These Chunky Monkey Cupcakes are inspired by the famous Ben & Jerry’s ice Cream! Chocolate, bananas and walnuts combine for an amazing sweet treat!

Ingredients

Cupcakes:

  • 1 Box Duncan Hines Dark Chocolate Fudge Cake Mix
  • 3.9 oz. Package Jell-O Chocolate Fudge Instant Pudding Mix
  • 4 Eggs
  • 1 cup Sour Cream
  • 3/4 cup Vegetable Oil
  • 1/2 cup Milk
  • 1 tbsp Vanilla Extract
  • 1/4 tsp Sea Salt
  • 1 cup Chopped Walnuts

Frosting:

  • 1 cup (2 sticks) Unsalted Butter, softened
  • 2 cups of Freeze Dried Sliced Bananas
  • 4-5 cups Confectioners’ Sugar
  • 5-7 tbsp Heavy Cream
  • 1 tsp Vanilla Extract

Instructions

For the Cupcakes:

  1. Preheat your oven to 400°F (200°C). Prepare a standard muffin pan by lining it with cupcake wrappers.
  2. In the bowl of a stand mixer, combine the cake mix, instant pudding mix, eggs, sour cream, vegetable oil, milk, vanilla extract, and sea salt. Beat on medium speed until all ingredients are well combined and the batter is smooth. Be careful not to overmix, as this can lead to dense cupcakes.
  3. Gently fold in the chopped walnuts by hand. This ensures they are evenly distributed throughout the batter without being crushed.
  4. Fill each cupcake liner approximately 1/2 to 2/3 full with batter. This allows room for the cupcakes to rise beautifully without overflowing.
  5. Immediately reduce the oven temperature to 375°F (190°C) after placing the cupcakes in. Bake for 15-18 minutes, or until a toothpick inserted into the center of a cupcake comes out clean. Baking at a higher initial temperature then reducing it helps create a lovely domed top.
  6. Once baked, remove the cupcakes from the oven. Let them cool in the muffin pan for a few minutes before transferring them to a wire cooling rack to cool completely. Ensure they are fully cooled before frosting to prevent the buttercream from melting.

For the Banana Buttercream Frosting:

  1. Place the freeze-dried banana slices into a food processor. Blend until you achieve a very fine, powdery dust. This fine powder is key to infusing intense banana flavor without adding excess moisture.
  2. In a clean stand mixer bowl with the paddle attachment, cream the softened unsalted butter on medium speed until it is light and fluffy, about 2-3 minutes.
  3. Add the vanilla extract to the creamed butter and mix until just combined.
  4. Gradually add the banana powder and confectioners’ sugar to the butter mixture, alternating spoonfuls of each. Start on low speed to prevent a sugar cloud, then increase to medium-high and beat until the frosting is smooth, creamy, and wonderfully fluffy.
  5. If the frosting is too thick, add heavy cream one tablespoon at a time, beating after each addition, until you reach your desired piping consistency. The goal is a spreadable, pipeable frosting that holds its shape.
  6. Transfer the banana buttercream frosting to a piping bag fitted with your favorite decorator tip. Pipe generous swirls of frosting onto each cooled cupcake.
  7. For the authentic Chunky Monkey finish, sprinkle each frosted cupcake with additional chopped walnuts or even a few mini chocolate chips if desired.

The Perfect Sweet Indulgence for Any Occasion

Whether you’re hosting a casual get-together, celebrating a special event, or simply craving a sweet escape, these Chunky Monkey Cupcakes are guaranteed to be a hit. The convenience of using a cake mix as a base makes them approachable for bakers of all skill levels, while the homemade banana buttercream elevates them to gourmet status. The combination of moist, rich chocolate cake with the bright, fruity banana frosting and the textural contrast of walnuts is simply irresistible.

One of the best aspects of these cupcakes is their versatility. You can adjust the amount of walnuts to your liking, or even add a sprinkle of mini chocolate chips to the batter for an extra layer of chocolatey goodness. For those who prefer a less intense banana flavor, a hint of banana extract in the frosting can be used instead of relying solely on freeze-dried bananas, though the latter provides an authentic and concentrated taste that truly captures the essence of Chunky Monkey.

Tips for Baking Success:

  • Room Temperature Ingredients: For the frosting, ensure your butter is at room temperature. This allows it to cream properly and incorporate air, resulting in a light and fluffy buttercream.
  • Don’t Overmix: When preparing the cupcake batter, mix only until the ingredients are just combined. Overmixing can develop the gluten in the flour, leading to tough, chewy cupcakes.
  • Cool Completely: Always wait for your cupcakes to cool completely before applying frosting. Warm cupcakes will melt the buttercream, creating a messy (though still tasty!) disaster.
  • Quality Matters: While a cake mix is used for convenience, opting for a good quality dark chocolate fudge cake mix and instant pudding mix can make a noticeable difference in the final flavor and texture of your cupcakes.
  • Fresh Walnuts: Ensure your walnuts are fresh. Old walnuts can have a bitter taste that might detract from the overall flavor of the cupcakes.

These Chunky Monkey Cupcakes are more than just a dessert; they are a delightful homage to a beloved classic, reimagined in a form that’s perfect for sharing. Their vibrant flavors and satisfying textures make them an unforgettable treat that will have everyone reaching for seconds. Enjoy the process of baking these delicious delights, and most importantly, savor every single bite!
