Ingredient Notes and Selection Tips

Creating truly delicious Grilled Mahi Mahi starts with quality ingredients. For this recipe, fresh Mahi Mahi fillets are the star, receiving a light brush of olive oil before being generously coated with our irresistible seasoning blend. Let’s delve into each component to ensure you get the best results.

Mahi Mahi Fillets: When selecting Mahi Mahi, look for fillets that are firm, moist, and have a translucent, almost glistening appearance. If buying fresh, it should have a mild, fresh ocean scent, not a strong “fishy” odor. For frozen fillets, ensure the packaging is airtight and there are no signs of freezer burn. Thaw frozen fish slowly in the refrigerator overnight for best results.

Olive Oil: A good quality olive oil is essential here, not just for preventing sticking but also for enhancing the flavor of the fish and helping the seasoning adhere. It also helps achieve a beautiful golden crust on the grill. A light, extra virgin olive oil works wonderfully.

The Flavorful Seasoning Mixture: This homemade rub is what truly makes this Mahi Mahi sing. You’ll need:

  • Kosher Salt: Provides fundamental seasoning and helps draw out moisture for a crispier exterior.
  • Garlic Powder: Offers a foundational savory note that complements seafood beautifully.
  • Onion Powder: Adds a subtle sweetness and depth, rounding out the savory elements.
  • Smoked Paprika: This is the secret weapon! It imparts a rich, smoky aroma and a vibrant color, giving the fish that classic grilled flavor even before it hits the grates. Don’t substitute with regular paprika if you want that smoky depth.
  • Black Pepper: A touch of freshly ground black pepper adds a gentle warmth and aromatic kick.

Feel free to adjust the quantities of these spices to your preference. If you like a bolder flavor, you can increase them slightly. The key is to create a generous coating on the fish.

Melted Unsalted Butter: As soon as the fish comes off the grill, a brush of melted unsalted butter adds a luscious richness and a beautiful sheen. The unsalted variety allows you to control the overall saltiness of the dish. This step adds a final touch of indulgence that really elevates the meal.

Garnish (Optional):

  • Fresh Parsley: A sprinkle of fresh chopped parsley adds a burst of vibrant green color and a clean, herbaceous finish.
  • Grilled Lemons: This is highly recommended! Grilling lemons brings out their natural sweetness and creates a smoky, caramelized citrus flavor that is absolutely divine squeezed over the finished fish. To do so, slice a few lemons in half, brush them with a little olive oil, and sear them directly on the grill grates until they develop a dark golden-brown char. The warm, smoky lemon juice adds the perfect bright acidity to balance the richness of the Mahi Mahi.

How To Make Perfect Grilled Mahi Mahi: Step-by-Step

Achieving perfectly grilled Mahi Mahi is surprisingly simple with these clear, easy-to-follow steps. Follow this guide to ensure firm, flaky, and flavor-packed fillets every time.

  1. Prepare the Fish: Begin by placing your Mahi Mahi fillets on a clean sheet tray or plate. Lightly brush all sides of the fish with olive oil. This step is crucial as it helps the seasoning adhere evenly and prevents the fish from sticking to the grill grates. Set the oiled fillets aside while you prepare your seasoning.
  2. Craft the Smoky Seasoning Rub: In a small, clean bowl, combine the kosher salt, garlic powder, onion powder, smoked paprika, and black pepper. Stir these ingredients together thoroughly until well blended. Next, generously rub this homemade seasoning mixture onto the top and sides of each Mahi Mahi fillet. Don’t be shy – use all of the seasoning to ensure maximum flavor penetration. Gently press the rub into the fish so it forms a nice coating.
  3. Preheat and Oil Your Grill: Set your outdoor grill to medium-high heat. Allow it to preheat fully for 5-10 minutes. Once hot, use a grill brush to clean the grates. Then, using tongs and a paper towel dipped in a little oil (or a dedicated grill oiler), carefully oil the hot grill grates. This step is vital for preventing the delicate fish from sticking.
  4. Grill to Perfection: Carefully place the seasoned Mahi Mahi fillets onto the oiled grill grates, flesh side down if there’s skin. Grill each side for approximately 3 to 5 minutes, depending on the thickness of your fillets and your preferred doneness. Mahi Mahi is cooked when it flakes easily with a fork and reaches an internal temperature of 145°F (63°C). For a firmer, well-done texture, you can aim for 160-165°F (71-74°C). Try to flip the fish only once to keep the fillets intact and prevent them from breaking apart.
  5. Finish and Serve: As soon as the grilled Mahi Mahi comes off the grill, transfer it to a serving platter. Immediately brush the tops of the hot fish with melted unsalted butter. The butter will melt beautifully, adding a rich, glistening finish. Garnish with fresh chopped parsley if desired, and serve alongside smoky grilled lemon wedges for a bright, acidic burst that truly enhances the flavor profile. Enjoy your perfectly grilled Mahi Mahi!

Frequently Asked Questions About Grilled Mahi Mahi

How To Store Leftover Grilled Mahi Mahi

To keep your leftover Grilled Mahi Mahi fresh and delicious, allow it to cool completely before transferring it to an airtight container. Stored properly in the refrigerator, it will maintain its quality for up to 3 to 4 days. Reheat gently to avoid drying out the fish, perhaps in a skillet over low heat or briefly in the microwave.

Do I Grill The Fish With The Skin On It?

Yes, we highly recommend leaving the skin on the fish when you grill it. The skin acts as a protective layer, helping the delicate fish fillets stay together and preventing them from falling apart on the grill grates. Once cooked, you can easily remove the skin right before serving if you prefer not to eat it, as it can be quite chewy.

Can I Cook The Mahi Mahi On The Stove Instead Of The Grill?

Absolutely! If you don’t have a grill or prefer indoor cooking, you can easily cook Mahi Mahi on the stovetop. Simply heat a large skillet over medium-high heat, ensuring it’s well-oiled to prevent sticking. Cook the fillets for about 4 minutes on each side, or until they are firm and flake easily with a fork. A cast-iron skillet works exceptionally well for achieving a beautiful sear.

Where Can I Get Mahi Mahi Fish?

Mahi Mahi is a popular fish, and you can usually find it at your local seafood market, where you’ll often find the freshest selections. If there isn’t a dedicated seafood market near you, check the seafood counter at your larger grocery store. Most well-stocked supermarkets carry both fresh and frozen Mahi Mahi fillets. If Mahi Mahi is unavailable, halibut is an excellent substitute for this recipe, offering a similar firm texture and mild flavor.

How Do I Know When Mahi Mahi Is Cooked Through?

The best way to tell if your Mahi Mahi is perfectly cooked is by using a meat thermometer. The internal temperature should reach 145°F (63°C). Visually, the fish should become opaque throughout and flake easily when gently probed with a fork. Avoid overcooking, as this can make the fish dry and tough.

Can I Marinate Mahi Mahi Before Grilling?

While this recipe uses a dry rub, Mahi Mahi also takes well to marinades. If you choose to marinate, opt for a citrus-based or herb-infused marinade for no longer than 30 minutes, as the acidity can start to “cook” the fish if left too long. For this recipe, the dry rub provides ample flavor without the need for marinating.

What Are The Best Side Dishes For Grilled Mahi Mahi?

Grilled Mahi Mahi is incredibly versatile! Beyond mashed potatoes and roasted vegetables, consider a fresh mango salsa for a tropical touch, a light quinoa salad, grilled asparagus, corn on the cob, or a simple green salad with a vinaigrette. Lemon rice or couscous are also excellent complements, soaking up all the delicious juices.

Tips for Grilling Fish Without Sticking

Preventing fish from sticking is key to successful grilling. Always ensure your grill grates are clean and hot before placing the fish. Oil the grates thoroughly just before adding the fillets. Also, avoid moving the fish too soon; let it develop a nice crust, usually 3-5 minutes per side, before attempting to flip it. A sturdy, thin metal spatula is your best friend for flipping fish.

Grilled Mahi Mahi

Author: Rebecca Hubbell

Course: Dinner, Main Course

Cuisine: American

Prep Time: 5 minutes

Cook Time: 10 minutes

Total Time: 15 minutes

Servings: 2 people

Grilled Mahi Mahi is covered in a smoky homemade dry seasoning rub and then grilled to firm, flaky perfection for a flavorful easy dinner option! Ready to eat in just 15 minutes!

Ingredients

  • 2 (6 oz.) Mahi Mahi fillets
  • 1 tablespoon olive oil
  • ½ teaspoon kosher salt
  • ¼ teaspoon garlic powder
  • ¼ teaspoon onion powder
  • ¼ teaspoon smoked paprika
  • ¼ teaspoon black pepper
  • 1 tablespoon unsalted butter melted
  • Fresh chopped parsley for garnish optional

Instructions

  1. Place the Mahi Mahi fillets on a sheet tray and brush all sides with the olive oil, set aside.

Ingredients: 2 (6 oz.) Mahi Mahi fillets, 1 tablespoon olive oil

  2. In a small bowl, stir together the salt, garlic powder, onion powder, paprika, and black pepper. Season the fish on the top and sides with the seasoning, use it all! Rub the seasoning on the fish.

Ingredients: ½ teaspoon kosher salt, ¼ teaspoon garlic powder, ¼ teaspoon onion powder, ¼ teaspoon smoked paprika, ¼ teaspoon black pepper

  3. Prepare your grill and oil the grates over medium-high heat. Once hot, place the Mahi Mahi flesh side down onto the grill. Grill for 3 to 5 minutes per side until it reaches your desired doneness. Try to flip it only once or as little as possible to not break up the fish. Well done is an internal temperature of 165°F.

  4. Immediately brush the tops of the fish with the melted butter and serve with a garnish of optional parsley and lemon wedges.

    Ingredients: 1 tablespoon unsalted butter

Notes

  • I suggest grilling the Mahi Mahi with the skin on. This will help keep the fish from falling apart on the grill. You can serve it with the skin on, although most people do not like to eat the skin of mahi-mahi because it can be chewy. You can also remove the skin right before serving. This is why I say no need to season the bottom of the fish skin since it will not be eaten anyway.
  • It seems like a lot of seasoning to use, but it’s not; use it all, so flavorful!
  • I suggest grilling a lemon to go alongside the Mahi Mahi. The smokey lemon juice adds the perfect touch on top. To do this, slice a lemon in half, brush with olive oil and sear it until dark golden brown directly on the grates while you cook the fish.
  • You can eat Mahi Mahi medium-rare and above, however, I like it more well done and pull it at 160°F. It will continue to cook after it has been taken off the grill. Mahi Mahi has a firm and flaky texture, perfect for the meat lover in your life!
