It was an instant connection! The colorful sprinkles and rich chocolate marshamallow frosting called to me, sparking an idea for a festive Easter creation. Inspired by these fantastic finds, I decided to take my favorite Pillsbury products and elevate them into something truly spectacular: these Easy Easter Cupcakes. This recipe isn’t just about baking; it’s about mixing up a moment of joy, creativity, and deliciousness for the spring season.

These delightful Spring Funfetti® Cupcakes are generously topped with the decadent Chocolate Fluffy Frost. Then, each cupcake is playfully dipped into either rich chocolate sprinkles or vibrant green candy shred, adding both texture and a burst of color. The ultimate charming touch comes from our homemade “carrot” strawberries – fresh strawberries dipped in orange candy, giving them the adorable appearance of miniature carrots. This combination creates a treat that is as visually appealing as it is delicious.

Ingredients

  

For the Adorable Carrot Strawberries:

  • 12 oz. bag orange vanilla candy melts
  • 18 fresh strawberries (washed and dried thoroughly)

For the Fluffy Easter Cupcakes:

  • 1 Box Pillsbury Spring Funfetti® Cake Mix
  • 1 cup water
  • 1/2 cup vegetable oil
  • 3 large eggs

For the Delicious Topping & Decoration:

  • 24 ounces Pillsbury Fluffy Frosting in Chocolate Marshmallow (or your favorite spring flavor)
  • 1/2 cup chocolate sprinkles
  • 1/2 cup green candy shred

Instructions

Crafting the Carrot Strawberries:

  • To create your delightful carrot-top strawberries, begin by carefully melting the orange vanilla candy melts. Place them in a microwave-safe bowl and heat on 30-second intervals, stirring thoroughly after each interval, until the candy is completely smooth and melted. Once melted, gently dip each fresh strawberry into the warm candy mixture, ensuring it’s evenly coated. Place the dipped strawberries on a sheet of wax paper to allow the candy coating to set. This will typically take about an hour, or you can speed up the process by refrigerating them for 15-20 minutes.

Baking the Perfect Cupcakes:

  • First, preheat your oven to 350 degrees F (175 degrees C). Prepare your cupcake pan by lining each cup with festive cupcake liners. Set the prepared pan aside, ready for the batter.
  • In a large mixing bowl, combine the Pillsbury Funfetti® Cake Mix with the water, vegetable oil, and large eggs. Beat these ingredients together using an electric mixer (or by hand) until the batter is smooth and well combined, with no lumps remaining. Carefully fill each cupcake liner approximately two-thirds full with the batter. Bake in the preheated oven for 19 to 23 minutes, or until a toothpick inserted into the center of a cupcake comes out clean. Allow the cupcakes to cool in the pan for a few minutes before carefully transferring them to a wire cooling rack to cool completely. Repeat this process with any remaining batter.

Decorating Your Easter Masterpieces:

  • Once the cupcakes have cooled completely, it’s time for the fun part: decorating! Using a piping bag fitted with a large round tip (or simply a knife or spatula), generously pipe the Pillsbury Fluffy Frosting onto each cooled cupcake. To create the charming “nest” effect, pour your chocolate sprinkles into one small, shallow bowl and the green candy shred into another. Take each frosted cupcake, frosting-side down, and gently dip it into one of the toppings (either chocolate sprinkles or green candy shred). Lift the cupcake, allowing any excess to fall away. Finally, place one of your prepared carrot strawberries on top of each decorated cupcake. Repeat this process for all remaining cupcakes, creating a beautiful assortment of Easter treats.

This versatile decorating method can be adapted with any of your favorite Pillsbury Cake and Frosting flavors to suit various occasions or simply to explore new taste combinations!
