Ingredients
- 10 Mission Super Soft Flour Tortillas
Chicken
- boneless, skinless chicken breasts
- 14 oz. can diced tomatoes, drained
- 2 tablespoons diced green chilies, drained
- 1 teaspoon ground cumin
- 1 teaspoon chili powder
- 1/2 teaspoon garlic powder
- 1/8 teaspoon turmeric
- 1/4 teaspoon onion powder
- 1/8 teaspoon ground red cayenne pepper
- 1/2 teaspoon ground black pepper
- 2 teaspoons kosher salt
Sauce
- 6 ounces tomato paste
- 1 1/2 teaspoons ground cumin
- 1/4 teaspoon ground red cayenne pepper
- 1/4 teaspoon turmeric
- 1/2 teaspoon kosher salt
- 1/2 teaspoon ground black pepper
Toppings
- 1 red onion, finely diced
- 1/2 cup red wine vinegar
- 1 teaspoon granulated sugar
- 1 teaspoon kosher salt
- 1 pint grape tomatoes, chopped
- 1/2 cup Cotija cheese
- 1/4 cup cilantro, chopped
Instructions
Chicken

Add the chicken, canned tomatoes, green chilies, and chicken spices to a slow cooker and cook on high for 4 hours. Remove the chicken to shred and then add back to the slow cooker and cook for an additional 30 minutes.
Paste

Meanwhile, prepare the paste by mixing together all of the sauce ingredients, cover and set aside until ready to use.
Toppings

Dice the onion and place it in a small bowl with the vinegar, sugar, and salt and place in the refrigerator to pickle.

Prepare the remaining toppings and set aside until needed.
Assembly

Once the chicken has finished cooking, transfer it to a large bowl and mix with the paste until combined.

Warm the Mission Super Soft Flour Tortillas according to package directions. Top warm tortillas with prepared chicken and toppings and enjoy.
