These Frankenstein Rice Krispie Treats are a chewy, sweet Halloween treat that kids will go crazy for! Takes just 30 minutes to prep!

Ingredients

  • 4 tablespoons unsalted butter
  • 12 ounces mini marshmallows
  • 1 teaspoon green food coloring
  • 1 teaspoon vanilla extract
  • ¼ teaspoon salt
  • 5 cups Rice Krispies cereal

Decorations

  • 1 cup chocolate melting wafers
  • 18 candy eyes
  • Black cookie icing
  • 18 mini marshmallows (for neck bolts)

Instructions

Treats

  1. Lightly spray a 9×9-inch baking pan generously with cooking spray or line it with greased parchment paper so the paper comes up the sides. Set aside. (Using parchment paper significantly reduces the risk of the treats sticking.)
  2. Cut the butter into four tablespoons and add them to a microwave-safe mixing bowl along with the mini marshmallows. Microwave for 90 seconds.
  3. Stir the marshmallow and butter mixture until smooth. Then, add the vanilla extract, green food coloring, and salt. Continue stirring until the mixture is evenly green in color.
  4. Add the Rice Krispies cereal to the bowl. Mix thoroughly, ensuring the cereal is completely coated with the marshmallow mixture.
  5. Use a greased rubber spatula to transfer the Rice Krispie mixture to the prepared baking pan. Gently press the Rice Krispies into the pan, making sure the top layer is as even as possible. (You can spray your hands with nonstick spray or use another piece of greased parchment paper to gently press the mixture down.)
  6. Allow the Rice Krispies to cool and firm up in the pan for 1 to 3 hours.

Assembly

  1. Once the treats have firmed up, either flip them out onto a cutting board or lift the parchment paper out of the pan. Cut the Rice Krispies into even squares. Place a piece of parchment paper to the side; this will be where you set the decorated Rice Krispies after dipping them in chocolate.
  2. Add the chocolate melting wafers to a small microwave-safe bowl. Melt for 1 minute, then stir. Microwave for an additional 30 seconds. Stir again until completely smooth. If needed, microwave for another 15 seconds, stirring after.
  3. Dip the top ½ to ¾ inch of each Rice Krispie square into the melted chocolate to create Frankenstein’s hair. Allow any excess chocolate to drip off before placing the dipped treat on the parchment paper. Let the chocolate-dipped Rice Krispies harden on the wax paper. (For added texture, you can sprinkle chocolate sprinkles onto the chocolate before it hardens.)
  4. To attach the candy eyes, dot the back of each eye with a small amount of black cookie icing. Secure two eyes in the center of each Frankenstein’s face.
  5. Using the black cookie icing, draw a mouth and a line of stitches diagonally across his forehead on each treat.
  6. Finally, place a dot of black icing on one of the flat sides of a mini marshmallow. Press this marshmallow onto the side of Frankenstein’s head to create the illusion of a neck bolt. Repeat on the other side of each treat.
