SCALLOPS – Some sea scallops may have a small tendon attached. Simply peel off the tendon before beginning if they happen to have one. Scallops purchased from the meat counter or freezer case normally already have the tendon removed. Try and choose scallops that are uniform in size for even cooking.

BACON – We suggest center cut bacon because it is the same width all the way across and at both ends. This ensures even cooking. The bacon is tender in this recipe, if you prefer it crispy, partially cook it before wrapping the scallops. The bacon still needs to be tender and moldable in order to wrap around the scallops, so be sure not to overcook it if you decide to go this route.

  1. Preheat oven to broil.
  2. Rinse and pat the scallops dry.
  3. Spray baking sheet with cooking spray.
