For many of us, the Butterfinger candy bar holds a special place in our hearts. That unique combination of crisp, flaky peanut butter core enrobed in a rich chocolatey coating is simply irresistible. As an adult, while I don’t indulge in them as often, the craving for that distinctive flavor still hits hard from time to time. And when it does, nothing else quite satisfies it.

Imagine harnessing that beloved Butterfinger flavor and infusing it into a cookie. That’s precisely what these Butterfinger Pudding Cookies achieve. The first time I spotted Butterfinger Baking Bits on the store shelves, a wave of excitement washed over me. I immediately knew these tiny morsels of candy bar magic were destined for something extraordinary, and these cookies were my first creation. They exceeded every expectation, delivering all the crunchy, peanut-buttery goodness I’d hoped for and more!

What makes these cookies stand out, beyond the delightful crunch of Butterfinger pieces, is the secret ingredient: instant vanilla pudding mix. Incorporating pudding mix into cookie dough is a game-changer for texture. It contributes to an incredibly soft, moist, and wonderfully chewy cookie that stays fresh for longer. The pudding powder works its magic by absorbing moisture during baking, preventing the cookies from drying out and ensuring that perfect, tender crumb every time. It’s the ultimate hack for bakery-style cookies right in your own kitchen.

I initially baked a batch of these glorious cookies last autumn for a casual game night with friends. They were an instant sensation! My friends were genuinely surprised and delighted that I had whipped up such a special treat just for our gathering, as most of my sweet creations usually find their way onto the blog. The overwhelming positive response was all the encouragement I needed to perfect the recipe and share it with all of you, ensuring everyone can experience these phenomenal cookies.

So, here they are: truly super chewy, exceptionally buttery, and utterly delicious Butterfinger Pudding Cookies. This recipe is designed for sharing, yielding a generous four dozen cookies. They’re ideal for any occasion – from bustling parties and holiday gatherings to a thoughtful gesture for friends and neighbors. Need a quick dessert during the week? You can even freeze portions of the dough to bake up a fresh dozen whenever the craving strikes. Pop one into your child’s lunchbox for a special surprise, or simply enjoy one (or two!) with a glass of milk after a long day. These cookies maintain their delightful chewiness for a good four to five days when stored properly, though honestly, they rarely last that long in our house!

Tips for Perfect Butterfinger Pudding Cookies Every Time

Achieving the perfect cookie isn’t just about the ingredients; it’s also about the technique. Here are a few essential tips to ensure your Butterfinger Pudding Cookies turn out fabulous:

  • Room Temperature Butter: Don’t skip this step! Softened butter creams beautifully with the sugars, creating a light and airy base for your cookies. Cold butter won’t incorporate properly, leading to a denser texture.
  • Don’t Overmix Dry Ingredients: Once you add the flour mixture, mix just until combined. Overmixing develops the gluten in the flour, which can result in tough, rather than chewy, cookies.
  • Proper Scooping: Use a cookie scoop to ensure uniform size. This guarantees that all your cookies bake evenly. Placing them two inches apart on the baking sheet prevents them from spreading into each other.
  • Watch Your Oven: Every oven is a little different. Keep an eye on your cookies during the last few minutes of baking. You want the edges to be lightly golden, and the centers to still look slightly soft. They will continue to set as they cool.
  • Cooling Process: Allowing the cookies to cool on the baking sheet for a few minutes before transferring them to a wire rack helps them firm up and prevents breakage.

Variations to Try

While the classic Butterfinger Pudding Cookie is stellar, feel free to experiment! You could try:

  • Different Pudding Flavors: Chocolate, banana, or even cheesecake pudding mix could add an exciting twist.
  • Other Candy Add-ins: M&M’s, chopped Snickers, or Reese’s Pieces would also be delicious.
  • Chocolate Drizzle: A melted chocolate drizzle over the cooled cookies adds an extra layer of decadence.

These cookies are more than just a dessert; they’re a celebration of classic candy bar indulgence, elevated by the magical touch of pudding mix. They offer a delightful crunch, a rich buttery flavor, and a chewiness that will have everyone reaching for more. Whether you’re making them for a special occasion or simply to satisfy your sweet tooth, these Butterfinger Pudding Cookies are guaranteed to be a hit.
