Once all is added, beat in 1 teaspoon vanilla bean paste and ½ teaspoon coffee extract. Increase the speed to high and whip for 1 to 2 minutes until the frosting is light, fluffy, and smooth.

Assembly

  1. Using a small offset spatula or the back of a spoon, evenly frost each cooled cookie. As you spread the frosting, create a slight indent in the very center of the frosting layer; this will serve as a perfect pocket for the ganache.

  2. Carefully spoon about 1½ teaspoons of the thickened chocolate ganache into the indented center of each frosted cookie.

  3. If you are using holiday sprinkles, immediately sprinkle them over the wet ganache before it begins to set. Allow the assembled cookies to rest at room temperature until the ganache has fully set and is firm to the touch. This can take anywhere from 30 minutes to an hour, depending on your kitchen’s temperature.

  • For the cookie dough, regular instant chocolate pudding mix can be used in place of chocolate fudge if preferred or unavailable.
