Why this recipe works

I don’t think I’ve ever met anyone who didn’t love a plump, juicy strawberry covered in decadent chocolate. Using fresh fruit feels less like cheating, doesn’t it?

I am all about making desserts out of strawberries. And when it can be easy and fun, that’s a truly winning combination. Chocolate covered strawberries make a delicious gift for a friend or to take to a shower. They are also perfect for Valentine’s Day or Sweetest Day and are a beautiful, romantic dessert for two.

Ingredient Info and Substitution Suggestions

STRAWBERRIES – Look for strawberries that are firm and ripe, but not too soft. I suggest 2 pounds for this recipe, but you need about 18 big, plump strawberries, preferably all the same size. Don’t forget the wooden skewers to make dipping easier!

CHOCOLATE – Chocolate chips totally work for this and you can use any variety such as dark, semi-sweet, and milk chocolate. Just be sure to read the notes about the melting process so it doesn’t seize up on you. My preference is actually Ghirardelli’s dark chocolate chips!

WHITE CHOCOLATE – Like the chocolate chips, white chocolate chips are fine as is something like CandiQuik or almond bark. I prefer the chips over the latter though. White chocolate chips can be used for both dipping and decorating.

DECORATIONS – Aside from drizzled melted chocolate, I like to include sprinkles, decorator sugar, nonpareils, and candy melts. Use your imagination and decorate to your heart’s content!

How to Make Chocolate Covered Strawberries

  1. First, line a sheet pan with waxed or parchment paper. Insert a skewer into the stem end of each strawberry.
  2. Place the two types of chocolates into separate glass or heat proof bowls (or use a double boiler). Put about 2 inches of water into two saucepans and bring to a simmer over medium heat. Turn off the heat and set the bowls of chocolate over the water to melt. Stir chocolate until smooth.strawberries skewered on a pan and a bowl of melted chocolate
  3. Using the skewer as a handle, dip the fruit into the chocolate. Lift and turn, allowing excess chocolate to drip back into the bowl. Place dipped berries onto the lined sheet pan.dipping a strawberry into melted chocolate
  4. Repeat with remaining strawberries, letting them all rest on the pan until you are finished.dipped strawberries lined up on a pan
  5. Dip a fork into contrasting melted chocolate and wave it back and forth across the chocolate covered berry. Place berries in the refrigerator for 15 minutes to help the chocolate set up.Chocolate Covered Strawberries on a parchment lined pan
  6. Remove from the refrigerator and allow to air dry for 30-45 minutes before placing in a covered container. Do not store in the refrigerator.

Why is my chocolate not sticking to the strawberries?

This usually happens if the strawberries aren’t completely dry or if the chocolate is too thick. Make sure the berries are moisture-free and thin the chocolate if needed.

How long do chocolate-covered strawberries last?

Chocolate-covered strawberries are best enjoyed within 24 hours. Store in a covered container in a cool place.

Holiday & Seasonal Variations

While strawberries are usually in season from June to July, the U.S. imports the plump, juicy fruit all year long. This means you can enjoy this decadent treat any time of year. Here are some ideas for you:

January

Use white chocolate or light blue candy melts for dipping. Decorate with white or silver decorator sugar or sprinkles and drizzle blue dipped berries with white chocolate.

February

Valentine’s Day calls for dark or milk chocolate dips, but white chocolate and pink candy melts are also popular. Use fun sprinkles in pink, white and red, and you can likely find little heart shaped sprinkles too. See my Valentine Chocolate Covered Strawberries here.

March

Bring the luck of the Irish to your St. Patrick’s Day celebration. Green candy melts, white chocolate, and dark chocolate are all ideal for dipping. Decorate with gold, yellow, or green sprinkles or sugar. You could even create a rainbow of chocolate dipped strawberries!

April & May

These months are synonymous with spring and Easter is usually early in April. Pastels are the perfect choice and candy melts come in a huge array of colors.

June to August

While June is peak season for strawberries, the summer months can get pretty hot and wreak havoc on all your hard work. Keep berries in the air conditioned house until ready to serve. July is the perfect time for patriotic chocolate covered strawberries! White chocolate dipped or rolled in blue and/or red sugar is very popular.

September

October

Oh my Halloween, my second favorite holiday! White chocolate strawberry ghosts are all the rage during this very popular holiday. Dip them in white chocolate and add miniature chocolate chips for eyes. Other fun color ideas include orange, red, green, and purple like these Halloween chocolate covered strawberries.

November

Thanksgiving colors are those most associated with fall. Brown (best portrayed by milk chocolate), orange, red, and green are all perfect for decorating. You could even create little turkeys by dipping the berries in milk chocolate, adding small candy eyes, and homemade beaks. Beaks can be made by piping melted yellow candy melts onto waxed paper.

December

I mean, it’s Christmas! There are some pretty creative ways to decorate strawberries for this festive holiday, but my favorite are little Christmas trees.
