Why These Air Fryer Hand Pies Are a Must-Try
This recipe isn’t just easy; it’s a culinary hack that delivers incredible results with minimal fuss. Here’s why these Air Fryer Hand Pies will become a staple in your kitchen:
Effortless Preparation
Making homemade pie from scratch can often feel daunting, but this recipe simplifies the process dramatically. By utilizing readily available refrigerated pie crusts and canned pie filling, you bypass the time-consuming steps of preparing dough and cooking fruit from scratch. The air fryer does most of the heavy lifting, ensuring a perfectly cooked pie every time. It’s perfect for those moments when you crave a homemade dessert but are short on time or expertise. This approach makes delicious, warm hand pies accessible to everyone, regardless of their baking experience.
Rapid Cooking Time
One of the standout advantages of using an air fryer for these hand pies is the incredibly fast cooking time. Forget waiting over half an hour for your pies to bake in a traditional oven. With an air fryer, you can go from raw ingredients to warm, golden-brown pies in just about 20 minutes (including prep!). This speed makes them an ideal choice for impromptu gatherings, a quick after-dinner treat, or when a sudden craving strikes. It’s truly a “yes, please!” moment when you realize warm, fresh pie is just minutes away.
Endless Flavor Variations
The versatility of this recipe is truly remarkable. While the base method is simple, the possibilities for customization are virtually limitless. You can experiment with any store-bought canned pie filling – from classic apple and cherry to blueberry, peach, or even mixed berry. For those who enjoy a more personal touch, your favorite homemade fruit filling works just as wonderfully. This adaptability ensures that these hand pies never get boring and can be tailored to seasonal fruits or individual preferences, making them a go-to dessert for any occasion.
Perfectly Portioned & Portable
Unlike a traditional full-sized pie that requires slicing and plating, hand pies are designed for individual enjoyment. Their compact size makes them the ultimate portable dessert, ideal for lunchboxes, picnics, road trips, or simply enjoying on the couch without needing a fork. They’re not only incredibly fun to eat but also offer perfect portion control, making them a fantastic option for parties or when you want a sweet treat without overindulging.
Crispy, Golden Perfection
The air fryer’s circulating hot air is a secret weapon for achieving an unbelievably crispy, golden crust that rivals deep-fried treats, but with significantly less oil. Each bite delivers that satisfying crunch, followed by a tender, juicy interior. The even heat distribution ensures uniform baking, preventing soggy bottoms and creating a beautiful finish that looks as professional as it tastes.

Air Fryer Hand Pie Ingredients
Gathering your ingredients for these quick and delicious hand pies couldn’t be simpler. With just four core items and an optional sprinkle, you’re well on your way to a delightful dessert. Here’s what you’ll need to make these Air Fryer Hand Pies:
- Refrigerated Pie Crusts: One 14-ounce package typically contains two pre-rolled crusts, which are essential for the speed and convenience of this recipe. You can also use a double pie crust recipe if you prefer making your dough from scratch.
- Pie Filling: Approximately 21 ounces of your favorite canned pie filling. This translates to about 2 cups if you’re using a homemade filling. Classic choices like cherry, apple, blueberry, or peach work wonderfully, offering a burst of fruity flavor.
- Large Egg: This will be used to create an egg wash, giving the pies a beautiful golden sheen and helping the coarse sugar adhere.
- Water: A small amount of water is mixed with the egg for the egg wash, and also used to moisten the edges of the pie crusts, ensuring a strong seal.
- Coarse Sugar (Optional): A sprinkle of coarse sugar over the top before air frying adds a delightful crunch and sparkle, enhancing both the texture and visual appeal of your hand pies.

How To Make Air Fryer Hand Pies
Making these hand pies in your air fryer is incredibly straightforward. Follow these simple steps for perfect results every time:
- Preheat the Air Fryer: Begin by preheating your air fryer to 350°F (175°C) for 5 minutes. This ensures the air fryer is at the optimal temperature for even cooking and a beautifully golden crust from the start.
- Prepare the Pie Crusts: While the air fryer preheats, gently unroll your refrigerated pie crusts onto a lightly floured surface. Using a 3½ to 4-inch round biscuit cutter (or a similar-sized glass rim), cut out rounds from each crust. A 3½-inch cutter typically yields 7 pies, while a 4-inch cutter will yield 6. If using a homemade pie crust recipe, you may get more.
- Fill the Pies: Place about a tablespoon of your chosen pie filling onto the center of half of the cut-out pie rounds. If your pie filling contains large fruit pieces (like apple or peach), it’s a good idea to chop them slightly first to ensure an even distribution and prevent tearing the crust.
- Assemble and Seal: Moisten the edges of the filled pie crust rounds with a water-dipped finger or a pastry brush. Then, carefully place a remaining plain pie crust round on top of each filled one. Use the tines of a fork to firmly press and seal the edges all around, creating a decorative crimped border that also locks in the filling.
- Apply Egg Wash and Sugar: In a small bowl, whisk together the large egg and 1 teaspoon of water to create an egg wash. Lightly brush this mixture over the tops of your assembled hand pies. If desired, sprinkle a generous amount of coarse sugar over the egg-washed pies for added sparkle and crunch. For a classic look, cut 2-3 small slits on top of each pie to allow steam to escape during cooking, preventing a soggy crust.
- Air Fry: Carefully place the hand pies in the preheated air fryer basket in a single layer, ensuring they don’t touch or overlap. Work in batches if necessary to avoid overcrowding, as this helps achieve maximum crispiness. Cook for approximately 6 minutes, or until the tops are beautifully golden brown and the filling is bubbly. Cooking times may vary slightly depending on your air fryer model.

Delicious Variations To Try!
One of the most exciting aspects of these Air Fryer Hand Pies is their incredible adaptability. Here are some fantastic ways to customize your pies and explore new flavor profiles:
- Explore Different Fruit Fillings: Don’t limit yourself to just one flavor! Experiment with various canned fruit fillings such as classic apple, tart cherry, sweet blueberry, juicy peach, or even mixed berry. Each offers a unique and delightful experience.
- Enhance Store-Bought Fillings: Give your canned filling a gourmet boost! Stir in a pinch of ground cinnamon, nutmeg, or a dash of almond extract to fruit fillings. For an indulgent twist, add a handful of mini chocolate chips to cherry or blueberry fillings.
- Add a Sweet Glaze: Elevate your hand pies with a simple, sweet glaze. A basic powdered sugar glaze (powdered sugar mixed with a touch of milk or lemon juice) can add an extra layer of sweetness and shine. You can even use the delicious glaze recipe from my Apple Hand Pies for inspiration.
- Switch Up the Shape: While rounds are classic, you can easily create charming half-moon pies. Simply use a 5-inch round cutter, place the filling on one half of the dough, fold the other half over, and seal the edges with a fork. This creates a more traditional hand pie look.
- Go Homemade with Filling: If you have a favorite family recipe for pie filling, feel free to exchange the store-bought version for your homemade creation. This adds a personal touch and allows for unique flavor combinations.
- Savory Surprises: While this recipe focuses on sweet, don’t shy away from savory options! Imagine using a cheesy potato filling, a spinach and feta mixture, or even a mini chicken pot pie filling for a delicious snack or appetizer.
- Spiced Crust: Lightly sprinkle your pie crust dough with cinnamon sugar or pumpkin pie spice before cutting the rounds for an extra layer of flavor in the crust itself.
Frequently Asked Questions About Air Fryer Hand Pies
How Many Pies Can I Cook At Once in an Air Fryer?
The number of hand pies you can cook simultaneously largely depends on the size and shape of your air fryer basket. For instance, with a Cosori air fryer, I typically manage to cook 4 pies at one time in a single layer. Air fryers with smaller or rounder baskets may hold fewer. It’s crucial not to overcrowd the basket, as proper air circulation is key to achieving that desired crispy, golden crust. If the pies are too close, they will steam rather than crisp.
Can I Reheat Leftover Air Fryer Hand Pies?
Absolutely! Leftover Air Fryer Hand Pies reheat beautifully, making them excellent for meal prep or quick snacks. To reheat, place them back in the air fryer at a slightly lower temperature, around 300°F (150°C), for 3-5 minutes, or until warmed through. Reheating at a lower temperature prevents the crust from burning while ensuring the filling gets warm and gooey again. You can also reheat them in a conventional oven at 350°F (175°C) for about 8-10 minutes.
How Do I Bake These Hand Pies Instead Of Air Frying Them?
If you don’t have an air fryer or simply prefer traditional baking, these hand pies can easily be made in a conventional oven. Arrange the prepared hand pies on a baking sheet lined with parchment paper. Preheat your oven to 375°F (190°C). Bake for approximately 24 to 27 minutes, or until the crust is puffed, golden brown, and the filling is visibly bubbly. Keep an eye on them towards the end of the baking time to prevent over-browning.
Can I Use Frozen Pie Crusts?
Yes, you can certainly use frozen pie crusts. Allow them to thaw according to package instructions before rolling out and cutting the rounds. The prep time might increase slightly due to thawing.
Why Are My Hand Pies Soggy?
Soggy hand pies are often a result of overcrowding the air fryer basket, which prevents proper air circulation and steam escape. Ensure you cook them in a single layer with enough space between each pie. Additionally, make sure your filling isn’t excessively wet, and consider cutting a few small slits in the top of each pie to vent steam.
Can I Make These Hand Pies Ahead of Time?
You can definitely prepare these hand pies in advance. Assemble the pies as directed, but do not apply the egg wash or sugar. Place them on a baking sheet lined with parchment paper and freeze until solid (about 1-2 hours). Once frozen, transfer them to an airtight freezer-safe bag or container for up to 3 months. When ready to cook, bake or air fry from frozen, adding a few extra minutes to the cooking time and applying the egg wash and sugar just before cooking.

Tips for Air Fryer Hand Pie Success
Achieving perfect Air Fryer Hand Pies every time is simple with a few key tips:
- Don’t Overfill: A common mistake is adding too much filling. Stick to about one tablespoon per pie to prevent leakage during cooking.
- Ensure a Tight Seal: A good seal around the edges is critical. Use a fork to crimp the edges firmly after moistening with water to ensure the filling stays inside.
- Vent for Steam: Cut two or three small slits on the top of each pie before adding the egg wash. This allows steam to escape, preventing the pies from bursting and ensuring a crisp crust.
- Avoid Overcrowding: Always cook hand pies in a single layer in your air fryer basket, leaving space between them for air to circulate. Cook in batches if necessary. Overcrowding leads to uneven cooking and a less crispy texture.
- Monitor Cooking Time: Air fryers can vary in power. Keep an eye on your pies, especially during the first batch, to determine the ideal cooking time for your specific model.
- Cool Slightly: While it’s tempting to dig in immediately, allow the hand pies to cool for a few minutes after cooking. The filling will be very hot and can cause burns, plus it allows the filling to set slightly.
Serving Suggestions for Your Hand Pies
These versatile hand pies are delicious on their own, but a few simple additions can elevate them into an even more delightful dessert experience:
- A La Mode: Serve warm hand pies with a scoop of vanilla bean ice cream. The contrast of hot pie and cold ice cream is simply divine.
- Whipped Cream: A dollop of freshly whipped cream or a generous spray of canned whipped cream adds a light, airy touch.
- Drizzled with Sauce: Drizzle with caramel sauce over apple pies, chocolate sauce over cherry pies, or a simple fruit coulis to match your filling.
- Powdered Sugar Dusting: A light dusting of powdered sugar makes for an elegant and sweet finish.
- Breakfast or Brunch: These hand pies make a wonderful, portable breakfast or brunch item, especially with a cup of coffee or tea.
- Picnics and Parties: Their handheld nature makes them perfect for outdoor gatherings, potlucks, and children’s parties.

These Air Fryer Hand Pies are a delicious treat that’s ready in under 20 minutes using only 4 ingredients and are completely customizable to your preferred filling!
Ingredients
- 1 (14 oz.) package refrigerated pie crust (or double pie crust recipe)
- 21 ounces pie filling (about 2 cups if using homemade)
- 1 large egg
- 1 teaspoon water
- Coarse sugar (optional topping)
Instructions
- Preheat the air fryer to 350°F (175°C) for 5 minutes.
- Meanwhile, roll out the pie crusts and use a 3½ to 4-inch round biscuit cutter to cut 6 to 7 rounds out of each one.
- Add a tablespoon of pie filling to half of the rounds. If using a pie filling with big pieces such as apple or peach, you’ll want to chop it up a bit first.
- Run a water-dipped finger or pastry brush around the edge of the pie crusts with filling on them. Then, place the remaining pie rounds on top of the filled ones and use a fork to seal the edges.
- In a small bowl, beat together the egg and water to make an egg wash. Use a pastry brush to brush it over the tops of the pies, then sprinkle with coarse sugar if desired. Make sure to cut 2-3 small slits on top of each pie to allow steam to escape.
- Cook the pies for 6 minutes until the tops are golden brown. Work in batches to avoid overcrowding the air fryer basket.
Notes
- I used a Cosori air fryer and can cook 4 pies at a time. Other brands with smaller or round baskets may hold less.
- I used a 3½-inch cutter and it made 7 pies; a 4-inch cutter will yield 6. This is based on premade pie crusts; a homemade recipe may yield more.
- You can use any flavor filling for these.
- If you want to make half-moon shaped pies instead of round, you will need a 5-inch round cutter. Just add the filling to one side, fold it over, and seal.
- Try adding cinnamon or chocolate chips to store-bought filling to mix it up a bit.
- These pies can also be dipped in a glaze, similar to my Apple Hand Pies.
- For best results, allow the pies to cool for a few minutes before serving, as the filling will be very hot.
