I was thoroughly invested, laughing and crying along with the Gilmore girls, and suddenly, I understood what all my friends had been raving about for years.

Perhaps I was fortunate to arrive at the Gilmore Girls party just in time for the highly anticipated “A Year in the Life” revival, sparing me the decades of waiting some fans endured. Yet, there’s a small part of me that regrets not having Lorelai, Rory, and the entire Stars Hollow gang in my life sooner. And what could be more quintessentially Lorelai than an unexpectedly delightful dessert made from a pantry staple?

These Gilmore Girls Pop Tart Truffles are a delightful, easy-to-make dessert, perfect for any Gilmore Girls fan. Lorelai would surely approve of these simple, sweet treats for Rory’s bake sale or a Stars Hollow celebration!

Ingredients

  • 8 Pop Tarts (any flavor works, but frosted berry or brown sugar cinnamon are classic)
  • 2 (16 ounce) containers Pillsbury white or vanilla frosting
  • 2 tablespoons rainbow sugar sprinkles

Alternate Option:

  • You can use just 1 container of frosting and substitute white candy melts for the other for a harder shell on your truffles.

Instructions

  • Place Pop Tarts in a large resealable bag. Use a rolling pin to crush them into fine crumbs. Transfer the crushed Pop Tarts to a stand mixer bowl fitted with a whisk attachment, or a large mixing bowl if using a hand mixer.
  • Add approximately 3/4 cup of the white or vanilla frosting to the crushed Pop Tarts. Beat in the stand mixer or with a hand mixer until the mixture is thoroughly combined and forms a thick, dough-like consistency.
  • Line a large cookie sheet with parchment paper. Using a 1-tablespoon cookie scoop, portion out evenly sized balls of the mixture. Roll each portion between your palms to form smooth truffles. Place the rolled balls onto the lined baking sheet. Chill them in the refrigerator for at least 15 minutes to firm up.
  • While the truffles are chilling, prepare your coating. If using frosting, microwave the remaining container of frosting in 30-second intervals, stirring well after each, until it reaches a smooth, dippable consistency. If using candy melts, melt them according to package directions, also stirring at 30-second intervals until smooth.
  • Using a fork, dip each chilled truffle into the melted frosting or candy melts, ensuring it’s fully coated. Gently tap off any excess. Use a toothpick or a small paring knife to carefully slide the coated truffles back onto the prepared baking sheet. Immediately sprinkle the dipped truffles with rainbow sugar sprinkles before the coating sets. Repeat this process for all truffles.
  • If you used frosting for the coating, place the truffles back in the refrigerator for at least 30 minutes to set. If you opted for candy melts, allow them to harden at room temperature until firm to the touch. Once set, your Gilmore Girls Pop Tart Truffles are ready to serve and enjoy!
