Once cooled, pulse the toasted almonds in a food processor until finely ground. Be careful not to over-process into butter.

Add the all-purpose flour, ground cinnamon, and salt to the food processor with the ground almonds and pulse a few times to combine. Set this dry mixture aside.

In a large mixing bowl or a stand mixer fitted with a paddle attachment, beat the softened salted butter until creamy. Gradually add the granulated sugar and continue to beat for about 2 minutes, until the mixture is light and fluffy.

Beat in the large egg and vanilla extract. Scrape down the sides of the bowl and mix briefly again to ensure everything is incorporated.

Gradually add the reserved nut and flour mixture to the wet ingredients. Beat on low speed just until combined. Do not overmix.

Divide the dough into two equal discs and wrap each tightly in plastic wrap. Chill in the refrigerator for at least 2 hours.

When ready to bake, preheat the oven to 350°F (175°C) and line a baking sheet with parchment paper.

Remove one dough disc from the fridge at a time. On a well-floured surface, allow it to sit for a few minutes before rolling out to about ¼-inch thick using a floured rolling pin. Be generous with flour on the surface to prevent sticking.

Use a 2½-inch round cookie cutter to cut out cookies. For half of these, use a smaller cookie cutter to make a central cutout (“window”). Gather scraps, re-roll, and cut more cookies until all dough is used, ensuring equal numbers of whole and cutout cookies.

Place the cookies on the prepared baking sheet. Bake for 12 to 15 minutes, until the edges are lightly golden.

Remove from the oven and let cool slightly on the baking sheet for 5 minutes before transferring to a wire cooling rack to cool completely.

Once cookies are completely cooled, spread a heaping ½ teaspoon of raspberry jam onto the flat bottom side of the whole cookies.

Lightly dust the top cookies (the ones with the cutouts) with powdered sugar BEFORE placing them on the jam-covered cookies. This ensures the jam center shows beautifully. Gently place each powdered-sugar-dusted cutout cookie on top of a jam-covered bottom cookie to form a sandwich.

- How To Store: Store these Linzer Cookies in an airtight container at room temperature. For the best taste and texture, enjoy them within 2 to 3 days!
- Dough Cracks When Rolling: If your chilled dough cracks during rolling, allow it to sit out of the fridge for 1-2 minutes to soften slightly. You can easily patch minor cracks with small pieces of dough, gently pressing them into place.
- Thickening Runny Jam: To thicken runny jam, place 3/4 cup in a small saucepan, simmer until reduced to about 1/2 cup, then cool completely before using.
- Sticky Dough While Rolling: If the dough becomes sticky, re-chill it in the refrigerator for 15-30 minutes. Ensure your work surface and rolling pin are well-floured when you resume, and lightly sprinkle flour on top of the dough itself.
- Toasting Almonds: While optional, toasting the almonds beforehand significantly deepens and enhances their nutty flavor, making a noticeable difference in the final cookie taste.

- Nuts: Substitute almonds with walnuts, pecans, or hazelnuts for different flavor profiles.
- Spices: Add a pinch of nutmeg or cloves to the dough for extra warmth and complexity.
