Essential Ingredients for Perfect Blueberry Cheesecake Bars
Crafting these delectable blueberry cheesecake bars requires just a few key components, each playing a crucial role in the overall flavor and texture. Here’s a breakdown of what you’ll need:
- For the Graham Cracker Crust: This classic foundation is simple yet essential. You’ll need fine graham cracker crumbs, melted butter, and a touch of granulated sugar. The butter binds the crumbs, creating a sturdy, flavorful base that complements the creamy filling.
- For the Creamy Cheesecake Filling: The heart of these bars is a rich and tangy cheesecake layer. This is made with softened cream cheese, granulated sugar for sweetness, an egg to provide structure and richness, and a hint of vanilla extract for warmth and aroma. Using whipped cream cheese ensures an extra smooth texture.
- For the Luscious Blueberry Filling: This vibrant layer brings the “blueberry” to the cheesecake bars. Fresh blueberries are simmered with light brown sugar, a medley of warm spices like nutmeg and cinnamon, and a splash of vanilla. A small amount of cornstarch is added to thicken the sauce to a perfect, spoonable consistency, preventing it from making the bars soggy. Lemon juice brightens the flavor of the blueberries.
- For the Spiced Oatmeal Crumble Topping: The final touch is a crunchy, flavorful crumble. This topping combines quick-cooking oats, both granulated and light brown sugar for depth, a pinch of salt to balance the sweetness, aromatic cinnamon, and cold, diced butter. When baked, it creates an irresistible golden-brown texture.
How to Make Irresistible Blueberry Cheesecake Bars: A Step-by-Step Guide
Creating these layered blueberry cheesecake bars is a straightforward process. Follow these detailed steps to ensure a perfect dessert every time.
1. Preparing the Graham Cracker Crust
The base of these incredible bars is a classic graham cracker crust. Achieving the right consistency for your crumbs is key. You can use a food processor or blender to finely crush graham crackers into a uniform crumb. Alternatively, for a more hands-on approach, place graham crackers in a large Ziploc bag and crush them with a rolling pin. If you’re short on time, pre-made graham cracker crumbs are readily available in the baking aisle.
Once you have your crumbs, combine them in a medium mixing bowl with granulated sugar and melted butter. Mix thoroughly until all the crumbs are evenly moistened and resemble wet sand. This ensures a cohesive crust.
Next, transfer this mixture to a baking pan (preferably 9×9-inch) lined with parchment paper. Press the mixture firmly and evenly into the bottom of the pan to form a compact crust. Bake this crust in a preheated oven at 350°F (175°C) for 8 minutes. This initial bake sets the crust and prevents it from becoming soggy once the wet fillings are added.
Expert Tip: Lining your baking pan with parchment paper is a game-changer! It allows you to easily lift the entire batch of bars out of the pan once chilled, making slicing and serving much neater and simpler. If parchment paper isn’t available, generously spray your baking dish with cooking spray. You can then serve the bars directly from the pan.

2. Crafting the Creamy Cheesecake Filling
While your crust is baking, prepare the luxurious cheesecake filling. In a large mixing bowl, combine the softened cream cheese, granulated sugar, one large egg, and vanilla extract. Using an electric mixer, beat these ingredients together on medium speed for about 2 minutes, or until the mixture is completely smooth and wonderfully creamy. Avoid overmixing, as this can incorporate too much air and lead to cracks in your cheesecake. Set this filling aside.

3. Preparing the Flavorful Blueberry Topping
The star of these bars is undoubtedly the gooey, spiced blueberry sauce. Begin by adding fresh blueberries and lemon juice to a small saucepan. Cook this mixture over medium-high heat for 5 to 7 minutes, stirring occasionally, until the blueberries begin to burst and release their juices. The lemon juice adds a bright, zesty counterpoint to the sweetness of the berries.
In a separate small bowl, whisk together the light brown sugar, nutmeg, cinnamon, and cornstarch. This dry mixture will help thicken your blueberry sauce. Stir it into the simmering blueberries and continue to cook for an additional 2 minutes, stirring constantly, until the mixture has significantly thickened and resembles a rich pie filling. Once it reaches this consistency, remove the saucepan from the heat and allow it to cool slightly.

4. Making the Delicious Oatmeal Crumble Topping
The final layer adds a delightful crunch and extra flavor. To make the oatmeal crumble, combine all the dry ingredients – instant oatmeal, granulated sugar, light brown sugar, kosher salt, and ground cinnamon – in a large bowl. Add the cold, finely diced unsalted butter. Using a pastry cutter, your fingertips, or a fork, work the butter into the dry ingredients until the mixture forms a coarse, crumbly texture. Ensure the butter is well distributed but still visible in small pieces; this is what creates that lovely crispness when baked.

5. Assembling and Baking Your Blueberry Cheesecake Bars
Now it’s time to bring all the delicious components together! Once the graham cracker crust has finished its initial bake, carefully spread the smooth cheesecake mixture evenly over the warm crust in the pan. Next, gently spoon the blueberry filling over the cheesecake layer, spreading it out to cover the entire surface. Finally, sprinkle the oatmeal crumble topping generously over the blueberry layer, creating an enticing, textured top.
Place the assembled bars back into the oven and bake for approximately 50 to 70 minutes, or until the top of the oatmeal crumble is a beautiful light golden brown and the cheesecake filling appears mostly set, with only a slight jiggle in the center. The baking time can vary slightly depending on your oven, so keep an eye on it.
Once baked, remove the pan from the oven and allow the bars to cool completely to room temperature on a wire rack. This is a crucial step! After cooling to room temperature, transfer the pan to the refrigerator and chill for at least 4 hours, or preferably overnight. Chilling is essential for the bars to fully set, making them much easier to slice into neat, perfect squares for serving.

Frequently Asked Questions About Blueberry Cheesecake Bars
Can I make blueberry cheesecake bars with a shortbread crust?
Absolutely! If you prefer the delicate, buttery flavor of a shortbread crust over graham cracker, it’s an excellent substitute. Here’s a simple recipe you can use:
- 2 cups shortbread cookie crumbs
- 2 tablespoons granulated sugar
- 4 tablespoons salted butter, melted
To prepare, combine the shortbread cookie crumbs and sugar in a medium bowl, then create a small well in the center. Pour the melted butter into the well and mix until evenly combined. Transfer the crust mixture to your prepared baking pan and gently press it into the bottom. Bake for 8 minutes, just as you would with the graham cracker crust, then proceed with the rest of the recipe.
How long can Blueberry Cream Cheese Bars be left at room temperature?
Due to the cream cheese filling, these bars should not be left at room temperature for an extended period. For food safety and optimal freshness, they should be refrigerated after no more than 2 hours. If you’re serving them at a picnic or gathering, keep them chilled until serving and return any leftovers to the refrigerator promptly.
How long are they good for in the refrigerator?
When stored properly in an airtight container in the refrigerator, these blueberry cheesecake bars can be enjoyed for 3 to 4 days. The flavors tend to meld even more beautifully after a day or two, making them a fantastic make-ahead dessert.
Can they be frozen?
Yes, this recipe freezes wonderfully, allowing you to enjoy a slice of summer goodness anytime! Once the bars are completely cooled to room temperature and then thoroughly chilled in the refrigerator, place them in the freezer, uncovered, for a few hours until they are firm. This prevents them from sticking together.
Once firm, you can wrap individual slices or the entire batch tightly in aluminum foil, then place them in a heavy-duty freezer bag or an airtight container. They can be stored in the freezer for up to 1-2 months. When you’re ready to indulge, unwrap the bars completely while they are still frozen to prevent the cheesecake from sticking to the foil as it thaws. Thaw them at room temperature for a few hours before serving. You have the flexibility to freeze them either sliced or whole, depending on your serving preference.

Instructions
-
Preheat the oven to 350°F and line a 9×9-inch baking pan with parchment paper and set aside.
-
Combine graham cracker crumbs and sugar in a medium bowl and make a small well. Pour the melted butter in the well and mix until evenly combined.

Transfer the crust mixture to the prepared baking pan and gently press the mixture evenly into the bottom of the pan. Bake for 8 minutes.
-
While the crust is baking, beat together the cheesecake ingredients in a medium bowl until smooth and creamy and set aside.
-
Add the blueberries and lemon juice to a medium saucepan and cook over medium-high heat for 5 to 7 minutes until the blueberries are bursting and juice has started to form.
-
In a separate bowl, combine the brown sugar, cinnamon, nutmeg, and cornstarch. Then stir it into the blueberry mixture and cook for an additional 2 minutes, stirring constantly. Once the mixture has thickened and resembles pie filling, remove from heat.
-
To make the oatmeal crumble, combine all ingredients in a large bowl and use a pastry cutter or your fingers to mix the ingredients together, squishing the cubes of butter and creating a coarse crumble.

Notes
- Lining your baking pan with parchment paper makes it really easy to remove the bars from the pan for slicing after they’ve chilled. If you don’t have parchment paper, you can spray the pan with cooking spray and serve them right from the baking dish.
- After 2 hours at room temperature, the bars should be put back in the refrigerator.
- Shelf Life: Enjoy chilled leftovers for 3 to 4 days after making!
- To Freeze: This recipe freezes great! Once the bars are completely cooled, place them in the freezer, uncovered, for a few hours. When they’re firm, cover with aluminum foil and place in a heavy-duty freezer bag.
When you’re ready to eat them, unwrap them completely while still frozen, otherwise, the cheesecake will stick to the foil. Thaw at room temperature. You can choose to freeze them sliced or whole.
