What Exactly Is A Cruffin? Unpacking This Delightful Hybrid Pastry
The Cruffin is a clever and utterly delicious cross between a muffin and a croissant. It takes the signature flaky, buttery layers of a classic croissant and reimagines them in a muffin-like shape, often filled with creams, jams, or other sweet concoctions. While sometimes attributed to Mr. Holmes Bakehouse, the Cruffin was actually invented by Kate Reid of Lune Croissanterie in Melbourne, Australia, before gaining widespread popularity, particularly in the United States, through bakeries like Mr. Holmes.
While traditional bakery cruffins are crafted from scratch with homemade croissant dough, our recipe simplifies the process dramatically by utilizing convenient store-bought puff pastry. And trust us, the results are still absolutely delicious, offering a quick and convenient way to enjoy this trendy treat!
One enthusiastic baker, John, shared his experience: “This was a very dangerous discovery. These are crazy good and way too easy to make. I will definitely make these again but nowhere near as often as I’ll want to. I made some last night for a party we had and they were gone in minutes.” This sentiment perfectly captures the allure of these irresistible pastries!

Essential Ingredients for Perfect Cinnamon Sugar Cruffins
This Cruffins recipe keeps things wonderfully simple, relying on packages of puff pastry for its signature doughy base. If you haven’t purchased puff pastry before, head to the frozen food section of your grocery store. You’ll typically find it alongside frozen pies, cakes, and other frozen desserts. The remaining ingredients needed for these delectable Cruffins are granulated sugar, ground cinnamon, and salted butter.
Once your pastries emerge golden from the oven, you can elevate their sweetness even further! We love dusting ours with more cinnamon sugar, a sprinkle of powdered sugar, or even some rich brown sugar for an extra layer of cozy flavor. Each component plays a crucial role in creating the ultimate Cruffin experience.
High-Quality Puff Pastry: The Foundation of Flaky Layers
Puff pastry is the star of this recipe, providing those irresistible, airy layers without the intensive labor of making croissant dough from scratch. Look for all-butter puff pastry if available for the richest flavor, but any good quality store-bought puff pastry will yield fantastic results. Ensure it’s thawed according to package directions, usually overnight in the refrigerator, to prevent tearing.
The Sweet Heart: Granulated Sugar and Ground Cinnamon
This classic combination is what gives Cruffins their comforting, cinnamon-roll like flavor profile. Granulated sugar provides the perfect sweetness and a slight textural crunch, while ground cinnamon adds warmth and aromatic spice. For the best flavor, make sure your cinnamon is fresh and fragrant.
Richness and Flavor: Salted Butter
Butter is essential for both flavor and to help the cinnamon-sugar mixture adhere to the pastry layers. We recommend salted butter as it enhances the overall taste and balances the sweetness. If you only have unsalted butter, simply mix in a tiny pinch of salt (about 1/8 teaspoon per half cup) to achieve a similar flavor profile.
- Puff pastry (ensure it’s thawed)
- Granulated sugar
- Ground cinnamon
- Salted butter (softened)

Step-by-Step Guide: How To Make Homemade Cruffins with Puff Pastry
Creating these sensational pastries is much simpler than you might think. Follow these easy steps to achieve perfectly flaky, cinnamon-sugar Cruffins every time:
- Prepare Your Workspace and Oven: Begin by preheating your oven to 400°F (200°C). Prepare a standard 12-cup muffin pan by spraying each well generously with a non-stick spray that has flour added, or by lining them with muffin liners. This ensures your Cruffins release easily after baking.
- Unroll the Puff Pastry: Carefully unroll each of the four sheets of puff pastry. Lay them flat on a clean countertop. Set two of these sheets aside; they will form the top layer of your pastry “sandwich.”
- Create the Cinnamon-Sugar Mix: In a small bowl, whisk together the granulated sugar and ground cinnamon until well combined. This is your flavorful filling! Reserve about 4 tablespoons of this mixture in a separate small bowl to use for sprinkling on your warm Cruffins after they bake.
- Butter and Season the Pastry: Take the two puff pastry sheets that are currently on your counter. Using a butter knife or an offset spatula, spread approximately ¼ cup of softened salted butter evenly over the entire surface of each sheet. Then, generously sprinkle the larger portion of your cinnamon-sugar mixture over the buttered pastry, ensuring full coverage.
- Layer the Pastry: Carefully place the two reserved puff pastry sheets directly on top of the cinnamon-sugar coated sheets, creating two neat “sandwiches” of puff pastry, butter, and cinnamon sugar. Gently press down to seal the layers.
- Cut into Strips: Using a pizza cutter or a pastry wheel, cut each pastry sandwich into six equal strips. This will give you 12 strips in total, one for each Cruffin.
- Roll and Place: Take each strip and roll it up tightly, cinnamon roll style. As you roll, gently pinch the ends of the pastry to help secure the spiral and prevent it from unrolling too much during baking. Place each rolled Cruffin into a well of your prepared muffin pan.
- Bake Until Golden: Transfer the muffin pan filled with Cruffins to your preheated oven. Bake for approximately 15 to 18 minutes, or until the Cruffins are beautifully golden brown and puffed up. Their fragrant aroma will fill your kitchen!
- Serve and Enjoy: Once baked, remove the Cruffins from the oven. While they are still warm, gently roll them in the remaining 4 tablespoons of cinnamon-sugar mixture that you set aside earlier. This adds an extra burst of flavor and a lovely sugary crust. Serve immediately for the best texture and flavor.

Tips for Cruffin Success: Mastering Your Puff Pastry Creation
While making Cruffins with puff pastry is inherently simple, a few expert tips can ensure your results are consistently perfect and bakery-worthy.
Handling Puff Pastry: Keep it Cold
Puff pastry is easiest to work with when it’s cold. The butter layers stay firm, preventing sticking and ensuring those beautiful flaky layers develop during baking. Only remove the puff pastry from the refrigerator when you are ready to unroll it and apply the butter and cinnamon sugar. If it starts to get too warm and soft while you’re working, pop it back into the fridge for 5-10 minutes to firm up.
Thawing Frozen Puff Pastry Properly
If your puff pastry is frozen, always thaw it slowly in the refrigerator overnight. Avoid thawing at room temperature, as this can make the butter layers too soft and difficult to work with, compromising the flakiness.
Achieving the Perfect Spiral
When rolling your pastry strips, aim for a relatively tight coil, similar to how you would roll a cinnamon roll. This helps create distinct, appealing layers. Don’t be afraid to gently pinch the outer end of the strip to the rolled pastry to prevent it from unraveling while baking.
Baking Temperature and Doneness
Baking at 400°F (200°C) is key to getting a quick puff and a golden-brown exterior. Keep an eye on your Cruffins; they should be visibly puffed, deeply golden, and sound hollow when tapped lightly. If they’re browning too quickly, you can loosely tent them with foil for the last few minutes of baking.

Delicious Variations and Customization Ideas for Your Cruffins
While the classic cinnamon-sugar Cruffin is undeniably delicious, this recipe is incredibly versatile. Don’t hesitate to experiment with different flavors to suit your preferences!
Sweetening Options: Brown Sugar vs. White Sugar
You can certainly use brown sugar instead of granulated white sugar for the filling. Keep in mind that brown sugar will impart a slightly heavier texture and a delightful caramel note to your Cruffins. Granulated sugar tends to create a flavor closer to a traditional cinnamon roll, offering a lighter mouthfeel.
Spice It Up!
Beyond cinnamon, other spices can add intriguing depth to your Cruffins. Consider incorporating a ½ teaspoon of ground ginger, cardamom, star anise, or even coriander into your sugar mixture for a tasty variation. These warm spices pair beautifully with the buttery pastry.
Chocolate Lovers’ Dream
For a chocolate-infused treat, skip the cinnamon sugar in the filling and instead sprinkle miniature chocolate chips over the buttered pastry before folding and baking. Once the Cruffins come out of the oven, melt more chocolate chips in the microwave and drizzle the melted chocolate generously over the tops for an extra decadent touch.
Other Creative Fillings
The possibilities are endless! You could spread a thin layer of fruit jam (like raspberry or apricot), a sweetened cream cheese mixture, or even a nut butter before rolling. A touch of citrus zest (lemon or orange) added to the sugar mixture can also brighten the flavor.
Serving Suggestions: When and How to Enjoy Your Cruffins
Cruffins are incredibly versatile and can be enjoyed in various ways, making them perfect for any occasion.
Breakfast & Brunch Stars
They shine brightest as a centerpiece for breakfast or brunch. Serve them warm with a side of fresh fruit, a dollop of Greek yogurt, or even a light drizzle of maple syrup.
Coffee & Tea Pairings
As mentioned, Cruffins are the ideal companion for your morning coffee or afternoon tea. The rich pastry and sweet filling complement hot beverages beautifully.
Dessert Delights
Don’t limit Cruffins to just the morning! They make an excellent light dessert. Consider serving them with a scoop of vanilla bean ice cream or a swirl of whipped cream for an indulgent finish.
Storing and Reheating Your Delectable Cruffins
To keep your Cruffins tasting their best, proper storage is key.
Room Temperature Storage
Cruffins are best stored in an airtight container at room temperature. They will remain fresh and delicious for up to 3 days. While not as flaky as when fresh from the oven, they’ll still be wonderfully soft and flavorful.
Freezing for Longer Enjoyment
If you want to enjoy your Cruffins for longer, they freeze beautifully! Place cooled Cruffins in an airtight freezer-safe bag or container and freeze for up to 2 months. To reheat, simply thaw at room temperature and then warm in a preheated oven (around 350°F/175°C) for a few minutes until warmed through and slightly crisp.
Frequently Asked Questions (FAQ) About Cruffins
How Can I Prevent The Puff Pastry From Tearing As I Work With It?
The best strategy is to work with cold puff pastry, straight from the refrigerator. Avoid taking it out until you are ready to spread the butter and toppings. If it was frozen, ensure it has thawed completely in the fridge overnight. Cold pastry is more pliable and less prone to tearing.
Can I Use Brown Sugar Instead Of White Sugar In This Cruffin Recipe?
Yes, you absolutely can! Using brown sugar will impart a slightly heavier texture and a delicious caramel flavor to your Cruffins. The cinnamon-sugar mixture made with granulated sugar tends to create a lighter, more traditional cinnamon roll flavor, so choose based on your preference.
Can I Use Unsalted Butter Instead Of Salted Butter?
Yes, unsalted butter works fine. If you prefer the subtle salty balance, you can easily make your own salted butter by mixing 1/8 teaspoon of salt into every ½ cup of unsalted butter. If you prefer no added salt, simply proceed with unsalted butter as is.
How Can I Make Smaller Cruffins Using This Recipe?
This recipe yields generously sized Cruffins. To make smaller ones, you can easily cut the entire recipe in half. For instance, use one package of pastry dough (2 sheets) and cut each sheet into 10 smaller 1-inch strips. These smaller rolls will still fit into a regular muffin tin, though they won’t fill the cups entirely as they bake. Bake them until golden, and then toss them in the reserved cinnamon sugar as directed.
Is There A Way To Add Chocolate To These Cruffins?
Absolutely! For a chocolatey twist, skip the cinnamon sugar in the filling. Instead, sprinkle chocolate chips (miniature ones work best) over the buttered pastry before folding and baking. Once the Cruffins are baked and out of the oven, you can melt more chocolate chips and drizzle the warm melted chocolate over the tops for an extra layer of indulgence.
What is the difference between a Cronut and a Cruffin?
Both are popular hybrid pastries, but they combine different elements. A Cronut is a delicious cross between a croissant and a donut, typically fried and then flavored. A Cruffin, on the other hand, is a cross between a croissant and a muffin, usually baked in a muffin tin and often filled or flavored like a muffin. Both offer deliciously flaky butter layers.
Is Cruffin French?
No, despite its croissant component, the Cruffin is not French. It was actually invented by Kate Reid in Melbourne, Australia, at Lune Croissanterie.
What does a Cruffin taste like?
A Cruffin tastes like a richer, denser croissant, often loaded with a sweet filling such as cinnamon sugar. It’s an incredibly satisfying combination of buttery flakiness and comforting sweetness, similar to a cinnamon roll but with the delicate layers of a croissant.
