A beautifully decorated Chocolate Guinness Cake with layers of dark chocolate cake, rich ganache, and creamy Irish Cream frosting, ready for slicing.

The dream of creating this ultimate Chocolate Guinness Cake has been brewing for years. It’s a sophisticated evolution of my beloved sinful chocolate cake recipe, where the traditional coffee is thoughtfully replaced with a smooth, dark stout. The result is a cake that transcends expectations – achieving a depth of flavor and an unparalleled tenderness that makes every bite truly remarkable. The stout doesn’t just add moisture; it introduces subtle malty, roasted notes that enhance the chocolate, creating a complex and incredibly satisfying profile.

But the indulgence doesn’t stop there. Each layer of this exquisite cake is generously coated in a creamy Irish Cream frosting. This signature frosting elevates the cake, adding a sweet, rich, and slightly boozy counterpoint that perfectly complements the deep chocolate and stout flavors. Its smooth texture and irresistible taste are what truly push this dessert to gourmet heights.

And let’s not overlook the luxurious chocolate ganache filling, nestled sumptuously between the cake layers. This rich, glossy ganache provides an additional layer of intense chocolate flavor and a delightful textural contrast. It’s this combination of robust chocolate cake, decadent ganache, and dreamy Irish cream frosting that makes this cake an over-the-top, truly indulgent creation – a dessert meant to be savored.

Crafting Your Masterpiece: How To Make This Decadent Cake

Like any impressive layer cake, this recipe requires a bit of dedicated time and patience, but rest assured, the exquisite results are unequivocally worth every moment. The process involves baking the rich chocolate stout cake, preparing a silky chocolate ganache, and then whipping up an incredible Irish cream frosting, culminating in an assembly that is as rewarding as it is delicious.

To ensure success, read through the entire recipe before you begin. Gather all your ingredients and bring perishable items like eggs and buttermilk to room temperature, as this helps them incorporate better into the batter, leading to a smoother, more uniform cake texture. Precision in measuring ingredients, especially the dry ones, is also key to achieving the perfect balance and consistency in your cake. Don’t be intimidated by the number of steps; each component is straightforward, and the final assembly is where the magic truly comes together.

  1. Begin by preheating your oven to 350 degrees F (175°C). Prepare two 9-inch (or 8-inch for a taller cake) round cake pans by greasing them thoroughly, then lining the bottoms with parchment paper circles, and finally, giving them another light spray with cooking spray. Set them aside.
  2. In a large mixing bowl or the bowl of a stand mixer fitted with a whisk attachment, combine all the dry ingredients: granulated sugar, all-purpose flour, Dutch cocoa powder, baking soda, baking powder, and kosher salt. Whisk them together until they are fully combined and there are no lumps. This step ensures even distribution of the leavening agents.
  3. Next, add the wet ingredients directly into the dry mixture: eggs, buttermilk, Guinness stout, vegetable oil, and vanilla extract. Beat the mixture on medium speed for precisely 2 minutes. The batter will be noticeably thin in consistency, which is perfectly normal for this cake, contributing to its incredible moisture.
  4. Carefully divide the thin batter evenly between your two prepared cake pans. Bake the cakes for approximately 40 to 45 minutes, or until a wooden toothpick inserted into the very center of a cake comes out clean, with no wet batter clinging to it.
  5. Once baked, allow the cakes to cool in their pans for at least 10 minutes. This cooling period helps the cakes firm up, making them easier to handle. After 10 minutes, gently loosen the edges from the sides of the pans using a thin knife or offset spatula, then invert them onto a wire cooling rack to cool completely. For perfectly level cakes, consider using Bake Even Strips during baking. If your cakes dome, simply use a serrated knife to gently level the tops once they are fully cooled before proceeding with assembly.
  6. While the cakes are cooling, prepare the luxurious chocolate ganache. Start by finely chopping the semi-sweet chocolate and placing it in a medium heat-proof bowl. In a small saucepan, heat the heavy cream until it just begins to simmer around the edges (do not bring to a rolling boil). Pour the hot cream directly over the chopped chocolate and let it sit undisturbed for 4 minutes. This allows the chocolate to melt thoroughly. Once the time has elapsed, whisk the mixture gently from the center outwards until it transforms into a smooth, glossy, rich chocolate ganache.
  7. Allow the ganache to cool and thicken slightly to a spreadable consistency before using. Once cooled to the right thickness, spread an even layer of ganache over the top of one of the cooled cake layers, leaving about a 1/4-inch border from the edge. This slight border will help contain the ganache when the top layer is added. Set this layer aside.
  8. Now, prepare the star of the show: the Irish Cream Frosting. In a large bowl or the bowl of a stand mixer fitted with a paddle attachment, cream the softened unsalted butter until it is light and fluffy. Gradually add in the powdered sugar, one cup at a time, alternating with splashes of Irish Cream liqueur. Begin and end with powdered sugar. Beat on medium-high speed until the frosting is smooth, light, and wonderfully creamy. If the frosting appears too stiff, add a tiny bit more Irish Cream liqueur, one teaspoon at a time, until the desired consistency is achieved.
  9. To assemble, place the ganache-covered cake layer on your serving plate or cake stand. Using a piping bag fitted with a round tip, pipe a dam or a thick line of Irish Cream frosting around the outer edge of the ganache. This creates a barrier to seal in the ganache and prevent it from oozing out when the second cake layer is placed on top. Carefully place the second cake layer on top, aligning it perfectly. Apply a very thin layer of the Irish Cream frosting over the entire cake – this is known as a “crumb coat.” This traps any loose crumbs, ensuring a smooth finish. Refrigerate the cake for 20 minutes (or freeze for 5 minutes) to set the crumb coat.
  10. Once the crumb coat is firm, use the remaining Irish Cream frosting to beautifully finish frosting the entire cake. Spread it evenly over the top and sides, creating a smooth and elegant finish. For an extra touch, decorate with chocolate sprinkles, chocolate shavings, or any other festive sprinkles as desired. Your magnificent Chocolate Guinness Cake is now ready to be admired and devoured!

How To Store This Decadent Chocolate Guinness Cake:

To preserve the freshness and flavor of your Chocolate Guinness Cake, proper storage is essential. The ideal way to store this beautiful creation is in an airtight cake container. This protects the cake from drying out and absorbing ambient odors. If you don’t have a specialized cake container, you can tightly wrap the entire cake (or individual slices) with multiple layers of plastic wrap, followed by a layer of aluminum foil. This double-layer approach provides excellent protection. The wrapped cake can then be stored either at cool room temperature or in the refrigerator.

How Long Does This Chocolate Guinness Cake Last?

When stored correctly, most homemade buttercream-frosted cakes, including this Chocolate Guinness Cake, will remain fresh and delicious for 2 to 3 days if kept at a cool room temperature (below 70°F or 21°C). For extended freshness, storing the cake in the refrigerator is recommended. In the fridge, it will typically last for about 1 week. Always ensure it’s well-wrapped to prevent it from absorbing refrigerator odors or drying out. For best enjoyment, if refrigerated, allow the cake to come to room temperature for at least an hour before serving to ensure the cake and frosting are at their optimal texture and flavor.

Guinness And Irish Cream: The Perfect Pairing!

Much like the beloved Black Magic Chocolate Cake, this Chocolate Guinness Cake is celebrated for its deep, intense richness. The addition of stout is not merely for moisture, but it imbues the cake with a wonderful, complex depth of flavor. Guinness, with its malty, slightly bitter, and roasted notes, acts as a phenomenal amplifier for chocolate, creating a robust and sophisticated profile that coffee simply cannot replicate. It’s a harmonious marriage that transforms a simple chocolate cake into an extraordinary dessert, leaving a lasting impression on your palate.

I am an enthusiastic advocate for ganache and firmly believe it serves as the ultimate filling for this particular cake. Its smooth, intensely chocolatey character provides a luxurious contrast to the tender cake layers and adds another dimension of richness. However, for those seeking a slightly different approach or a more cohesive flavor profile, you could certainly use a portion of the Irish cream frosting as a delightful filling between the layers as well. This versatility allows you to customize the experience to your preference.

And now, let’s take a moment to truly appreciate that sensational Irish Cream buttercream frosting, shall we? This isn’t just any frosting; it’s a testament to simple elegance. It starts with a classic buttercream base, meticulously crafted from just unsalted butter and powdered sugar, creating a light, airy, and perfectly sweet foundation. The game-changer, however, is the innovative swap: instead of traditional milk or cream, we incorporate Irish Cream liqueur. This addition infuses the frosting with a subtle, yet unmistakable, boozy warmth and a creamy, vanilla-tinged richness that is utterly irresistible. Trust me, it’s so incredibly delicious that you’ll be tempted to eat it straight by the spoonful!

A fantastic feature of this Irish cream frosting is its ability to crust up beautifully, which means you can conveniently prepare this spectacular cake a day or two in advance. This makes it an ideal option for entertaining, as it frees up your time on the day of your event. While I highly recommend storing the cake in the fridge to maintain its freshness and integrity, remember to bring it out a couple of hours before you plan to serve it. Allowing the cake to reach room temperature ensures the cake layers are wonderfully soft and moist, and the buttercream frosting is perfectly creamy and flavorful, delivering the best possible eating experience. After all, eating cold cake can feel a bit… well, weird!

If you find yourself pressed for time but still desire a show-stopping dessert with minimal effort and in under two hours, I wholeheartedly recommend trying my quick and easy Irish Cream Chocolate Cake as an excellent alternative. It delivers fantastic flavor and a similar boozy kick without the extensive layering. And for the ultimate indulgence, both this magnificent Chocolate Guinness Cake and its quicker counterpart pair wonderfully with a warm mug of my rich and comforting Irish Cream Hot Chocolate. It’s a match made in dessert heaven, guaranteeing a truly cozy and satisfying experience. Cheers to delicious pairings!
