  • In a large mixing bowl or the bowl of a stand mixer fitted with a whisk attachment, combine the white cake mix, instant pudding mix, and egg whites. Whisk until just incorporated.
  • Add the vegetable oil and beat at medium speed until the mixture is smooth and well combined, scraping down the sides of the bowl as needed.
  • Gently pour in the room temperature Sprite and mix on low speed until the batter is just smooth. Be careful not to overmix, as this can affect the cake’s texture.
  • Divide the batter evenly into three separate bowls. Leave one bowl plain for your white layer. To the second bowl, add red food coloring and mix until a vibrant, consistent red is achieved. To the third bowl, add blue food coloring and mix until you have a rich, consistent blue. (Gel food coloring works best for intense colors).
