Why this recipe works
There’s a lot of wiggle room when it comes to making steak soft tacos, though there’s always going to be some tips and tricks to getting perfectly tender, well-seasoned steak to wrap inside soft tortillas.
and I have different taste preferences when it comes to marinated meat. I like mine where you dry off the marinade and quickly sear the meat for a juicy result. prefers to remove the meat from the marinade and not wipe it off, then cook the meat until there’s a lovely flavored crust. Either way works great, so make it the way you want!

STEAK – For tender steak cubes, we prefer sirloin. If you like steak strips, go with flank or skirt steak.
MARINADE – If you prefer, you can use any of our steak marinades, but wanted to experiment with a bottled Carne Asada seasoning with this recipe. Regardless of the marinade you choose, be sure to allow enough time for marination.
TORTILLAS – We used flour tortillas, but you can use corn tortillas or hard shell if you prefer.
How to Make Steak Soft Tacos

- Trim any excess fat from steak and cut into bite-sized cubes. Place in a glass or ceramic dish.
- Whisk all marinade ingredients together in a medium bowl. Pour marinade over the meat cubes and toss to coat. Cover dish with plastic wrap and refrigerate for 2-12 hours.


- Heat a flat top or skillet over medium-high heat. Add a small amount of oil (1-2 teaspoons) to prep the surface.
- Use a few paper towels to toss the marinated meat to remove any excess liquid. Place meat cubes onto flat top or into skillet and allow to sear for several minutes before turning. Cook for several minutes, or until no longer pink.

- Heat tortillas on grill or on stovetop, just enough to char them.

- Fill tortillas with meat and your favorite toppings.
Frequently Asked Questions & Expert Tips
Do you have to marinate steak for tacos?It isn’t imperative, but I highly recommend it. Marinating helps tenderize the steak, as well as pump it full of flavor. This particular marinade is similar to a wet rub, though it’ll still need time to rest just as other marinades do. For something more “classic”, our steak marinade is also excellent here. Whatever route you take, make sure you allow enough time for the steak to absorb the flavors. I would typically recommend a minimum of 1-2 hours of marination time. If you want to substitute with regular seasoning, I would still say to give it about 30 minutes of time to rest.
What kind of steak is best for soft tacos?You can use sirloin, skirt, flank, and even ribeye steak for soft tacos. Depending on which way you like to cut your steak can make a difference. If you prefer thin strips, I would suggest opting for skirt or flank steak. For cubed steak, sirloin, or ribeye is best.
How do you store leftovers?Store cooled leftover steak in an airtight container kept in the refrigerator for up to 4 days. It’s best to reheat the steak in a skillet over medium-low heat for just a couple of minutes until heated through. Otherwise, you can microwave it covered with a damp paper towel.
How do I cut my steak into strips instead of cubes?
For cutting your steak into strips, you’ll likely be using flank or strip steak. The easiest way to cut flank steak is to freeze it for about 30 minutes first. That firms it up and makes it much easier to cut. However, don’t be like me and forget that you put it in the freezer and then have to use your microwave’s defrost option to undo everything you intended to do in the first place.
Cut the meat into 1/2″ strips lengthwise. Now turn your cutting board a quarter turn and slice the strips thin so that you end up with thin diced pieces of meat. Doing half of the strips and then the other half is easier than trying to cut them all at once.
Serving Suggestions
Serve your steak soft tacos wrapped inside a flour or corn tortilla, along with chopped cilantro, onion, a sprinkle of cojita cheese, and a lime wedge. Optionally garnish with salsa fresca, chimichurri, or a slaw. I personally like to pair it with classic Mexican rice and beans.
Use leftover steak as a salad topper or toss it into a burrito bowl if you happen to always run out of tortillas, like I do. Enjoy!
