Pastry Cream

  • 1 1/3 cup whole milk
  • 1 Nielsen-Massey Tahitian Vanilla Bean, split lengthwise, paste scraped out
  • 1/2 teaspoon Nielsen-Massey Tahitian Vanilla Extract
  • 4 large egg yolks
  • 1/2 cup granulated sugar
  • 2 tablespoons + 2 teaspoons cornstarch
  • 1 tablespoon unsalted butter

Choux Pastry

  • 8 ounces water
  • 1/2 cup unsalted butter, cubed
  • 2 tablespoons granulated sugar
  • 1/4 teaspoon kosher salt
  • 1 cup + 2 tablespoons all-purpose flour
  • 4 large eggs
  • 1 egg yolk
  • 1 teaspoon water

Chocolate Ganache

  • 1 cup dark chocolate chips
  • 1/2 cup heavy cream
  • 1 teaspoon Nielsen-Massey Pure Chocolate Extract

Instructions

Pastry Cream

  • In a large saucepan, combine the whole milk, Nielsen-Massey Tahitian Vanilla Bean (split lengthwise with paste scraped out), and Nielsen-Massey Tahitian Vanilla Extract. Bring this mixture to a gentle boil over medium heat, whisking occasionally to prevent scorching. As soon as it begins to boil, immediately remove the saucepan from the heat and let it sit for 15 minutes to allow the vanilla flavors to fully infuse into the milk.
  • While the milk is infusing, prepare the egg mixture. In a medium-sized bowl, or using a stand mixer fitted with a whisk attachment, vigorously whisk together the large egg yolks and granulated sugar for about 2 to 3 minutes until pale and slightly thickened. Add the cornstarch and continue to whisk vigorously until all lumps are gone and the mixture is smooth.
  • Carefully remove the vanilla bean pods from the infused milk mixture. You can discard them, or if the bean is still moist and aromatic, rinse and dry it to use again for infusing sugar or extract. To temper the eggs, gradually whisk about 1/4 cup of the warm vanilla milk into the egg mixture. This step is important to slowly raise the temperature of the eggs and prevent them from cooking too quickly. Once the small amount of milk is fully incorporated, whisk in the remaining milk into the egg mixture. Set the saucepan aside briefly.
  • Pour the entire milk and egg mixture back into the large saucepan, passing it through a fine-mesh sieve. This ensures a perfectly smooth cream by catching any small lumps. Cook the mixture over medium heat, whisking constantly and vigorously, until the cream begins to thicken and comes to a boil. Immediately remove from heat and stir in the unsalted butter until it is completely melted and incorporated, resulting in a smooth, glossy cream.
  • Transfer the hot pastry cream into a clean bowl. To prevent a skin from forming on the surface, cover it with plastic wrap, ensuring the plastic wrap gently touches the entire surface of the cream. Chill in the refrigerator for at least 2 hours, or ideally up to 24 hours, to allow it to cool completely and firm up.

Choux Dough

  • Preheat your oven to 400°F (200°C). Line a large baking sheet with parchment paper and set it aside. This will prevent sticking and aid in easy cleanup.
  • In a medium saucepan, combine the water, cubed unsalted butter, granulated sugar, and kosher salt. Place the saucepan over high heat and bring the mixture to a rapid, rolling boil, ensuring the butter has completely melted and is fully incorporated.
  • Once boiling, remove the pan from the heat. Immediately add all of the all-purpose flour at once. Stir vigorously with a sturdy wooden spoon for about 2 minutes. Continue mixing until the dough comes together, pulls away from the sides of the pan, and forms a smooth ball. The dough will have a texture resembling mashed potatoes when it’s ready.
  • Transfer the hot dough to the bowl of a stand mixer fitted with a paddle attachment, or to a large bowl if using a hand mixer. Beat on medium-low speed for a few minutes to release some of the heat from the dough. Continue mixing until the dough is just warm to the touch, not hot. This prevents the eggs from scrambling when added.
  • With the mixer still on medium-low speed, add the large eggs one at a time. It’s crucial to fully mix in each egg before adding the next one. The dough may look curdled or separated at first, but it will come back together. Scrape down the sides of the bowl as needed between each egg addition to ensure everything is thoroughly combined.
  • Once the dough is smooth and glossy, transfer it to a pastry piping bag fitted with a large round piping tip (such as a 1A tip). Pipe the dough onto the parchment-lined baking sheet in even 3-inch strips, leaving approximately 2 inches of space between each strip. To prevent “tails” or uneven edges, use clean kitchen shears to snip the dough cleanly near the piping tip when you reach the desired length for each eclair.
  • In a small bowl, whisk together the egg yolk and the teaspoon of water to create an egg wash. Lightly brush the tops of the piped choux dough with this egg wash. This step will help the pastries achieve a beautiful golden-brown color and a slightly crisp finish during baking.

  • Transfer the baked pastries to a wire cooling rack and allow them to cool completely to room temperature before attempting to fill or glaze them. If you have any remaining dough, repeat the piping and baking steps.

Chocolate Ganache

  • Place the dark chocolate chips in a small, heatproof glass bowl and set aside. Ensure your bowl is completely dry to prevent the chocolate from seizing.
  • Pour the heavy cream into a small saucepan. Heat over medium-low heat until it reaches a light simmer, with small bubbles forming around the edges. Immediately remove the cream from the heat and pour it directly over the chocolate chips in the glass bowl.
  • Add the Nielsen-Massey Pure Chocolate Extract to the chocolate and cream mixture. Allow the mixture to sit undisturbed for 3 to 4 minutes. This allows the hot cream to melt the chocolate evenly. After sitting, gently whisk the mixture from the center outwards until it transforms into a smooth, glossy, and rich chocolate ganache.

Assembly

  • Retrieve the chilled pastry cream from the refrigerator. Using a whisk, stand mixer, or hand mixer, whip the cream until it is smooth, light, and creamy again. Transfer the rewhipped pastry cream to a piping bag fitted with a Bismarck tip for easy and complete filling.
  • Using a small paring knife, make a small slit or two (depending on eclair length) on the underside or at one end of each cooled choux pastry. Insert the Bismarck piping tip into the pastry shell and gently squeeze, filling the eclair with the cream. Slowly withdraw the tip as the pastry fills, ensuring an even distribution of cream throughout.
  • Once filled, take each eclair and gently dip the top surface into the prepared chocolate ganache. Allow any excess ganache to drip off, then place the eclairs on a sheet of parchment paper. Let them sit at room temperature for a short while, or in the refrigerator, until the ganache has completely set and hardened to a glossy finish.
  • Your homemade chocolate eclairs are now ready to be enjoyed immediately! For optimal freshness and texture, any remaining eclairs should be stored in an airtight container in the refrigerator until ready to consume. They are best enjoyed within 1-2 days.
