Chubby Hubby Cookies are inspired by the popular ice cream flavor! The malted vanilla bean dough is loaded with chopped peanut butter pretzels, chopped chocolate, and peanut butter chips!

Ingredients

  • 1¾ cups (230g) cake flour
  • 2 cups (275g) all-purpose flour
  • 3 tablespoons (35g) malted milk powder
  • 1 tablespoon (8g) corn starch
  • 1½ teaspoons (5g) salt
  • ½ teaspoon (6g) baking soda
  • 1¼ cups (280g, 20 tablespoons) cold unsalted butter
  • 1⅓ cups (285g, packed) light brown sugar
  • ½ cup (115g) granulated sugar
  • 2 large eggs
  • 3 additional large egg yolks
  • 1 tablespoon vanilla extract
  • 9 ounces (255g) chocolate covered peanut butter pretzel nuggets (plus more for topping, optional)
  • 8 ounces (250g, chopped) semi-sweet chocolate
  • 1 cup (165g) peanut butter chips
  • 10 ounces chocolate melting wafers (optional)
  • 3 tablespoons chopped peanuts (optional)

Instructions

  1. Preheat the oven to 425°F (NOT A TYPO). Line 2 to 3 baking sheets with parchment paper and set aside.
  2. Whisk together the cake flour, all-purpose flour, malted milk powder, cornstarch, salt, and baking soda in a medium bowl. Set aside.
  3. In a stand mixer fitted with a paddle attachment, cream together the cold butter and sugars. Mix at medium-high speed until smooth, about 3 to 4 minutes, scraping down the sides of the bowl about every minute.
  4. Once combined, add in the eggs one at a time, followed by the egg yolks. Then mix in the vanilla extract until just combined.
  5. Once the wet ingredients are smooth, gradually add the flour mixture a little at a time, mixing until just smooth and no dry streaks remain.
  6. Add in the chopped semi-sweet chocolate and peanut butter chips. Mix just until combined, being careful not to overmix.
  7. Roughly chop the chocolate covered pretzels and gently fold them into the mixture by mixing for about 5 seconds on the stir setting or using a rubber spatula.
  8. Weigh each dough ball out to 5.8 oz and place on a parchment-lined baking sheet. Refrigerate for 15 minutes. If baking at the higher temperature (425°F), you can probably bake 6 cookies on a half-sheet pan. If baking at the lower temperature mentioned in the notes (375°F), you’ll only be able to bake 4 at a time due to increased spread.
  9. While the first batch chills, prepare the second batch of cookies on another baking sheet. Place it in the fridge to chill as soon as you take the first batch out to bake. This staggered approach ensures consistent chilling and baking.
  10. Bake for 9 to 11 minutes at 425°F. The edges should be set, but the centers may still appear slightly soft.
  11. Allow the baked cookies to set on the hot pan for a couple of minutes before carefully transferring them to a wire rack to cool completely. This helps them firm up without breaking.
  12. Once cooled, melt the chocolate melting wafers in a microwave-safe bowl. Heat at 30-second intervals, stirring thoroughly between each interval, until the chocolate is fully melted and smooth.
  13. Spoon the melted chocolate over the top of the cooled cookies, then sprinkle with chopped peanuts and artfully top each cookie with a whole chocolate-covered peanut butter pretzel nugget. Let the toppings harden at room temperature, or for a quicker set, pop them into the refrigerator for 10 to 15 minutes.
