  • ¼ cup light brown sugar 57g, packed
  • 2 tablespoons salted butter
  • ¼ teaspoon fine sea salt
  • scant teaspoon espresso powder
  • 1 ounce bittersweet chocolate chopped
  • cup Dutch process cocoa powder 67g, sifted
  • ½ teaspoon vanilla extract

Instructions

  • In a small saucepan, combine 1 cup heavy cream, ⅓ cup granulated sugar, ¼ cup light brown sugar, 2 tablespoons salted butter, ¼ teaspoon fine sea salt, and ⅛ scant teaspoon espresso powder and bring to a simmer over medium-low heat.
