Ingredients

  • 2 cups coarse sea salt
  • 4 medium sweet potatoes, cleaned and dried
  • 1 garlic bulb
  • 4 rosemary sprigs
  • 4 thyme sprigs
  • 2 tablespoons canola oil

Instructions

  1. Preheat oven to 450°F (232°C) and add salt to a large lipped baking dish (a 9×13-inch baking pan works well). Make sure the salt is evenly spread over the surface.
  2. Add the cleaned and dried sweet potatoes to the salt, nestling them into it.
  3. Slice the top of the garlic bulb off and place it cut side up in the pan.
  4. Add fresh herbs (rosemary and thyme) around the potatoes.
  5. Brush the exposed skin of the potatoes all over with canola oil.
  6. Cover with aluminum foil and bake for 1 hour. Remove aluminum foil and the spent herbs, then set the roasted garlic to the side. Brush the potatoes with any remaining oil in the pan and bake for an additional 15 minutes, uncovered, for crispy skin.

Notes

  1. Use coarse sea salt instead of kosher salt for superior flavor and easier removal from the potato skin.
  2. The roasted garlic can be squeezed from its cloves and used as a delicious topping for the potatoes or spread on warm bread rolls.
  3. Canola oil is recommended over olive oil for baking at high temperatures over a long duration, as olive oil can sometimes develop a bitter taste. Vegetable oil is also a suitable alternative.
