Discovering a Timeless Classic: Nana’s Devil’s Food Cake
Nana’s Devil’s Food Cake is more than just a recipe; it’s a culinary legend that has captivated the hearts (and taste buds) of countless home bakers. This particular Dark Chocolate Bundt Cake soared to fame as a Reddit-famous recipe, sparking widespread adoration for its exceptional qualities. And for good reason! Its incredibly tender crumb, combined with the luxurious, smooth, and decadent Chocolate Ganache topping, creates a dessert that transcends generations and trends.
The secret to its unparalleled texture lies in a thoughtful combination of ingredients and techniques. Unlike many chocolate cakes that rely on melted chocolate, this recipe champions unsweetened cocoa powder, which contributes to a deeper, more robust chocolate flavor. Furthermore, it incorporates a higher proportion of baking soda than traditional cake recipes. This seemingly small adjustment is crucial, as it reacts with the acidic cocoa powder to create a finer crumb, resulting in a cake that is remarkably tender and moist – truly a love-at-first-bite experience.
Why This Recipe Is a Must-Try
- Unrivaled Rich Chocolate Flavor: Every bite is a celebration of deep, dark chocolate, enhanced by a surprising secret ingredient.
- Perfectly Tender and Moist: Forget dry cakes! This recipe guarantees a supremely moist and delicate crumb that melts in your mouth.
- Simple and Delicious: Despite its impressive taste, it’s surprisingly easy to make, even for novice bakers.
What truly sets Nana’s Devil’s Food Cake apart is its ability to deliver an intensely rich chocolate experience without being overly sweet. The thoughtful balance of cocoa and sugar, coupled with a touch of coffee, creates a complex flavor profile that is both comforting and sophisticated. The tender, fine crumb is a testament to the precise balance of leavening agents, ensuring a light yet substantial cake. And with straightforward steps and common pantry staples, it’s a testament to how simple ingredients can yield extraordinary results.

Key Ingredients for an Unforgettable Chocolate Bundt Cake
Creating this exceptional Devil’s Food Chocolate Cake begins with gathering your essential baking ingredients. For the cake itself, you’ll need all-purpose flour, unsweetened cocoa powder, baking powder, baking soda, salt, large eggs, granulated sugar, vegetable oil, whole milk, vanilla extract, and a crucial ingredient that might surprise you: black coffee.
While black coffee isn’t typically considered a basic baking ingredient, its inclusion in this recipe is absolutely essential for achieving the cake’s signature depth of flavor. The coffee doesn’t make the cake taste like coffee; instead, it acts as a flavor enhancer, amplifying the rich chocolate notes and making them even more pronounced and complex. Do not skip it! For best results, use freshly brewed hot coffee.
Once the cake emerges from the oven, perfectly baked and cooled, it’s crowned with a luscious, smooth chocolate ganache coating. This simple yet decadent topping is created by gently melting semi-sweet chocolate chips with heavy cream and a pinch of salt. The salt helps to balance the sweetness and deepen the chocolate’s complexity, creating an irresistible glaze that elevates the entire cake.
While the chocolate ganache is truly divine, this versatile cake also welcomes other delicious toppings. Feel free to swap out the ganache from time to time for a generous dusting of powdered sugar, a swirl of your favorite chocolate frosting, or even a dollop of homemade whipped cream paired with fresh berries for a lighter, fruitier touch. Each option offers a unique way to enjoy this magnificent chocolate creation.

Step-by-Step Guide to Baking Nana’s Devil’s Food Cake
Baking this Devil’s Food Bundt Cake is a rewarding process, and following these steps carefully will ensure a perfect result every time. Precision in preparation, especially with ingredient measurements and mixing, is key to achieving that signature tender crumb and rich flavor.
- Prepare Your Pan: First, preheat your oven to 350°F (175°C). This is crucial for even baking. Next, meticulously grease a 12-cup bundt pan with vegetable shortening, ensuring every nook and cranny is coated. Then, dust the greased pan evenly with unsweetened cocoa powder. This cocoa layer not only prevents sticking but also provides a lovely dark finish to the cake’s exterior. If you opt for nonstick spray, do not dust with cocoa powder, as it may interfere with release.
- Combine Dry Ingredients: In a large mixing bowl, sift together the all-purpose flour, cocoa powder, baking powder, baking soda, and salt. Sifting helps to aerate the flour and ensures there are no lumps, leading to a smoother, more uniform batter. Once sifted, give them a quick whisk to ensure they are thoroughly combined.
- Mix Wet Ingredients: In a separate large bowl, or the bowl of a stand mixer fitted with a paddle attachment, beat the eggs until light and fluffy. Gradually add the granulated sugar, vegetable oil, whole milk, and vanilla extract, mixing until well incorporated. Finally, pour in the hot black coffee and mix until everything is smoothly combined. The hot coffee helps to “bloom” the cocoa powder, intensifying its flavor.
- Combine Wet and Dry: Gradually add the dry ingredient mixture to the wet ingredients in three separate additions. Mix on low speed between each addition until just combined. Scrape down the sides of the bowl as needed to ensure all ingredients are fully incorporated. Be careful not to overmix; overmixing can develop the gluten in the flour too much, resulting in a tough cake. The batter will be noticeably thin, which is normal for this recipe, unlike thicker box mixes.
- Bake to Perfection: Pour the thin batter evenly into your meticulously prepared bundt pan. Place the pan in the preheated oven and bake for approximately 40 to 45 minutes. To test for doneness, insert a wooden skewer or toothpick into the center of the bundt cake; it should come out clean.
- Cool and Release: Once baked, remove the cake from the oven and let it cool in the pan on a wire rack for 20 to 30 minutes. This cooling period is vital; it allows the cake to firm up, making it less likely to break when inverted. After this time, carefully run a thin rubber spatula around the edges of the cake to loosen it, then invert the cake onto the wire rack to cool completely.
- Prepare the Ganache: While the cake finishes cooling, prepare the rich chocolate ganache. In a medium microwave-safe bowl, combine the semi-sweet chocolate chips, heavy cream, and salt. Microwave on high for 1 minute. Remove the bowl and whisk the mixture until smooth. If needed, microwave for an additional 30 seconds to 1 minute, stirring until completely smooth and free of lumps. Add the powdered sugar and whisk until a thick and smooth chocolate sauce forms. Allow the ganache to sit at room temperature for at least 30 minutes to thicken slightly before generously spreading or drizzling it over the cooled bundt cake. If desired, finish with a sprinkle of decorative sprinkles for extra flair.
Baking Tip: When greasing your bundt pan, vegetable shortening is generally a superior choice over butter. Shortening creates a non-stick barrier that is less likely to cause the cake to adhere to the pan, ensuring a clean release. Additionally, butter can sometimes lead to excessive browning or a crunchy crust on the edges of the cake, which shortening helps to avoid, promoting a uniformly tender exterior.

Frequently Asked Questions About Devil’s Food Cake
Absolutely! If you prefer not to use a microwave, you can easily prepare the ganache on the stovetop. Simply place the heavy cream in a small saucepan and heat it over medium heat until it begins to gently simmer around the edges (do not bring to a rolling boil). Remove from heat immediately, then pour the hot cream over the chocolate chips and salt in a heatproof bowl. Let the mixture sit undisturbed for about 4 to 5 minutes to allow the chocolate to melt. Then, whisk gently until the ganache is completely smooth and glossy. Allow it to cool slightly at room temperature until it thickens to a pourable consistency.
While coffee is highly recommended for its ability to deepen and enhance the chocolate flavor without imparting a coffee taste, you can certainly substitute it with hot water if necessary. However, be aware that using hot water might result in a slightly less intense chocolate flavor. For the richest, most complex chocolate notes, coffee is truly the superior choice.
Yes, this recipe yields a generous amount of batter, making it versatile for different pan sizes. You can divide the batter between two 9 or 10-inch round cake pans for layer cakes, or even use a 9×13-inch rectangular pan for a sheet cake. If opting for two round pans or a 9×13-inch pan, adjust the baking time to approximately 30 to 40 minutes, or until a toothpick inserted into the center comes out clean.
We highly advise against using butter to grease your bundt pan for this recipe. Butter, when heated, can actually cause the cake to stick to the pan, making it difficult to release cleanly. As mentioned in our baking tip, vegetable shortening is a much better option as it creates a more reliable non-stick surface, ensuring your beautiful bundt cake comes out perfectly intact.
Store any leftover cake covered at room temperature for up to 2-3 days. If your kitchen is particularly warm, or if the ganache seems soft, you can store it in the refrigerator for up to 5 days. Just be sure to bring it back to room temperature before serving for the best flavor and texture. This cake also freezes beautifully! Wrap individual slices or the entire cooled cake (without ganache) tightly in plastic wrap, then in foil, and freeze for up to 3 months. Thaw overnight in the refrigerator before serving.
While this recipe has not been specifically tested with gluten-free flours, many bakers have success by substituting a 1:1 gluten-free all-purpose flour blend (one that contains xanthan gum) for the regular all-purpose flour. Keep in mind that results may vary slightly in texture. Always check your baking powder and baking soda to ensure they are gluten-free as well, as some brands may contain wheat starch.

Notes
- This recipe can also be made in two 9 or 10-inch round pans or a 9×13-inch pan (bake for 30 to 40 minutes).
- Hot water may be used in place of coffee, but coffee adds more flavor and brings out the chocolate notes more prominently.
- This is a dark chocolate cake/devil’s food cake, and while it contains 2 cups of sugar, it’s not overly sweet. It pairs exceptionally well with whipped cream and fresh berries for a balanced treat.
- The ganache is optional; you can also opt for a dusting of powdered sugar or a classic sugar icing instead.
- Canola oil can be used as an alternative to vegetable oil.
- Do not use butter to grease the pan because it will encourage the cake to stick.
