  • ½ cup 100% pure maple syrup 156ml, see notes
  • cup light brown sugar 140g, packed
  • 1 ounce lemon juice
  • 2 tablespoons cornstarch
  • 1 teaspoon vanilla extract
  • 1 teaspoon ground cinnamon
  • ½ teaspoon speculaas or apple pie spice see notes
  • ¼ teaspoon salt
  • ¼ cup salted butter 57g

Topping

  • 1 (16 oz.) box Pillsbury refrigerated pie crusts
  • 2 tablespoons milk
  • 2 tablespoons granulated sugar
  • ½ teaspoon ground cinnamon

Instructions

  • Preheat the oven to 425°F (220°C).
  • Peel, core, and slice 8 Honeycrisp or Granny Smith apples into ¼-inch thick slices and add to a large mixing bowl.
  • Add ⅔ cup light brown sugar, ½ cup 100% pure maple syrup, 1 ounce lemon juice, 2 tablespoons cornstarch, 1 teaspoon vanilla extract, 1 teaspoon ground cinnamon, ½ teaspoon speculaas or apple pie spice, and ¼ teaspoon salt and toss to coat until all apple slices are evenly covered.
  • Transfer the coated apple mixture to a 10-inch cast iron skillet. If you only have an 8-inch cast iron skillet, that’s okay; just reduce the apples by 1 to prevent overflow!
  • Cut the ¼ cup salted butter into small, evenly sized cubes and dot them all over the top of the apple mixture.
  • Carefully top the apples with one crust from the 1 (16 oz.) box Pillsbury refrigerated pie crusts. Gently press the edges of the pie crust down into the pan around the perimeter to secure it.
  • Brush the top of this first pie crust layer evenly with 1 of the 2 tablespoons milk.
  • In a small prep bowl, stir together 2 tablespoons granulated sugar and ½ teaspoon ground cinnamon . Sprinkle half of this cinnamon sugar mixture over the milk-washed crust.
  • Repeat the process by placing the second pie crust on top of the first, brushing it with the remaining milk, and then sprinkling it with the remaining cinnamon sugar mixture.
  • Using a sharp knife, cut 6 evenly spaced slits around the center of the top pie crust to allow steam to escape during baking.
  • Bake for 35 to 40 minutes in the preheated oven. The pandowdy is ready when the filling is visibly bubbling around the edges of the skillet, and the crust has turned a beautiful golden brown. I recommend checking on the crust around the 30-minute mark; if it’s getting too brown, gently tent some aluminum foil over the top to prevent burning.
  • Remove the skillet from the oven. Immediately use a sharp chef’s knife to slice across the entire top of the crust in parallel lines, about 2-inches apart. Then, slice in the opposite direction to create distinct square pieces on top of the pie.
  • Next, take a spoon and gently press each of the cut crust pieces down into the hot apple filling. Push just enough so that the bubbling sauce runs over the top of the crust pieces. This is the authentic pandowdy style; as it cools, the sauce will dry, creating a delicious, glistening glaze on the crust.
  • Allow the pandowdy to sit at room temperature for at least 2 hours to cool. This crucial resting period allows the hot fruit juices to thicken, ensuring a perfectly set filling.
