  • 1 yellow onion, diced
  • 1 red bell pepper, seeded and diced
  • 1 green bell pepper, seeded and diced
  • 1 bunch scallions, diced
  • 2 1/2 cups shredded cheddar cheese
  • 7 ounces precooked sausage links, chopped
  • 32 ounces frozen tater tots
  • 6 large eggs
  • 1 1/2 cup whole milk
  • 1/2 teaspoon ground black pepper
  • 1/2 teaspoon garlic powder
  • 1/4 teaspoon salt

Instructions

  1. Preheat oven to 350 degrees F (175°C). Grease a 9×13-inch baking dish with nonstick spray.
  2. In a large nonstick skillet over medium-high heat, cook the chopped bacon for about 3 minutes, stirring occasionally. Add the diced onion to the bacon and continue to cook for another 5 minutes, or until the bacon is fully cooked and the onions are translucent. While the bacon and onions cook, use this time to prep your other ingredients (chopping peppers, scallions, sausage).
  3. Once cooked, transfer the bacon, onions, and any rendered grease to a large mixing bowl. I find using kitchen shears is the easiest way to cut raw bacon into small pieces.
