Ingredients

  • 1 box dark chocolate fudge cake mix
  • 1 (3.9 oz.) package chocolate fudge instant pudding mix
  • 4 large eggs
  • 1 cup sour cream
  • 1 cup mini chocolate chips
  • ¾ cup vegetable oil
  • ½ cup chocolate milk
  • 1 teaspoon vanilla extract
  • ¼ teaspoon salt
  • 1 batch Best Chocolate Buttercream Frosting
  • Chocolate sprinkles (optional)
  • 3 Hershey chocolate bars
  • 24 large heart sprinkles
  • 48 candy eyes
  • 48 Chocolate pocky sticks

Instructions

  1. Preheat the oven to 375°F (190°C) and line a cupcake pan with liners. Set aside.
  2. In a large mixing bowl or a stand mixer with a whisk attachment, combine all cupcake ingredients (dark chocolate fudge cake mix, chocolate fudge instant pudding mix, large eggs, sour cream, vegetable oil, chocolate milk, vanilla extract, salt, and mini chocolate chips) until thoroughly combined. Scrape down the sides of the bowl as needed to ensure everything is incorporated.
  3. Fill each cupcake liner with a scant ¼ cup of batter, aiming for about ¾ full.
  4. Bake the cupcakes for approximately 18 to 20 minutes, or until a toothpick inserted into the center of a cupcake comes out clean.
  5. Allow the cupcakes to cool in the pan for a few minutes before carefully transferring them to a wire rack to cool completely. Ensure they are fully cooled before proceeding with frosting.
  6. While the cupcakes are cooling, prepare the Chocolate Buttercream Frosting according to its recipe instructions.
  7. Once the cupcakes are cool, pipe the prepared frosting generously onto the top of each cupcake.
  8. Pour chocolate sprinkles into a small bowl. Gently invert each frosted cupcake into the sprinkles, dipping it upside down to fully coat the top of the frosting.
  9. For the ears, break the Hershey chocolate bars along the short middle divet. Use a sharp knife to cut each half into quarters, and then cut each quarter into two triangles. Each bar should yield 8 pairs of ears. Carefully insert two chocolate triangles into the top of each cupcake to form the cat’s ears.
  10. Add a heart sprinkle to the center of each cupcake for the nose, and then place two candy eyes above it to complete the cat’s face.
  11. Break the chocolate pocky sticks in half. Stick two halves into each side of the cat’s face (the “cheeks”) to create the charming whiskers.

Notes

  • Regular whole milk can be used if you do not have chocolate milk on hand.
  • Black licorice or chocolate-dipped pretzel sticks can be used instead of pocky for the whiskers.
