This Pumpkin Chocolate Kisses Cake is the ultimate pumpkin and chocolate combo for fall! Five layers of sweet and fluffy pumpkin cake wrapped in a whipped chocolate buttercream frosting!

Ingredients

Cake:



  • 1 box spice cake mix



  • 1 package instant pumpkin spice pudding mix



  • 1 cup pumpkin puree



  • 1 tsp pumpkin pie spice



  • 4 large eggs



  • ½ cup milk



  • 1/3 cup vegetable oil

Frosting:



  • 1 cup unsalted butter room temp



  • 3-4 cups powdered sugar



  • 2/3 cup cocoa powder



  • 1 tbsp vanilla extract



  • ¼ tsp salt



  • ¼ cup heavy cream

Instructions

Cake:

  1. Preheat oven to 350 degrees F (175°C).
  2. Spray 5 6-inch cake pans with cooking spray and set aside. If you don’t have five pans, simply bake the layers in batches.
  3. Combine all cake ingredients (spice cake mix, pumpkin spice pudding mix, pumpkin puree, pumpkin pie spice, eggs, milk, and vegetable oil) in a large bowl or the bowl of a stand mixer. Beat until thoroughly combined and smooth.
  4. Add approximately 1 cup of batter to each prepared pan. Bake for 20-25 minutes, or until a toothpick inserted into the center of the cakes comes out clean. The cakes should also begin to pull away slightly from the edges of the pan.
  5. Allow the cakes to set in their pans for a couple of minutes after baking. Then, gently run a knife along the edge of each pan and invert the cakes onto a cooling rack to finish cooling completely. Once cooled, carefully cut the domed tops off the cakes to create perfectly level layers.
  6. Place the first cake layer on a cake stand or cake board, ideally on a turntable for easier frosting.

Frosting:

  1. In the bowl of a stand mixer fitted with a paddle attachment, cream the room temperature unsalted butter until light and fluffy.
  2. Scrape down the sides of the bowl. Gradually add the powdered sugar, one cup at a time, mixing well between each addition and scraping down the sides as needed to ensure everything is incorporated.
  3. Once all the powdered sugar has been added, increase the mixer speed to medium-high and beat for 2-3 minutes until the mixture is well-combined and airy.
  4. Add the cocoa powder, vanilla extract, and salt. Beat on low speed until all ingredients are fully incorporated and the frosting is uniformly chocolate-colored.
  5. With the mixer still running on low speed, slowly pour in the heavy cream.
  6. Once the heavy cream is fully incorporated, turn off the mixer and scrape down the sides and bottom of the bowl.
  7. Turn the mixer back to medium-high speed and beat for an additional 3 minutes. This final whip will make the buttercream incredibly light, fluffy, and spreadable.
  8. To assemble: Spread about 1/4 cup of frosting evenly between each cake layer, carefully stacking them straight as you go. Once all layers are stacked, gently apply a thin, light crumb coat over the entire cake. This traps any loose crumbs. Let it set for about 20 minutes (you can place it in the fridge for faster setting).
  9. Finally, apply the remaining frosting for a smooth, finished look. Decorate the top of the cake with Milk Chocolate Hershey’s Kisses and gently press festive sprinkles into the side of the bottom cake layer for a whimsical touch.
