How to Make Blue Cheese Crusted Steak

  1. Preheat oven to 500 F.
  2. Trim excess fat (but not all of it) off the steaks and set aside.
  3. In a small bowl, combine half of the olive oil with garlic salt and black pepper.

  5. Heat remaining olive oil in a large oven-proof skillet over medium-high heat until shimmering. Add red onion and saute for 1-2 minutes to soften.

  11. Place skillet into preheated oven and cook for 5 minutes. Turn oven up to broil, broil for 1 minute.
  12. Remove skillet from oven and immediately move steaks to a cutting board. Tent with foil and allow to rest for 5-10 minutes before serving.
  13. Top or serve with remaining blue cheese mixture if you like.

    CHEF TIP – Be sure to remove the steaks from the skillet right away. If you leave them in the hot skillet, they will continue to cook turning your medium-rare steak into medium-well.
