These Molten Lava Cookies are a Crumbl copycat recipe loaded with chocolate flavor and a gooey hot fudge center – pair it with vanilla ice cream for the ultimate dessert experience!

Ingredients

  • cups all-purpose flour 232g
  • ½ cup unsweetened cocoa powder 50g
  • 1 (3.4oz) box instant chocolate fudge pudding mix 110g, unprepared
  • 2 tablespoons powdered milk 10g
  • ½ teaspoon salt
  • ¼ teaspoon baking soda
  • 1 cup granulated sugar 220g
  • ½ cup salted butter softened, 113g
  • 1 large egg room temperature
  • 1 additional large egg yolk room temperature
  • 2 ounces whole milk room temperature
  • teaspoons pure vanilla extract
  • ½ cup hot fudge sauce
  • powdered sugar for dusting

Instructions

Cookies

  1. Preheat the oven to 350°F (175°C) and line a large baking sheet with parchment paper. Set aside. If you only have a 9×13-inch baking sheet, you’ll want to use two baking sheets for two batches to prevent overcrowding and ensure even baking.
  2. In a medium bowl, whisk together 1¾ cups all-purpose flour, ½ cup unsweetened cocoa powder, 1 (3.4oz) box instant chocolate fudge pudding mix, 2 tablespoons powdered milk, ½ teaspoon salt, and ¼ teaspoon baking soda. Ensure ingredients are well combined. Set aside.
  3. In a large bowl of a stand mixer fitted with a paddle attachment (or using an electric hand mixer), cream together 1 cup granulated sugar and ½ cup softened salted butter for about 1 minute until light and fluffy.
  4. Add in 1 large egg and beat until fully combined. Then, beat in the 1 additional large egg yolk, 2 ounces whole milk, and 1½ teaspoons pure vanilla extract. Mix just until all wet ingredients are combined, scraping down the bowl as needed.
  5. Gradually add half of the dry ingredients to the wet mixture, mixing on low speed until just incorporated. Then, add the remaining dry ingredients and continue mixing until the dough is thoroughly combined, being careful not to overmix.
  6. Scoop the dough with a #24 cookie scoop into 16 equal 2-ounce portions. Gently flatten each portion into a disc and shape into a shallow bowl in your hand. Place a heaping teaspoon of the ½ cup hot fudge sauce (about 0.2 ounces) in the well. For larger cookies, use 4-ounce portions of dough with a heaping tablespoon of hot fudge. Do not heat the hot fudge beforehand.
  7. Carefully fold and work the cookie dough up and around the sides and top of the hot fudge sauce, fully encasing it. Pat and pinch the dough firmly to seal, then roll gently between your palms to form a smooth ball. This step is crucial for preventing leaks.
  8. Place the sealed cookie dough balls onto the parchment-lined baking sheet, with the sealed side down. Ensure at least 2 inches of space between regular cookies, or 4 inches for large cookies, to allow for proper spreading.
  9. Bake for 8 to 10 minutes for regular-sized cookies or 10 to 12 minutes for large cookies, until the edges are just set and the top has a matte appearance. The cookies will still look slightly underdone in the center; this is normal as they will continue to set as they cool, retaining their molten core.
  10. Allow the cookies to cool on the baking pan for at least 15 minutes. This is important for them to set properly, as they are very soft directly out of the oven. Then, carefully transfer them to a wire rack using a spatula to cool completely.
  11. Dust generously with powdered sugar while the cookies are still warm for a beautiful presentation and added touch of sweetness.

  • For the best molten center, use a thick hot fudge sauce such as Smucker’s or Mrs. Richardson’s. Ensure it is unheated before adding it to the cookie dough.
  • If chocolate fudge pudding mix is unavailable, regular instant chocolate pudding mix can be used as a substitute. Absolutely do NOT use cook-and-serve pudding or pre-made pudding; only instant pudding mix is suitable for this recipe.
