Why this recipe works
I love me a good casserole in the morning. One that’s loaded with cheesy hash browns and eggs, much like this turkey hash brown breakfast casserole. I know it might seem like a lot to get done in the wee hours of the morning, but the best part about this breakfast casserole is that you can prepare mostly all of it the night before. It’s certainly a nice switch-up from the everyday eggs and bacon, pancakes, or waffles. Plus, the leftovers are just as good.

Ingredient Info and Substitution Suggestions
TURKEY – Ground turkey is what I prefer to use in this casserole, though if you have leftover chopped or shredded turkey you can substitute with that instead. Realistically, this base is great for all sorts of breakfast meats. Ham, bacon, or sausage would all work as well.
HASH BROWNS – Frozen shredded hash browns are perfect here, although you will want to thaw them before beginning. This prevents the casserole from tasting watery. You can easily substitute with freshly shredded potatoes if preferred. Just be sure to pat them down well to remove excess moisture.
CHEESE – Cheddar is my go-to for breakfast casseroles. You can use a combination of your favorite cheeses here! Pepper Jack would add a nice little kick of flavor.
How to Make Turkey Hash Brown Breakfast Casserole

- Heat oil in a large skillet. Add the chopped onion and saute for a couple of minutes.
- Then add the ground turkey as well as the Italian herbs and cook over medium – high heat for 3-4 minutes, stirring frequently.

- In a bowl, whisk together eggs with the garlic salt and pepper.
- Stir in the hash browns, 1/2 cup of the cheese, and the onion/turkey mixture, to the bowl with the eggs.

- Transfer to a greased 13×9 baking dish and top with remaining 1/2 cup of cheese.

- Bake, uncovered, at 350° for 35-45 minutes or until a knife inserted near the center comes out clean.

Can I add veggies to my breakfast casserole?Yes, absolutely. This recipe would be great with some spinach, chopped bell peppers, or even mushrooms added in. Toss them in the skillet with the onions to help soften them.
Can I make it ahead of time?You can prepare the casserole as you would normally, except for adding the cheese on top. Cover with foil and refrigerate. Pull it out of the refrigerator about 30 minutes before you plan on baking. Then, top with cheese, and bake. Easy!
Can you freeze turkey hash brown breakfast casserole?You sure can. Prep the casserole as you would normally. Wrap the casserole a few times with plastic wrap, followed by a layer of aluminum foil. Freeze for up to 2 months. Thaw in the fridge overnight.
Serving Suggestions
I typically whip out turkey hash brown casserole around the holidays when there are more mouths to feed. Though, I will say the casserole is excellent heated up or even frozen as well!
Serve warm from the oven. It’s pretty filling all on its own, but pairs well with some fresh fruit or toast on the side. Enjoy!
