These Birthday Cake Pudding Cookies are sweet, chewy and loaded up with sprinkles. A hint of vanilla make them the perfect alternative to cake. Or, you know, have both!

Ingredients

  • ½ cup unsalted Butter, room temperature
  • ¼ cup granulated sugar
  • ¾ light brown sugar
  • 1 (3.4 oz) box Instant Vanilla Pudding Powder
  • 2 large eggs
  • 1 additional egg yolk
  • 1 tablespoon vanilla extract
  • 2 cups all-purpose flour
  • 1 teaspoon baking soda
  • ½ teaspoon kosher salt
  • 1 cup rainbow sprinkles

Instructions

  1. Cream butter and sugars together until smooth and fluffy.
  2. Add the instant pudding mix, two large eggs, the additional egg yolk, and vanilla extract. Beat the mixture for approximately one minute on medium speed until well combined.
  3. In a separate medium-sized bowl, whisk together the all-purpose flour, baking soda, and kosher salt until evenly distributed.
  4. Gradually add the dry ingredients to the wet ingredients, about ½ cup at a time, mixing on low speed until just combined. Be careful not to overmix.
