Why this recipe works
These fluffy little banana bites are addicting. Once you sink your teeth into a soft cake-like banana fritter, there’s no going back! First, you’ll mix together the batter that’s spiced with cinnamon and sweetened with brown sugar, then you plop in some chopped bananas and deep fry them in oil. Lastly, you can’t forget the sweet and sticky powdered sugar glaze on top that really seals the deal.
The whole process is super easy, and you’ll be enjoying them for breakfast or dessert in no more than 40 minutes start to finish.

BANANAS – Unlike banana bread, you’ll want to use ripe bananas for this recipe. Using ripe bananas will withstand the heat of the frying process much better than overripe bananas.

- In a medium bowl, combine the eggs, milk, vanilla, and melted butter. Set aside.

- In a separate large bowl, whisk together the flour, baking powder, brown sugar, salt, and cinnamon.

- Add the egg mixture to the flour mixture, stirring until smooth.

- Fold in chopped bananas. Don’t overmix.

- Fill a Dutch oven/cast iron pot with at least 2 inches of vegetable oil and heat on medium-high until it reaches 350°F on an instant read thermometer.
- Using a tablespoon or a cookie scoop, dollop the batter into the oil, cooking 3-4 at a time. Cook the fritters, turning them over, about 2 minutes per side for a total of about 4-5 minutes until they are a deep golden brown.

- Remove fritters from the oil with a spider stainer and place on a tray lined with paper towels.
- Make the glaze by combining powdered sugar, milk, and vanilla.
- Let the fritters cool slightly, then dip in the glaze. Serve warm.
