Serve them as a refreshing after-dinner treat, impress guests at your next gathering, or simply enjoy a moment of sweet indulgence whenever the craving strikes.

A Symphony of Flavors: The Taste Profile

The magic of these Key Lime Pie Cookies lies in their exquisite balance. The cookie base, far from being overly sweet, offers a rich flavor reminiscent of a classic graham cracker crust. This provides the perfect foundation for the star of the show: the key lime filling. This creamy, tangy, and perfectly sweet filling harmonizes beautifully with the subtle crust-like cookie, creating a balanced and utterly delicious dessert that’s sure to become a favorite.

A Delightful Contrast: The Perfect Texture

Beyond their incredible taste, these Key Lime Cookies offer a wonderfully pleasing textural experience. The cookie dough is rolled in graham cracker crumbs before baking, giving the base a soft interior with a delightful, slightly crunchy exterior—just like a pie crust. In contrast, the key lime filling contributes a luxurious, silky-smooth texture that melts in your mouth, making each bite an adventure of complementary sensations.

Crafting the Irresistible Key Lime Filling

The heart of any key lime dessert is its filling, and ours is designed to be the absolute best: a perfectly balanced fusion of sweet and tart, with an impossibly silky-smooth consistency. Achieving this pinnacle of flavor and texture starts with the right ingredients and a precise technique.

The Magic of Key Limes: Why Fresh is Best

For the most authentic and vibrant flavor, we highly recommend using fresh key lime juice. Key limes are renowned for their distinct tartness and aromatic qualities, which surpass those of regular limes. Their higher acidity translates to a more intense, tangier taste, making them the unparalleled choice for any key lime recipe where that signature zing is desired. While bottled key lime juice can be a convenient substitute, the unparalleled brightness of freshly squeezed juice truly elevates these cookies from good to extraordinary.

Achieving Silky Smooth Perfection

The secret to a flawlessly smooth and creamy key lime filling lies in two key steps. First, ensure your cream cheese is perfectly softened to room temperature. This allows it to whip up smoothly, preventing any lumps from forming. Second, once all the ingredients—fresh key lime juice, sweetened condensed milk, and softened cream cheese—are combined, they must be beaten together at medium-high speed. Continue mixing until the filling transforms into a luscious, uniform, and velvety cream. If, despite your best efforts, you notice any stubborn lumps, a simple trick is to pass the filling through a fine-mesh strainer. This extra step guarantees an impeccably smooth and delightful filling every time.

Beyond the Crumbl Copycat: More Citrus Delights

If these Key Lime Pie Cookies spark an insatiable craving for more citrusy goodness, you’re in luck! The world of key lime desserts is vast and wonderfully refreshing. You might consider diving into a classic, making an entire Key Lime Pie from scratch. Or perhaps you’d prefer to infuse other baked goods with that unmistakable zest by creating Homemade Key Lime Curd, perfect for fillings in delectable Key Lime Pie Cupcakes.

Personally, I often find myself reaching for a batch of Key Lime Bars when I need my citrus fix. Their buttery shortbread crust topped with a soft, tangy layer of lime goodness is simply irresistible. However, these copycat Crumbl cookies have certainly earned a top spot on my list of must-make citrus treats, especially since enjoying the “real thing” from Crumbl would require a significant road trip!

Expert Tips for Perfect Key Lime Pie Cookies

Achieving bakery-quality results at home is easier than you think with these helpful tips and tricks. From shaping your cookies without special equipment to perfect storage, we’ve got you covered.

No Tart Tins? No Problem!

While I used tart tins (affiliate link) for these cookies, I understand that not everyone has them, or wants to invest in them. The good news is, you absolutely can still make these delicious Key Lime Pie Cookies without them! To do so, begin by scooping your cookie dough into 1/4 cup mounds. Roll each mound gently between your hands to form a smooth ball. Next, generously coat each dough ball in graham cracker crumbs. Place these coated balls onto a baking sheet lined with parchment paper. Then, take the bottom of a 1/2 measuring cup and use it to press each cookie flat, sinking it deep enough to create a distinct cavity for the filling. If the measuring cup starts to stick, simply dip its bottom into some extra graham cracker crumbs before pressing. Once all your cookies have beautifully formed wells, proceed with baking them according to the recipe instructions. This method yields equally stunning and delicious results!

Smart Storage Solutions for Freshness

To keep your Key Lime Pie Cookies at their best, proper storage is key. Arrange the cooled cookies in a single layer inside an airtight container. Then, place the container in the refrigerator. These cookies are best enjoyed within 1 to 2 days after baking and filling. Beyond this timeframe, the cookie base tends to soften considerably, losing some of its desirable texture. Always serve them chilled for optimal flavor and consistency.

Planning Ahead: Make-Ahead Tips

Yes, you can absolutely prepare these delightful cookies in advance, which is perfect for busy schedules or entertaining! The trick is to keep the cookie bases and the filling separate until you’re ready to serve. Bake the cookies according to the recipe, allow them to cool completely, and then store them in an airtight container at room temperature. For the filling, prepare it as directed, then transfer it into a Ziploc bag. Store the bag in the refrigerator for up to 2-3 days. When you’re ready to enjoy, simply snip off a corner of the Ziploc bag and pipe the creamy filling into the cooled cookie forms. Garnish and serve immediately for the freshest experience.

Achieving the Signature Crumbl Look & Yield

For cookies that truly mimic the iconic Crumbl Key Lime Pie Cookies in appearance, 4-inch tart tins are your best bet. Using this specific size will help you achieve the signature shape and generous portion size that Crumbl is known for. Following this recipe with 4-inch tart tins typically yields approximately 18 cookies. However, please note that if you choose to use different sized tart tins or the “no tart tin” method described above, the final number of cookies produced may vary.

These Key Lime Pie Cookies are a Crumbl copycat recipe that has a dense cookie rolled in graham cracker crumbs and a creamy lime filling!

Equipment

  • Electric mixer
  • Mixing bowls
  • Rubber Spatula
  • Measuring Cups
  • Measuring spoons
  • Baking sheets
  • 4” tart tins (see notes for alternative method)
  • Zester
  • Cookie scoop or spoon
  • Knife
  • Cutting board

Ingredients

Cookies

  • 1 cup salted butter, softened
  • ¾ cup light brown sugar, packed
  • ½ cup granulated sugar
  • ½ cup canola or vegetable oil
  • 2 large eggs
  • 1 Tablespoon vanilla extract
  • 2½ cups all-purpose flour
  • 2½ cups graham cracker crumbs (divided, 1½ cup and 1 cup)
  • 2 teaspoons cornstarch
  • 1½ teaspoons baking powder
  • 1 teaspoon salt

Key Lime Filling

  • 1½ cups heavy whipping cream
  • 28 ounces sweetened condensed milk
  • 16 ounces cream cheese, softened
  • 10 ounces lime juice
  • ½ cup sour cream

Garnishes

  • Whipped cream
  • Graham cracker crumbs
  • Lime wedges (from 2-3 limes)
  • Lime zest (from 2-3 limes)

Instructions

  1. Preheat your oven to 325°F (160°C). Arrange all 4-inch tart tins on a baking sheet.
  2. In the bowl of a stand mixer fitted with a paddle attachment, combine the softened butter, light brown sugar, granulated sugar, oil, eggs, and vanilla extract. Beat at medium to high speed for 3 to 4 minutes, until the mixture is light and fluffy.
  3. Add the all-purpose flour, 1½ cups of the graham cracker crumbs, cornstarch, baking powder, and salt to the butter mixture in the bowl. Beat again on medium speed until all ingredients are well combined and a cohesive dough forms.
  4. Pour the remaining 1 cup of graham cracker crumbs into a separate shallow bowl or plate; set aside.
  5. Scoop out ¼ cup portions of cookie dough. Roll each portion into a smooth ball, then coat it thoroughly in the reserved graham cracker crumbs. Place each crumb-coated dough ball into a 4-inch tart tin. Use the flat bottom of a cup or measuring cup to press the dough firmly into the tin, creating a deep well in the center for the filling. If the cup starts to stick, dip it in extra graham cracker crumbs before pressing.
  6. Bake the cookies at 325°F (160°C) for 12 to 15 minutes, or until the edges are lightly golden. Remove from the oven and let them cool completely in their tins on a wire rack.
  7. While the cookies are cooling, prepare the key lime filling. In a clean stand mixer bowl, whip the heavy whipping cream until stiff peaks form. Gently scrape the whipped cream into a separate bowl and set it aside.
  8. Using the same mixer bowl (no need to wash it), add the softened cream cheese. Beat on medium-high speed until it is completely smooth. While the mixer is running, slowly stream in the sweetened condensed milk and continue to beat until well incorporated.
  9. Mix in the sour cream until it is fully combined and the mixture is smooth.
  10. Pour the lime juice into the cream cheese mixture and beat for a couple of minutes on medium-high speed until the filling is smooth, creamy, and thoroughly combined.
  11. Gently fold the reserved whipped cream into the key lime filling mixture using a rubber spatula, until no streaks remain. Be careful not to deflate the whipped cream.
  12. Once the cookie bases have cooled completely, generously scoop the key lime filling into each cookie well, mounding it slightly on top for a beautiful presentation.
  13. Garnish each filled cookie with a thin wedge of fresh lime, a sprinkle of lime zest, a dusting of graham cracker crumbs, and a decorative star of whipped cream.
  14. Serve the Key Lime Pie Cookies chilled for the best experience. Store any leftovers in a single layer in an airtight container in the refrigerator.

Notes

  • No Tart Tin? No Worries! As mentioned above, if you don’t have 4-inch tart tins, you can still make these cookies. Scoop ¼ cup mounds of dough, roll them into balls, coat them in graham cracker crumbs, and place them on a parchment-lined baking sheet. Use the bottom of a ½ cup measuring cup to press a deep well into each cookie before baking.
  • Storage Best Practices: For optimal freshness and texture, store the cookies in a single layer in an airtight container in the refrigerator. They are best enjoyed within 1 to 2 days, as the cookie base can become too soft beyond this period.
  • Yield Information: This recipe, when using 4-inch tart tins, yields approximately 18 delicious cookies. The exact number may vary slightly if you use different sized tins or alternative shaping methods.
  • Achieving the Crumbl Look: To make your cookies closely resemble Crumbl’s Key Lime Pie Cookies, 4-inch tart tins are recommended for their distinctive size and shape.
  • Make-Ahead Instructions: To prepare these cookies ahead of time, bake the cookie bases and store them separately in an airtight container. Prepare the key lime filling and store it in a Ziploc bag in the refrigerator. When ready to serve, pipe the filling into the cooled cookie forms and garnish.
