- Place an 8×8 baking dish (or similar) filled with 1 inch of water on the lower shelf of the oven. This optional water bath helps ensure more even baking across the top of the brownies.
- Preheat the oven to 350°F (175°C) and line a metal 9×13-inch cake pan with parchment paper, allowing some overhang for easy removal. Spray lightly with cooking spray.

- In a medium bowl, beat together 16 ounces cream cheese, 1 large egg, and 1 teaspoon vanilla bean paste until fully incorporated and smooth.
- Add ½ cup granulated sugar to the cream cheese mixture and mix until smooth.
- Pour about ⅔ to ¾ of the brownie batter into the prepared pan and dollop with half of the cheesecake mixture. Dollop the remaining brownie batter next, then top with the remaining cheesecake mixture.
- Use a butter knife to run through the brownie and cheesecake mixture with the wide side, displacing and pulling the batters to create swirls. Avoid overmixing.
- If desired, sprinkle ¾ cup semi-sweet chocolate chips over the top of the swirled batter before baking.
- Bake for 45 to 50 minutes on the middle rack, rotating halfway through. The brownies are done when a toothpick inserted into the brownie portion comes out with moist crumbs.
- Remove from the oven and allow to cool completely (about 2 to 3 hours) before removing from the pan and slicing into squares with a large sharp knife. Chilling for 1 hour after cooling can help with sturdier slices.
