  • ½ cup water
  • ¼ cup lemon juice
  • ¼ teaspoon salt
  • 2 large eggs
  • 3 additional large egg yolks
  • ½ cup unsalted butter sliced

Instructions

Crust

  • Preheat the oven to 350°F (175°C).
  • Add the shortbread cookies to a food processor and process until fine crumbs form.

  • While the crust is baking or cooling, clean the food processor and set aside for the filling preparation.
  • Add the cranberries, sugar, water, and salt to a medium saucepan. Bring the mixture to a boil over medium-high heat. Cook for 10 minutes, stirring occasionally, until the berries have burst and softened.
  • Transfer the berry mixture to the food processor (or blender) and pulse for about 1 minute until completely smooth.
  • Pour the smooth mixture through a fine-mesh strainer over the saucepan. Use a spoon or rubber spatula to press the mixture through the strainer until only seeds and skins remain. Remember to scrape the bottom of the strainer to maximize pulp extraction. Discard the strained solids.
