Essential Ingredients for the Perfect Chili Mac and Cheese

Crafting this delightful One-Pot Chili Mac and Cheese relies on a blend of simple, readily available ingredients that come together to create a symphony of flavors. Here’s what you’ll need:

  • Canola oil or vegetable oil: For browning the ground beef and setting the foundation of flavor.
  • Ground beef: Lean ground beef (80/20 or 90/10) works best for flavor and texture. You can also opt for ground turkey for a leaner alternative.
  • Chili Powder: The star spice, providing that classic chili flavor and warmth.
  • Paprika: Adds a beautiful reddish hue and a subtle, smoky sweetness (especially if using smoked paprika).
  • Ground cumin: Essential for its earthy, warm aroma and deep, rich flavor.
  • Mustard powder: A secret weapon in chili, it subtly enhances the overall spice profile and adds depth without a strong mustard taste.
  • Kosher salt: For seasoning and bringing out the natural flavors of the ingredients.
  • Ground black pepper: Adds a touch of sharp heat.
  • Beef broth: Provides a rich liquid base for the chili and helps cook the pasta. Opt for low-sodium if you’re mindful of salt intake.
  • Water: To supplement the liquid needed for cooking the macaroni to perfection.
  • Petite diced tomatoes with green chile (undrained): These provide a tangy tomato base and a mild, pleasant heat from the green chiles, adding complexity and moisture.
  • Elbow macaroni: The classic pasta choice for mac and cheese, its small size and curved shape are perfect for holding the creamy sauce.
  • Cream cheese: The secret to an extra creamy, velvety sauce that binds everything together.
  • Whole milk: Contributes to the luscious, rich texture of the cheese sauce.
  • Lime juice: A squeeze of fresh lime juice at the end brightens the flavors and adds a subtle tang that cuts through the richness.
  • Shredded sharp cheddar cheese: The quintessential cheese for a bold, cheesy flavor. Pre-shredded works for convenience, but freshly grated melts even smoother.

Step-by-Step Guide: How To Make One-Pot Chili Mac and Cheese

Preparing this incredibly flavorful dish is surprisingly straightforward, especially since every delicious component comes together in a single pot. Follow these simple steps for a perfect meal:

  1. Brown the Ground Beef: Begin by heating the canola or vegetable oil in a large, heavy-bottomed pan or Dutch oven over medium-high heat. Once the oil is shimmering, add the ground beef to the pan. Use your spatula to break the meat into smaller pieces as it cooks.
  2. Drain Excess Fat: Continue to cook the ground beef for 5 to 7 minutes, stirring frequently, until it is thoroughly browned and cooked through. Once browned, carefully drain any excess fat from the pan. This step is crucial for preventing a greasy final dish and ensures the chili mac isn’t too heavy.
  3. Simmer with Liquids and Spices: To the browned beef, add all the seasonings (chili powder, paprika, ground cumin, mustard powder, kosher salt, ground black pepper), beef broth, water, and the undrained petite diced tomatoes with green chile. Stir everything together to combine, then bring the mixture to a rolling boil.
  4. Cook the Macaroni: Once the liquid is boiling vigorously, add the uncooked elbow macaroni to the pot. Stir well to ensure the pasta is fully submerged. Reduce the heat to medium-low, cover the pot, and cook for 8-10 minutes, stirring occasionally to prevent the macaroni from sticking to the bottom of the pan. The macaroni should be tender but still have a slight bite (al dente).
  5. Incorporate Cream Cheese: Remove the pot from the heat. Add the cream cheese to the mixture. For faster melting, use your spatula to break the cream cheese into smaller pieces as you add it to the hot mixture. Alternatively, you can cube the cream cheese beforehand. Stir gently until the cream cheese is fully melted and smoothly incorporated into the sauce.
  6. Finish with Milk and Cheddar: Once the cream cheese has melted, pour in the whole milk and a squeeze of fresh lime juice. Add the shredded sharp cheddar cheese. Stir continuously until all the cheddar cheese has completely melted, creating a rich, creamy, and irresistible sauce. Taste and adjust seasoning with additional salt and pepper if desired.
  7. Serve Hot: Remove the pot from the heat and serve your One-Pot Chili Mac and Cheese immediately while it’s hot and wonderfully gooey. Garnish each serving with a sprinkle of fresh chopped parsley or cilantro for a touch of color and fresh flavor.

This pasta dish, with its satisfying chili kick, can be enjoyed as is. However, for those who prefer a slightly milder or creamier experience, consider stirring in a dollop of sour cream into your individual bowl. It adds a lovely tang and balances the flavors beautifully, though many, like my husband, prefer it without!

Delicious Variations to Customize Your Chili Mac

While this recipe is designed for maximum ease and flavor, its adaptability is one of its greatest strengths. Feel free to personalize your One-Pot Chili Mac and Cheese with these delicious variations:

  • Beans: For many, chili isn’t complete without beans! To add them, simply stir in one can (15 ounces) of drained and rinsed red kidney beans or black beans to the dish during Step 3, along with the other liquids and spices. They add fiber, protein, and classic chili texture.
  • Onion: If you appreciate the aromatic base that onions provide, dice up one small to medium yellow onion and sauté it with the ground beef in Step 1 until softened and translucent, before adding the spices.
  • Bell Pepper: Introduce a subtle sweetness and extra vegetable goodness by adding a diced bell pepper (any color works!) to the pot during Step 3, alongside the macaroni. It will soften beautifully as the pasta cooks.
  • Heat Level: The base recipe offers a family-friendly mild spice. If you prefer things spicier, there are several ways to kick it up:
    • Add finely diced fresh jalapeno peppers (remove seeds for less heat, keep for more) when browning the beef.
    • Stir in a small can of diced green chiles (undrained) with the other tomatoes.
    • Increase the amount of chili powder, or add a pinch of cayenne pepper for a fiery boost.
    • A dash of your favorite hot sauce at the end can also do the trick!
  • Pasta: While elbow macaroni is traditional, other small or medium pasta shapes can work wonderfully. Consider small shells, ditalini, or cavatappi. Just be mindful that cooking times might vary slightly depending on the pasta shape, so check for al dente doneness.
  • Cheese: Experiment with different cheese blends for varied flavors. Instead of sharp cheddar, try a Mexican blend, a three-cheese blend, or even Monterey Jack for a milder, meltier finish. A touch of smoked gouda could also add a unique depth of flavor.
  • Ground Meat: For a lighter version, swap out the ground beef for ground turkey or ground chicken. Adjust cooking time slightly if needed, ensuring the poultry is cooked through before adding other ingredients.
  • Vegetarian Option: For a meat-free alternative, omit the ground beef and add an extra can of beans (kidney, black, or pinto) or a plant-based ground meat substitute. Use vegetable broth instead of beef broth.

Serving Suggestions for One-Pot Chili Mac and Cheese

This homemade One-Pot Chili Mac and Cheese is best enjoyed hot and fresh, straight from the pot! A sprinkle of fresh cilantro or parsley not only adds a vibrant pop of color but also a burst of fresh flavor. While it’s a complete meal on its own, pairing it with a few complementary sides can elevate your dining experience.

Consider serving this hearty dish with a delicious carb to soak up all that incredible chili-cheese sauce. Fluffy dinner rolls, warm cornbread (especially buttermilk cornbread!), or even garlic bread are fantastic choices that perfectly complement the robust flavors. For a lighter touch, a crisp garden salad packed with fresh vegetables offers a refreshing contrast. And don’t forget the classic chili toppings! A dollop of sour cream or Greek yogurt, a sprinkle of extra shredded cheese, crushed tortilla chips, or even sliced green onions can add personalized flair and texture to each bowl.

Storing and Reheating Your Cheesy Chili Mac

One of the many advantages of this One-Pot Chili Mac and Cheese is how wonderfully it holds up as leftovers. This makes it ideal for meal prep or enjoying a second meal without the extra effort.

Storage: Allow any leftover cheesy chili mac to cool completely before transferring it to an airtight container. Store it in the refrigerator for up to 3-4 days. Prompt cooling and proper storage are key to maintaining freshness and safety.

Reheating: For best results, reheat individual portions in the microwave or on the stovetop over medium-low heat. If reheating on the stovetop, you may need to add a splash of milk or beef broth to loosen the sauce, as the pasta will absorb more liquid as it sits. Stir occasionally until heated through. Avoid overheating, which can cause the cheese to separate or the pasta to become mushy. Your chili mac will be just as delicious the next day!

Frequently Asked Questions (FAQ) about One-Pot Chili Mac

Here are some common questions you might have about making this easy One-Pot Chili Mac and Cheese:

Can I use a different type of ground meat?
Absolutely! While ground beef is traditional, you can easily substitute it with ground turkey or chicken for a leaner option. The cooking method remains the same.
What if my chili mac is too thick or too thin?
If your chili mac becomes too thick (which can happen as the pasta absorbs more liquid over time), simply add a splash of milk or beef broth while reheating until it reaches your desired consistency. If it’s too thin, simmer uncovered for a few extra minutes to allow some liquid to evaporate, or add a little extra cheese.
Can I make this recipe vegetarian?
Yes! Omit the ground beef and add an extra can of beans (such as black beans or pinto beans) or use your favorite plant-based ground substitute. Be sure to use vegetable broth instead of beef broth.
Is this dish freezer-friendly?
Chili mac can be frozen, but the pasta might change texture slightly upon thawing and reheating, becoming a bit softer. Freeze in an airtight container for up to 2-3 months. Thaw overnight in the refrigerator and reheat gently, adding liquid if needed.
What kind of pot should I use?
A large Dutch oven or a heavy-bottomed pot with a lid is ideal. The heavy bottom helps distribute heat evenly and prevents sticking, while the lid is essential for cooking the macaroni properly.

Notes

  • If using a Smoked Paprika, start with 1/2 teaspoon and work your way up from there as this can be a very potent seasoning.
  • If you prefer your chili mac a little looser or you add additional ingredients and find that they have caused the pasta to dry out a bit, add an additional 1/2 cup of milk.
