This Baileys Irish Cream Chocolate Fudge is a great festive treat to bring to a St. Patrick’s Day gathering. These bite-sized delights are decorated with shamrock and gold coin toppings along with green sparkly sugar sprinkles. All that fresh, green color has me thinking of Spring already!

This recipe uses mini marshmallows and butter which adds to its ultra-smooth texture. It also can be made on the stove top in a medium-large pot for 15 minutes. It has to set for 30 minutes at room temperature and then 1 hour in the refrigerator. You can store it in the fridge for up to 5 days. When taking it out of the refrigerator I suggest letting it cool to room temp before devouring!

  • 4 tablespoons of unsalted butter, plus more for greasing the 8″ x 8″ x 2″ pan
  • 3 cups of mini marshmallows
  • 1 cup sugar (I used organic pure cane sugar and it works very well)
  • 1/2 cup heavy cream (heavy whipping cream works as well)
  • 1/2 teaspoon kosher salt
  • 1 teaspoon (or more) Baileys Original Irish Cream
  • 12 ounces semisweet chocolate (use the best quality you can find, it does make a difference, you can also substitute dark chocolate morsels)
  • Optional: Seasonal holiday sprinkles
