  • 4 boneless skinless chicken breasts (6-8oz each)
  • ½ cup cornstarch
  • 1 teaspoon salt
  • 1 teaspoon garlic powder
  • 1 teaspoon paprika
  • 1 teaspoon onion powder
  • ½ teaspoon ground black pepper
  • 2 large eggs, beaten
  • 1 cup panko breadcrumbs
  • ¼ cup finely grated parmesan cheese
  • ¼ cup vegetable oil, for frying

Instructions

  1. Preheat your oven to 375°F (190°C).
  2. Pound the 4 boneless skinless chicken breasts to an even thickness – about ½-inch thick each.
  3. In a shallow dish, mix together the ½ cup cornstarch, 1 teaspoon salt, 1 teaspoon garlic powder, 1 teaspoon paprika, 1 teaspoon onion powder, and ½ teaspoon ground black pepper.
  4. In another shallow dish, beat the 2 large eggs.
  5. In a third shallow dish, mix together the 1 cup panko breadcrumbs and ¼ cup finely grated parmesan cheese.
