatile enough to enjoy year-round. With its rich, moist crumb and layers of flavor, many have declared it the best rum cake they’ve ever tasted. By incorporating a few clever baking “hacks,” you can easily replicate this beloved tourist favorite in your own kitchen.
This recipe transforms a simple cake into an extraordinary tropical indulgence, embodying the warmth and vibrancy of the islands. It’s perfect for those who appreciate a dessert that’s both deeply flavorful and incredibly moist, offering a truly unique experience with every bite.

Crafting the Perfect Coconut Rum Cake: Key Ingredients
Achieving a cake with such profound flavor and impeccable moisture doesn’t have to be complicated. This recipe streamlines the process by utilizing a yellow cake mix and a package of instant vanilla pudding mix, creating a semi-homemade approach that guarantees consistent results without sacrificing taste. These foundational ingredients provide a head start, allowing you to focus on the unique flavor additions that make this cake truly special.
Beyond these convenient shortcuts, the recipe incorporates baking staples such as large eggs, water, vegetable oil, and granulated sugar, ensuring a well-balanced and tender crumb. However, the true stars of this Caribbean-inspired dessert are, undoubtedly, the coconut and the rum.
For that unmistakable island flavor, the cake is generously enriched with sweet, shredded coconut. This adds not only a delightful texture but also a natural sweetness and aroma that perfectly complements the rum. And when it comes to rum, this recipe doesn’t hold back. To create a multi-dimensional flavor profile, we call for not one, not two, but three distinct types of rum, totaling a full cup to ensure every bite is wonderfully soaked in boozy goodness!

The Rum Selection: A Symphony of Flavors
The choice of rum is paramount to the success of this Coconut Rum Cake, contributing significantly to its depth and character. Using a blend of rums creates a sophisticated flavor profile that truly stands out. Here’s a breakdown of the specific types of rum recommended and why:
- Dark Rum: I personally favor Myers’s, though Goslings is another excellent choice for many. Dark rum provides a robust, foundational flavor within the cake batter itself. Its rich, molasses notes add complexity and a deep, warming undertone that is irreplaceable. For the best results, avoid substituting dark rum with lighter varieties in the cake batter.
- Gold Rum: Appleton Special Rum is my go-to for baked goods. It’s a wonderfully affordable option that boasts a great body and a delightful sweetness, making it particularly well-suited for the luscious buttery glaze. Its smooth character beautifully enhances the overall taste without overpowering the delicate coconut notes.
- Coconut Rum: This is the ingredient that truly defines the “coconut” in Coconut Rum Cake! Brands like Sugar Island, Blue Chair Bay, or Malibu are excellent choices. Sweet and distinctly tropical, coconut rum infuses the cake and glaze with an aromatic, exotic essence that perfectly completes the Caribbean flavor profile. It’s the key to that vibrant, sun-kissed taste.
The intentional use of three different rums is designed to create a dynamic and wonderfully layered flavor experience. Each rum plays a specific role, contributing to the cake’s overall richness and tropical allure. While this blend is highly recommended, if Appleton Special Rum is unavailable, you can substitute it with another quality gold rum, an additional amount of dark rum, or even opt for entirely coconut rum for a more pronounced tropical note in the glaze. However, I strongly advise against omitting or substituting the dark rum in the cake batter, as it forms the essential flavor backbone.
It’s important to note that spiced rum is not recommended for this recipe, as its dominant spice profile tends to overshadow the delicate and essential coconut flavor we’re aiming for.
Given the generous quantity of rum, it must be emphasized that this rum-soaked delight is absolutely not kid-friendly. This intensely flavored, Caribbean-inspired dessert is crafted purely for adult enjoyment. Every luxurious bite offers a taste of paradise, a mini-vacation in your mouth! It’s the perfect boozy treat to share with age-appropriate friends and family, especially when celebrating summer or any occasion that calls for a touch of tropical flair.

Effortless Baking: Your Step-by-Step Guide
Creating this Coconut Rum Cake is a surprisingly straightforward process, despite its decadent appearance. While the active preparation time is minimal, patience is key, as the cake requires approximately an hour to bake and then at least two hours to properly soak up the rich, buttery, and sugary glaze. This soaking period is crucial for achieving its signature moistness and intense flavor.
- Preparation is Key: Begin by preheating your oven to 325 degrees F (160 degrees C). Thoroughly grease and flour a 10-inch Bundt pan, ensuring every crevice is coated to prevent sticking. Then, evenly sprinkle about 1/2 cup of shredded coconut over the bottom of the prepared pan. This creates a beautiful, toasted coconut crust on top of your finished cake.
- Mix the Batter: In a large mixing bowl, or using a stand mixer fitted with a whisk attachment, sift together the yellow cake mix and instant vanilla pudding mix. Sifting helps prevent lumps and ensures a smooth batter. Add the large eggs, water, vegetable oil, dark rum, and coconut rum. Beat on medium speed until all ingredients are fully incorporated and the batter is smooth. Carefully pour the batter into the prepared Bundt pan, over the layer of shredded coconut.
- Bake to Perfection: Place the Bundt pan in the preheated oven and bake for approximately 1 hour, or until a cake tester or toothpick inserted into the center of the cake comes out clean. The cake should be golden brown and spring back slightly when lightly touched.
- Prepare the Irresistible Glaze: While the cake is in its final 10-15 minutes of baking, begin preparing the rum glaze. In a medium saucepan, combine the salted butter, water, and granulated sugar. Bring the mixture to a rolling boil over medium heat, stirring constantly to ensure the sugar dissolves completely. Continue to boil for 5 minutes without stirring. Remove the saucepan from the heat and carefully stir in the gold rum and the remaining coconut rum.
- The Soaking Secret: Immediately after removing the cake from the oven, and while both the cake and glaze are still hot, use a skewer or a thin wooden stick to poke numerous holes all over the bottom (top, once inverted) of the cake. These holes will allow the glaze to penetrate deeply. Slowly and evenly pour the entire hot rum glaze over the hot cake in the pan. Be mindful not to let the glaze overflow the edges of the pan; pour gradually if needed.
- Cool and Release: Allow the cake to cool completely to room temperature in the pan, soaking for at least 2 hours. This extended cooling and soaking period is vital for the cake to absorb all the flavorful glaze and develop its signature moistness. Do NOT refrigerate the cake at this stage, as it can hinder the glaze absorption. Once cooled, use a small rubber spatula to gently loosen the cake from the sides of the pan. Then, carefully invert the pan onto a serving plate or cake stand. Be patient and allow gravity to work; the cake will be a bit sticky and may take a few moments to release.
- Garnish and Serve: Once successfully plated, the Coconut Rum Cake is beautiful on its own. For an extra touch of elegance, you can dust it with a light layer of powdered sugar, drizzle it with a thick vanilla icing, or sprinkle it with toasted coconut flakes.

Notes
- I prefer making this cake with three different kinds of rum because I think it adds a wonderful flavor dynamic. If you can’t find Appleton Special Rum, you can use another gold rum, dark rum, or ALL coconut rum. However, I recommend keeping the dark rum in the cake batter itself for depth of flavor.
- I don’t recommend spiced rum as it tends to overpower the delicate coconut flavor in this recipe.
- For an even more intense coconut flavor, consider adding 1 teaspoon of coconut flavoring extract to the cake batter.
