  • cups all-purpose flour
  • 1 cup granulated sugar
  • 6 tablespoons unsweetened baking cocoa not Dutch
  • 1 teaspoon baking soda
  • ½ teaspoon kosher salt
  • 1 cup cold water
  • ½ cup vegetable or canola oil
  • 1 tablespoon white vinegar
  • 1 teaspoon vanilla extract
  • 4 ounces bittersweet chocolate chopped
  • 4 tablespoons warm water

Instructions

  • Preheat your oven to 350°F (175°C). Ensure a rack is in the center of the oven for even baking.
  • In a nonstick 8-inch round or square cake pan, combine the dry ingredients: whisk together the all-purpose flour, granulated sugar, unsweetened baking cocoa (ensure it’s not Dutch-processed for best results with baking soda), baking soda, and kosher salt. Use a whisk to thoroughly mix these ingredients directly in the pan until well combined. Then, create three distinct wells in the dry mixture – one large well and two smaller ones.
  • Into the largest well, pour the cold water. Into one smaller well, add the vegetable or canola oil. Into the other smaller well, add the white vinegar.
