Essential Ingredient Insights for Buffalo Chicken Mac and Cheese
Crafting this easy and delicious Buffalo Chicken Mac and Cheese requires only 10 minutes of active prep, bringing together a symphony of flavors and textures. Let’s delve into the key ingredients and how to best utilize them:
- Pasta: The foundation of any great mac and cheese. For this recipe, I highly recommend using cavatappi pasta due to its corkscrew shape, which wonderfully traps the creamy sauce and shredded chicken. However, feel free to choose your favorite pasta shape. Elbow macaroni, shells, or rotini also work beautifully. The crucial step is to cook your pasta until it’s just al dente – slightly firm to the bite. It will continue to cook slightly in the oven, ensuring a perfect texture.
- Shredded Chicken: This is where convenience meets flavor. For ultimate ease, a store-bought rotisserie chicken is your best friend. It’s already cooked and seasoned, requiring only a quick shredding. However, be aware that reheating rotisserie chicken in leftovers can sometimes lead to a drier texture. If you prefer to cook your own, boneless, skinless chicken breasts are ideal. My go-to method for perfectly tender, shreddable chicken is simmering them in a crockpot with a can of chicken broth for 3 to 4 hours on high. Once cooked, simply transfer the chicken to a stand mixer and use the paddle attachment to effortlessly shred it in seconds. This yields consistently moist and flavorful chicken, perfect for this dish.
- Cheese Blend: The heart of any mac and cheese! This recipe calls for a delightful combination of shredded cheddar cheese and shredded Monterey Jack cheese. Cheddar provides that classic sharp, robust flavor and vibrant color, while Monterey Jack melts beautifully, adding a creamy, mild, and slightly tangy note that complements the buffalo spice without overpowering it. Always shred your own cheese from blocks if possible; pre-shredded varieties often contain anti-caking agents that can hinder a truly smooth melt.
- Buffalo Sauce and Ranch Dressing: These are the stars that bring the “buffalo chicken” flair. Your choice of buffalo sauce matters here; I typically use Frank’s RedHot Buffalo Wing Sauce for its balanced heat and classic flavor. The ranch dressing adds a creamy, cooling contrast, mellowing the spice and enhancing the overall depth of flavor.
- Roux Base: A classic béchamel forms the creamy base. You’ll need salted butter and all-purpose flour to create a roux, which is then gradually whisked with whole milk to create a thick, velvety sauce that binds everything together.
- Seasonings: Salt, ground black pepper, garlic powder, and onion powder are essential for rounding out the flavor profile, adding aromatic depth and ensuring every bite is perfectly seasoned.
- Topping: For that irresistible golden-brown crust, panko breadcrumbs are mixed with melted butter and sprinkled over the top. Panko offers a superior crispness compared to regular breadcrumbs. For a richer, more buttery crunch, crushed Ritz crackers are an excellent alternative and a popular choice for many mac and cheese enthusiasts.
This thoughtful combination of ingredients ensures a deeply flavorful, wonderfully textured, and utterly craveable Buffalo Chicken Mac and Cheese every time!

Step-by-Step Guide: How To Make Buffalo Chicken Mac and Cheese
Creating this delectable Buffalo Chicken Mac and Cheese is a straightforward process. Follow these steps for a perfect dish:
- Prepare the Pasta: Begin by cooking your chosen pasta (cavatappi is recommended) according to package directions until it reaches an al dente texture. Drain thoroughly and set aside in the pot. Simultaneously, preheat your oven to 375°F (190°C) and grease a 9×13 inch baking dish, preparing it for the assembly phase.
- Create the Roux: In a medium saucepan, melt 3 tablespoons of salted butter over medium heat. Once the butter is fully melted, whisk in the all-purpose flour, stirring constantly until a smooth paste forms. Continue to cook this mixture for about 30 seconds, allowing it to lightly bubble and cook off the raw flour taste.
- Form the Cheese Sauce Base: Gradually pour the whole milk into the butter-flour mixture (the roux) while continuously whisking. This slow addition and constant whisking are key to preventing lumps and creating a smooth sauce. Continue to whisk as the mixture heats and thickens, turning a light yellow color and forming a velvety roux in approximately 5 minutes.
- Melt in the Cheeses: Reduce the heat slightly, then stir in the shredded cheddar cheese and shredded Monterey Jack cheese until both are completely melted and integrated into the sauce, creating a rich, creamy consistency.
- Infuse with Flavor: Now, whisk in the buffalo sauce, ranch dressing, salt, ground black pepper, garlic powder, and onion powder into the cheese mixture. Stir well until all the seasonings and sauces are thoroughly combined, ensuring the buffalo flavor is evenly distributed throughout the cheese sauce.
- Combine Pasta and Chicken: Add the cooked and drained al dente pasta along with the shredded chicken to the prepared cheese sauce. Gently fold and mix everything until the pasta and chicken are thoroughly coated in the irresistible buffalo cheese sauce.
- Assemble in Baking Dish: Pour the entire pasta and chicken mixture into your greased 9×13 inch baking dish. Spread it out evenly to create a uniform layer.
- Prepare and Add Topping: In a small separate bowl, melt the remaining 2 tablespoons of salted butter. Add the panko breadcrumbs to the melted butter and mix until the breadcrumbs are lightly moistened. Sprinkle this buttery panko mixture evenly over the top of the Buffalo Chicken Mac and Cheese in the baking dish.
- Bake to Golden Perfection: Place the baking dish in your preheated oven and bake for 25 to 30 minutes, or until the topping is beautifully golden brown and the cheese sauce is hot and bubbly. Serve immediately and enjoy!

Frequently Asked Questions
How To Store Leftovers and Reheat Properly?
To keep any leftover Buffalo Chicken Mac and Cheese fresh and delicious, transfer it to an airtight container and store it in the refrigerator. It will remain good for 3 to 4 days. When reheating, it’s best to do so gently to prevent the pasta from becoming mushy and the chicken from drying out. For individual servings, a microwave works well; add a splash of milk or broth before heating to restore creaminess. For larger portions, cover the dish with foil and reheat in the oven at a lower temperature (around 300°F/150°C) until warmed through, removing the foil for the last few minutes if you want to re-crisp the topping.
How Can I Make This Less Spicy?
If you prefer a milder version of this dish, there are several easy adjustments you can make. The simplest way is to reduce the amount of buffalo sauce to 1/3 cup and increase the ranch dressing to 1/2 cup, which provides more cooling creaminess. You could also opt for a milder brand of buffalo sauce or even substitute some of the buffalo sauce with a basic hot sauce for flavor without as much heat. For those who want very little spice, consider adding a dollop of sour cream or Greek yogurt to individual servings, or stir in a touch of extra milk or cream to the cheese sauce.
Can I Use Other Kinds Of Cheese In This Recipe?
Absolutely! While the combination of Monterey Jack and cheddar cheese is fantastic for its balanced flavor and superior melt, this recipe is quite flexible. Feel free to experiment with your favorite cheese combinations to suit your palate. Great alternatives include Colby Jack for a mild, buttery flavor, sharp white cheddar for a more pronounced cheesy tang, smoked gouda for a deeper, smoky note, or even a touch of cream cheese to enhance creaminess. Just ensure your chosen cheeses melt well to create that luscious sauce.

Tips for Achieving the Perfect Buffalo Chicken Mac and Cheese
To ensure your Buffalo Chicken Mac and Cheese turns out perfectly every time, consider these helpful tips:
- Al Dente Pasta is Key: Don’t overcook your pasta! Since it will bake further in the oven, cooking it to al dente (slightly firm) ensures it retains its structure and doesn’t become mushy.
- Freshly Shredded Cheese: While pre-shredded cheese is convenient, it often contains anti-caking agents that can make your cheese sauce grainy. Shredding cheese from a block ensures a smoother, creamier, and richer sauce.
- Whisk, Whisk, Whisk: When making the roux and adding the milk, consistent whisking is crucial. This prevents lumps and guarantees a velvety smooth cheese sauce.
- Adjust Spice to Taste: Taste your cheese sauce after adding the buffalo sauce and ranch. You can always add a little more buffalo sauce for extra heat or a bit more ranch (or even a splash of milk) to temper the spice.
- Don’t Skip the Topping: The buttery panko breadcrumb topping adds an essential crunch and textural contrast to the creamy mac and cheese. It elevates the dish from good to exceptional.
- Even Baking: Spread the pasta mixture evenly in the baking dish to ensure it cooks and heats through consistently.

Buffalo Chicken Mac and Cheese
Ingredients
- 1 pound pasta I prefer cavatappi
- 2 cups shredded chicken homecooked or rotisserie
- 5 tablespoons salted butter divided
- 3 tablespoons all-purpose flour
- 2 cups whole milk
- 1 cup shredded cheddar cheese
- 1 cup shredded monterey jack cheese
- ½ cup buffalo sauce
- ⅓ cup ranch dressing
- ½ teaspoon salt
- ½ teaspoon ground black pepper
- ½ teaspoon garlic powder
- ½ teaspoon onion powder
- ¾ cup panko breadcrumbs
Instructions
-
Preheat oven to 375°F and grease a 9×13 pan, set aside.
-
Cook the pasta to al dente according to package directions. Place cooked pasta back in the pot when done.
-
While pasta is cooking, melt 3 tablespoons of butter in a medium saucepan over medium heat. Once butter is melted, whisk in the flour until fully combined. Allow the mixture to lightly bubble for 30 seconds.
-
Slowly pour the milk into the butter and flour mixture while constantly whisking. Whisk until the mixture has turned light yellow and has slightly thickened into a roux, about 5 minutes.
-
Stir in cheeses until fully melted. Whisk the spices, buffalo sauce, and ranch to the cheese mixture until combined.
-
Add the cheese mixture and shredded chicken to the pasta, and mix until evenly coated.
-
Pour the coated pasta into the prepared baking sheet and spread evenly.
-
In a separate small bowl, melt the remaining 2 tablespoons of butter. Mix together the melted butter and panko breadcrumbs. Sprinkle panko over top of the pasta.
-
Bake for 25 to 30 minutes, or until the top is golden brown.
Notes
- I used rotisserie chicken, but you can also cook your own chicken beforehand. I used about 2 cups.
- If you use rotisserie chicken, it is better to eat it immediately. Reheating will cause the rotisserie chicken to dry out.
- I used cavatappi pasta, but you can use your favorite shaped pasta.
- I find that Monterey Jack and cheddar are a good combination of cheeses that pair with the buffalo flavor but feel free to experiment with your favorite cheeses.
- For less spice, use ⅓ cup buffalo sauce and ½ cup ranch. I use Frank’s RedHot, but any buffalo sauce will work.
- You can swap the panko topping for crushed Ritz crackers, or top with additional cheese.
